10-Minute Sausage Skillet with Cherry Tomatoes and Broccolini image

This one-pan dinner has a nice buttery sauce, so serve it with some crusty bread for mopping.

1 tablespoon olive oil
12 ounces fully cooked Italian sausage (about 4 links), sliced into 1/4"-thick coins
2 pints cherry tomatoes
2 garlic cloves, pressed or finely chopped
4 sprigs thyme
2 bunches broccolini (about 1 pound), trimmed, halved lengthwise
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons unsalted butter, cubed
Crusty bread (for serving; optional)

Steps:

  • Heat oil in a large skillet over medium-high. Add sausage and cook, stirring occasionally, until lightly browned, about 2 minutes. Add tomatoes, garlic, and thyme, stir to combine, and cook, pressing down on some of the tomatoes with the back of a wooden spoon to encourage bursting, 2 minutes. Add broccolini; season with salt and pepper. Cook, covered, 2 minutes. Remove from heat and stir in butter until melted.
  • Divide sausage mixture among plates. Serve with bread alongside, if desired.

Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.
  • Stir in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling; stir in rice. Heat to boiling; reduce heat to low. Cook 8 to 10 minutes or until rice is tender. Fluff with fork before serving. Serve with pepper sauce.

Inspired by several recipes here, I created this pasta skillet with what I had on hand, and everyone loved it! Nice change from regular pasta and meat, have to try it with fresh tomatoes when they are ready from the garden!

1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste
1 cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Bring a large pot of lightly salted water to a boil for pasta.
  • Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
  • Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
  • Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

3 cups shredded cabbage

½ cup diced green bell pepper
1 ½ teaspoons salt
½ teaspoon ground black pepper
¼ cup sour cream

Steps:

  • In a large saucepan over medium heat, cook sausage in butter until brown. Pour broth, tomato soup and water into pan with sausage. Stir in cabbage, onion and bell pepper and season with salt and pepper. Bring to a boil, then reduce heat and simmer 45 minutes, or until flavors are well blended. 1/2 cup yellow cornmeal
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon sugar
1 1/2 tablespoons unsalted butter, cold, cut into pieces
1/2 cup sour cream
1/4 cup water, plus
3 tablespoons water
1/2 lb kielbasa, cut diagonally into 1/4 inch thick slices
1 lb plum tomato, cut into 1/2 inch pieces
1/2 cup onion, chopped
1 fresh jalapeno chilie, minced
1/3 cup fresh cilantro, chopped
1 1/2 tablespoons fresh lime juice
2/3 cup sour cream, stirred together with
2 teaspoons water

Steps:

  • Make Biscuits:.
  • Preheat oven to 425°F.
  • Sift together flour, cornmeal, baking powder, baking soda, salt, sugar into a bowl and blend in butter with your fingertips until mixture resembles coarse meal.
  • Stir together sour cream and water, then stir into flour mixture with a fork until just combined.
  • Drop dough in 4 evenly spaced mounds on a buttered baking sheet and bake in the middle of oven until pale and golden and cooked through - 15 to 20 minutes. Cool biscuits slightly on a rack.
