BEEF TOSTADAS



Beef Tostadas image

Number Of Ingredients 12

2 tablespoons vegetable oil
1/2 small red onion, chopped
2 cloves garlic, minced
3/4 pound ground beef
Kosher salt
2 tablespoons tomato paste
1 tablespoon chili powder
1 15-ounce can refried beans
1/3 cup sour cream
8 corn tostadas (flat, hard taco shells)
1 1/2 cups shredded monterey jack cheese
Shredded lettuce, hot sauce and/or cilantro, for topping

Steps:

  • Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook, stirring, 1 minute. Add the beef and 1/2 teaspoon salt and cook, breaking up the meat, until browned, about 3 minutes. Add the tomato paste and chili powder and cook, stirring, about 2 more minutes.
  • Meanwhile, heat the refried beans in a small saucepan. Thin the sour cream with about 2 tablespoons water in a small bowl.
  • Spread the beans on the tostadas, then top with the beef and cheese. Drizzle with the sour cream. Top with lettuce, hot sauce and/or cilantro.

12 links spicy pork sausage, sliced
1 tablespoon vegetable oil
¾ cup diced onion
1 ¼ teaspoons minced garlic
2 tablespoons chicken soup base
4 cups water
2 potatoes, halved and sliced
2 cups sliced kale
⅓ cup heavy cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place sausage links on a baking sheet and bake 25 minutes, or until cooked through. Slice into 1/2 inch slices.
  • Heat oil in a large saucepan over medium heat. Saute onions until translucent; add garlic and cook 1 minute.
  • Stir in broth, water and potatoes; simmer 15 minutes.
  • Reduce heat to low and add sausage, kale and cream; simmer until heated through and serve.

Perfect for a cool fall day or a snowy winter day! Warms you right up. My mom used to make this for us often (at our request) when my siblings and I were little. Really easy and inexpensive!!

1 lb ground beef (browned and drained)
2 (14 ounce) cans sliced stewed tomatoes (undrained)
2 (14 ounce) cans ranch style beans
1 cup picante sauce
1 cup water
shredded lettuce
fresh diced tomato
sour cream
shredded cheddar cheese
Doritos

Steps:

  • In a large pot brown ground beef and drain. Add stewed tomatoes, ranch beans, picante sauce and water. Over medium heat allow to simmer 30 minutes.
  • Crunch Doritos into the bottom of each peron's bowl. Laddle soup over broken chips. Top as desired with lettuce, fresh tomato, sour cream, and cheese.
  • ENJOY!

1 can (16 oz.) pinto beans, drained
1 can (8 oz.) tomato sauce
1 cup water
2/3 cup picante sauce
1/4 teaspoon ground cumin
Tortilla or corn chips, coarsely crushed
Kraft Shredded Cheddar Cheese
Shredded lettuce
Dairy sour cream

Steps:

  • Brown meat with onion in 3 quart sauce pan, drain well. Add tomatoes and juice to saucepan with beans, tomato sauce, water, picante sauce and cumin.
  • Bring to a boil: reduce heat. Cover and simmer ten minutes.
  • Ladle into soup bowl. Top with tortilla chips, cheese, lettuce, sour cream and additional picante sauce, as desired.

16 ounces sour cream
16 ounces cream cheese
1 (8 ounce) package taco seasoning
1 red pepper
1 yellow pepper
1 bunch green onion
1 cucumber
shredded cheese

Steps:

  • Mix in a medium bowl the sour cream, cream cheese and taco seasoning.
  • Spread on a serving plate.
  • Dice peppers, green onions and cucumber and place a layer of each all over the spread. (You can add more variety if wanted).
  • Sprinkle shredded cheese over top. Can chill or serve immediately.
  • Serve with tostados.
