Corn Pudding with Mushrooms and Ham image

Provided by Andrea Reusing

Categories     Mushroom     Side     Bake     Ham     Corn     Summer     Bon Appétit     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 6 to 8 servings

Number Of Ingredients 12

3 tablespoons unsalted butter, divided, plus more for pan
1 cup finely grated Parmesan or Dry Monterey Jack, divided
2 cups mushrooms, such as chanterelles, torn or cut into small pieces
Kosher salt, freshly ground pepper
4-5 ears of corn, husked
1 tablespoon vegetable oil
1 1/2 cups finely chopped onion
2 tablespoons all-purpose flour
2/3 cup heavy cream
2/3 cup whole milk
3 ounces very thinly sliced country ham or prosciutto, chopped
3 large eggs, beaten to blend

Steps:

  • Arrange a rack in lower third of oven and preheat to 350°F. Generously butter an 8x8x2" glass baking dish. Sprinkle evenly with 2 tablespoons cheese.
  • Melt 1 tablespoon butter in a medium skillet over medium heat. Add mushrooms; cook, stirring occasionally, until golden brown and skillet is dry, 5-7 minutes. Season to taste with salt and pepper. Transfer mushrooms to a small bowl; set aside. Wipe skillet clean.
  • Using the large holes on a box grater, coarsely grate corn kernels from cobs into a large bowl (you should have about 2 cups).
  • Melt remaining 2 tablespoons butter with oil in same skillet over medium-low heat. Add onion; cook, stirring often, until soft and translucent (do not brown), 8-10 minutes. Stir in flour. Add grated corn; increase heat to medium. Cook, stirring often, until most of liquid evaporates and corn is bright yellow, 2-3 minutes. Add cream; cook, stirring frequently, until well blended and most of liquid has evaporated, about 3 minutes. Stir in milk, ham, 3/4 cup cheese, and reserved mushrooms. Cook, stirring often, until flavors begin to meld, 1-2 minutes longer. Season with salt and pepper.
  • Transfer corn mixture to a large bowl. Season eggs with salt and pepper. Add to corn mixture; stir gently to blend. Pour into prepared baking dish; sprinkle with 2 tablespoons cheese. Set dish in a roasting pan; place in oven. Pour hot water into roasting pan to come halfway up sides of baking dish (this will prevent eggs from curdling).
  • Bake until pudding is just set in the center (center will jiggle very slightly when dish is nudged), 40-45 minutes. Use a ladle or turkey baster to remove about half of water from roasting pan to prevent any hot water from spilling when pan is lifted from oven. Remove roasting pan with pudding from oven. Remove baking dish from pan.
  • Preheat broiler. Return pudding to oven; broil until top is golden brown in spots, 2-3 minutes. Let stand for at least 15 minutes and up to 30 minutes before serving.

4 tablespoons unsalted butter
2 cups fresh corn (about 3 to 5 ears)
1/3 cup onion, finely chopped
3 eggs
1 tablespoon sugar
1 teaspoon salt or to taste
2 cups milk
1/8 teaspoon nutmeg, freshly grated

Steps:

  • Adjust the oven rack to the middle shelf and preheat the oven to 350 degrees.
  • Butter a one-and-a-half-quart ovenproof casserole with about one tablespoon of butter and set aside.

  • In a medium-sized bowl, lightly beat the eggs with a whisk. Mix in the sugar, salt and milk. Pour the egg mixture into the corn mixture. Melt the remaining three tablespoons of butter and pour into the mixture. Pour the mixture into the casserole and grate with fresh nutmeg.
  • Place the casserole in a roasting pan and set on the oven rack. Add boiling water to the roasting pan until it reaches halfway up the side of the casserole. Bake for 45 minutes or until a sharp paring knife inserted into the center of the pudding comes out clean. Serve immediately.

SLOW-COOKER CORN PUDDING

Slow-Cooker Corn Pudding image

Corn has always been an important crop for Native Americans, who cook it into porridges, breads and puddings. Over generations, various incarnations of corn pudding became especially popular in the South. In this version, fresh corn, scallions and jalapeño are held together by rich cornbread for a savory, sweet and spicy side that's like a spoonbread crossed with a quick bread. While corn pudding is usually made in the oven, this slow-cooker version frees up your oven for other tasks. As the bread steam-bakes, the edges get caramelized and firm, and the center becomes soft and delicate. It's spoonable, not sliceable, and its rich texture is best served warm or at room temperature. Jalapeños vary in heat level, so taste a tiny piece before deciding how much to add. To decrease the spice level, use one chile and remove the seeds and ribs before chopping it. To maximize the spice, leave the seeds in and use two.

Time 2h50m

Yield 8 servings

Number Of Ingredients 15

Nonstick cooking spray or vegetable oil
1 cup whole milk
1/2 cup sour cream (4 ounces)
3 large eggs
3 tablespoons unsalted butter, melted and cooled
2 tablespoons vegetable oil
2/3 cup all-purpose flour (3 ounces)
1/2 cup medium-grind cornmeal, preferably stone-ground (2.2 ounces)
3 tablespoons granulated sugar
1 tablespoon baking powder
2 teaspoons kosher salt
4 cups corn kernels, cut from 5 small ears or 2 (10-ounce) bags frozen corn, thawed
3 scallions, thinly sliced
1 to 2 jalapeños, stemmed and finely chopped
1 cup grated sharp Cheddar (4 ounces)

Steps:

  • Generously coat the interior of a 6- to 8-quart slow cooker with nonstick cooking spray or vegetable oil. In a large liquid measuring cup or bowl, whisk together the milk, sour cream, eggs, butter and oil until uniformly combined. In a large bowl, stir together the flour, cornmeal, sugar, baking powder and salt. Add the corn, scallions and jalapeño, and stir to combine. Add the wet ingredients and the cheese, and fold until just combined.
  • Pour the mixture into the slow cooker. Cover and cook on high until the pudding is browned and firm around the edges, and the center is puffed and just barely firm, about 2 hours and 30 minutes. Turn off the slow cooker and serve warm or room temperature directly from the crock.
