¼ cup extra-virgin olive oil
4 cloves garlic, thinly sliced
2 (15 ounce) cans cannellini beans, drained and rinsed
½ teaspoon salt
1 ½ cups cherry tomatoes, halved and seeded
1 cup chicken broth
freshly ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Cook garlic in the hot oil until golden, about 5 minutes. Stir beans into the oil; season with salt. Cook and stir the beans until hot, about 5 minutes. Stir tomatoes into the beans; cook and stir until the tomatoes soften, about 5 minutes more.
  • Pour broth over the beans mixture; stir. Cook the mixture at a simmer until the liquid reduced in volume by about half, about 15 minutes. Season with pepper.

1 pound dry cannellini, borlotti or Great Northern beans
1 tablespoon extra virgin olive oil
1/4 pound bacon or pancetta, roughly chopped
1/2 medium onion, chopped
4 garlic cloves, chopped
1 tablespoon fresh sage, minced (can sub fresh rosemary)
1/2 to 1 teaspoon chile flakes (depending on how spicy you want it)
2 tablespoons honey
1/4 cup tomato paste
1 15-ounce can crushed tomatoes or tomato sauce
2 cups beef or chicken stock (use gluten-free stock for gluten-free version)
Salt
1/2 cup chopped fresh parsley
2 tablespoons balsamic vinegar

Steps:

  • Soak the beans in water: Pre-soak the beans, either by covering with two inches of water and soaking overnight, or by pouring boiling water over them and soaking them for an hour.
  • Drain the beans, cover with water, cook until tender: Drain the beans and put them in a medium-sized pot and cover with 2 inches of water. Bring to a simmer, cover, reduce the heat to a low simmer and cook until the beans are just soft enough to eat, about 1 hour, give or take 15 minutes or so, depending on how old the beans are (older beans will take longer to cook).
  • Stir in the parsley and balsamic vinegar: Right before serving, gently stir in the chopped parsley and balsamic vinegar. Taste for salt, add more if needed to taste. Serve either hot or at room temperature.

1-1/2 pounds fresh wax beans, cut into 2-inch pieces

1 medium sweet onion, chopped
10 tablespoons butter, divided
1-1/2 teaspoons minced garlic, divided
1-1/2 teaspoons dried basil, divided

1-1/2 cups soft bread crumbs
1/3 cup grated Parmesan cheese

Steps:

  • Place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain; add tomatoes and set aside. , In a large skillet, saute mushrooms and onion in 4 tablespoons butter until crisp-tender. Add 1 teaspoon garlic, 1 teaspoon basil, 1 teaspoon oregano and salt; cook 1 minute longer. Add to the bean mixture; toss to coat. My inspiration for this recipe besides submitting it to RSC #9 was to make another vegetarian baked beans. I think I only found one vegetarian baked beans recipe on this site so I wanted to diversify by creating my own.

2 cups dried white beans (your own favourite kind)
6 cups water (for soaking beans)
2 tablespoons peanut butter
2 tablespoons brown sugar
1 1/2 cups fresh tomatoes, seeds taken out (about 3)
1/2 large white onion
1 1/2 tablespoons fennel seeds, crushed
1/3 cup molasses
1 tablespoon honey
1 1/2 teaspoons olive oil
4 1/2 cups water
salt and pepper

Steps:

  • Soak the beans in 6 cups of water for 8 hours or overnight. Drain just before beginning to cook.
  • Finely chop white onion and tomatoes, separately, in a food processor (Make sure the juice has been take out of the tomatoes).
  • Saute onions in a large pot, with the olive oil until translucent, about 3 minutes. Add tomatoes and saute for 2 minutes longer, adding the salt and pepper in the process.
  • Add crushed fennel seeds, and peanut butter and let blend until peanut butter melts. Add beans and brown sugar and stir thoroughly.
  • Add 4 and a half cups of water, and bring it to a boil. Bring it to a simmer and slow cook for 3 hours, covered. Last hour of it can be uncovered to reduce water. Let it cool before serving.

8 slices bacon, chopped
1 medium onion, chopped
3/4 cup ketchup
3/4 cup tomato puree
1/2 cup firmly packed dark brown sugar
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/4 teaspoon cayenne pepper
2 twenty-eight ounce cans red beans, drained and rinsed

Steps:

  • Preheat the oven to 325 degrees F.
  • Put a heavy-bottomed pot (with a lid) over medium-high heat. Add the bacon and cook, stirring often, until the fat renders and bacon begins to crisp, about 6-8 minutes. Add the onion and cook until softened, about 5 minutes more. Stir in the ketchup, tomato puree, brown sugar, vinegar, Worcestershire, salt, pepper, and cayenne and mix well. Bring to a simmer and cook for 5 minutes. Stir in the beans until well coated, cover, and bake in the oven for 1 hour. Remove the lid and continue baking until sauce thickens and the beans begin to brown, about 15 minutes more. Remove from the oven and allow to cool at least 15 minutes before serving.
  • Serve warm or at room temperature.

2 teaspoons salt, divided
3 ½ (6 ounce) cans tomato paste
¼ cup brown sugar
2 tablespoons vinegar
1 tablespoon cornmeal
1 teaspoon ground cumin
½ teaspoon hot paprika
½ teaspoon ground ginger

Steps:

  • Place kidney beans in a large saucepan. Cover with water and soak for 8 hours, or overnight.
  • Drain water from kidney beans. Pour in fresh water to cover by 1-inch; add 1 teaspoon salt.
  • Cook beans over low heat for 2 hours. Remove from heat; drain excess water from pan until it just covers beans.
  • Stir in tomato paste, brown sugar, vinegar, cornmeal, remaining 1 teaspoon salt, cumin, hot paprika, and ginger to beans. Mix well.
  • Cook bean mixture over low heat for 2 hours. Stir to loosen any beans on the bottom of the pan. Continue to cook over low heat until bean mixture has reduced and thickened, about 2 hours more.

Very easy, I think it tastes best when cooked slow and I found with my slow cooker I had to cook for an hour or two longer than the recipe says. My hubby loves this recipe! If you have used up all the reserved fluid and need extra fluid while cooking, in particular when on high, use up to 1/2 cup of tomato juice. Prep time does not include the bean soak.

5 cups water
5 -6 pieces bacon
1 cup tomato juice
1/2 cup onion, chopped
1/4 cup ketchup

1/4 teaspoon seasoning salt
1 1/2 teaspoons pepper, ground mixture
1 teaspoon chili powder

Steps:

  • Soak beans overnight in large bowl.

  • Drain beans reserving 2 cups of liquid.
  • Add beans to slow cooker.

  • Cover and cook on low for 7 to 9 hours. Until beans are tender and flavourful.
  • Check and add a little of the reserved liquid as necessary.
