Torta De Laranja ( Orange Torte ) image

A rather unique twist on a jelly-roll - no flour & no filling. It's described as a rolled pudding rather than a rolled sponge cake & it makes it's own filling. Clever little torte ... Once baked, this pudding will be slightly less than 1/2-inch in height and very fragile. Found on a website with recipes from Portugal. Cook time does not include 3-4 hours standing time (the torta, not you ;-) so plan ahead. Posted for Zaar World Tour 2006.

1 1/8 cups sugar (1 cup & 2 tablespoons)
1 tablespoon butter, melted
6 large eggs
2 oranges, juice of (about 1 cup)
1 tablespoon finely grated orange rind
1/4 teaspoon ground cinnamon
3/4 cup sugar

Steps:

  • Preheat the oven to hot, 425°F Line the bottom of a 13" X 9" baking pan with parchment or wax paper. Butter the wax paper generously and also the pan sides; sprinkle 2tbsp of flour over the wax paper, then tip the pan from side to side and back and forth to coat both the wax paper and the pan sides with flour. Rap the pan lightly against the counter, then tip out the excess flour; set the pan aside.
  • With an electric mixer set at high speed, beat the 1 1/8 cup of the sugar with the eggs & butter for 5 minutes until the colour and consistency of mayonnaise.
  • As soon as the sugar-egg mixture is fluffy-light, stir in the orange juice, rind, and cinnamon. Pour batter into the prepared pan and bake uncovered on the middle oven rack for 12 to 15 minutes until the surface is richly browned. As it bakes, the batter may billow into alarming "hills and valleys" but this is perfectly normal.
  • While the torte bakes, spread a clean dishtowel across the counter so that one of the short sides faces you. Now sprinkle the remaining 3/4 cup sugar over the towel to cover an area slightly larger than that of the your pan.
  • The instant the torte is done, remove from the oven and loosen around the edges with a thin-bladed knife or small spatula. Quickly invert the pan on top of the sugared towel and, wasting no time, gently pull off the wax paper.
  • With a sharp knife dipped in hot water, quickly trim off any crisp edges around the torte.
  • To roll the torte, lift the front end of the towel up, letting the torte roll up on itself, jelly-roll style. Leave the torte wrapped up in the towel for 3 to 4 hours (the torte will make its own jelly-like filling), then carefully unwrap.
  • To serve, slice the torte about 3/8in thick and slightly on the bias. Allow 2-3 slices per serving.

20 amaretti cookies, plus 8 amaretti cookies crushed for topping
2 ounces semisweet chocolate chips (about 1/2 cup)
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
5 large eggs, separated
2 tablespoons orange-flavored liquor (Triple Sec, Cointreau, or Grand Marnier)
1/2 cup all-purpose flour
1/4 cup orange marmalade

Steps:

  • Preheat the oven to 350 degrees F. Grease a 10-inch cake pan and line the bottom with parchment paper.
  • Combine the 20 amaretti cookies and the chocolate in a food processor. Run the machine until the mixture is very finely minced. Set aside.
  • Using an electric mixer and a large bowl, cream together the butter and sugar until pale yellow, about 2 minutes. Add the egg yolks 1 at a time, incorporating each yolk before adding the next. Once all the eggs are added continue to cream the mixture together until light and fluffy, about 4 more minutes. Add the orange liqueur. With the machine on low, add the flour and the chocolate amaretti mixture. Mix well after each addition.
  • In medium bowl whip the egg whites using an electric mixer until stiff peaks form, about 3 minutes. Add 1/3 of the whipped egg whites into the cake mixture until well combined. Gently fold in the remaining whipped egg whites. Pour the batter into the prepared cake pan. Bake until a toothpick comes out clean, about 45 to 50 minutes.
  • Let the cake cool in the pan on a wire rack for 10 minutes. Turn the cake out onto a platter and continue to cool to room temperature. Top with the orange marmalade in an even layer. Sprinkle the remaining crushed amaretti cookies over the top of the cake. Slice and serve.

This delicate cake can be prepared a day before serving. Try this easy orange sauce over ice cream, too.

Number Of Ingredients 19

1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
1 large egg
2 large egg yolks
1 cup almonds, toasted, finely ground
1/2 cup all purpose flour
2 tablespoons orange juice
1/2 teaspoon ground coriander
Pinch of salt
2 large egg whites
1 cup chilled whipping cream
2 tablespoons powdered sugar
2 tablespoons sweet Marsala
Additional powdered sugar
1 cup fresh orange juice
1 1/2 tablespoons cornstarch
2 tablespoons (1/4 stick) unsalted butter
1/4 cup sugar
1 tablespoon grated orange peel

Steps:

  • Preheat oven to 375°F. Butter 8-inch-diameter springform pan. Line bottom of pan with parchment. Butter parchment; dust with flour. Beat 1/2 cup butter in large bowl until fluffy. Gradually add sugar, beating until blended. Add egg, then yolks, 1 at a time, beating well after each addition. At low speed, beat in almonds, flour, orange juice, peel, coriander and salt, scraping down sides of bowl occasionally.
  • Using clean dry beaters, beat whites in medium bowl until stiff but not dry. Fold whites into batter in 2 additions. Transfer to prepared pan.
  • Bake cake until top is golden and tester inserted into center comes out clean, about 40 minutes. Cool cake in pan on rack.(Can be made 1 day ahead. Cover and let stand at room temperature.)
  • Beat whipping cream and 2 tablespoons sugar in medium bowl until soft peaks form. Mix in Marsala.
  • Dust cake with powdered sugar. Cut cake into wedges and serve with Orange Sauce and Marsala cream.
  • Whisk juice and cornstarch in bowl until cornstarch dissolves. Melt butter in heavy small saucepan over medium-high heat. Whisk in sugar, orange peel and orange juice mixture. Whisk until sauce boils and thickens slightly, about 4 minutes. Remove from heat and cool. (Can be made 2 days ahead. Cover and chill. Bring to room temperature before serving.)
  • Orange sauce makes about 1 1/4 cups.

2/3 cup boiling water
1/2 cup cold water
1 carton (16 ounces) frozen whipped topping, thawed, divided
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1/4 cup milk
1/4 cup graham cracker crumbs
1 package (3 ounces) ladyfingers, split
1 can (11 ounces) mandarin oranges, drained

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in cold water. Cover and refrigerate for 30 minutes or until syrupy. , Fold in 3 cups whipped topping; set aside. In a small bowl, beat cream cheese and sugar until smooth; gradually beat in milk. Fold in remaining whipped topping., Grease the bottom of a 9-in. springform pan; sprinkle with cracker crumbs. Arrange ladyfingers around edge of pan. Set aside 1-1/2 cups of the orange mixture. Alternately spoon the cream cheese mixture and remaining orange mixture into pan. Spread reserved orange mixture over top. Refrigerate for 1 hour or until set. , Remove sides of pan. Garnish with mandarin oranges.

14 fluid ounces freshly squeezed orange juice
3 eggs
1 teaspoon orange zest
1 cup sugar (for the caramel)

Steps:

  • Place the sugar in an 8-inch ring mold.Place the mold directly over medium heat.Keep turning the mold until the sugar melts into a golden brown caramel and spoon it up the sides of the mold.
  • Combine the condensed milk,orange juice,orange zest, and eggs in a blender. Whip until smooth.Pour this mixture into the mold and place it in the center of the roasting pan with water. Bake the pudim for about one hour (it will depend on your oven).It will turn golden brown on top and start separating from the sides of the mold.Let it cool to room temperature and place in refrigerator, preferrably overnight (at least 6 hours).
  • Just before serving, run the tip of a knife around the inside of the mold. place a deep platter over the mold and invert (the pudim should slide out easily).If not, give the mold a firm but careful shake.Spoon the caramel sauce on top and serve.
