SAUSAGE AND MUSHROOM STRUDELS

- Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
- If either of the sausage meats is coarsely ground, place the meat in the bowl of a food processor fitted with the steel blade, and pulse until the meat is finely ground.
- Heat 4 tablespoons of the butter in a large (12-inch) saute pan, add the onion, and cook for 4 to 6 minutes over medium heat, until tender but not browned. Add all the sausage meat and mash with a fork, breaking it up and browning it, for 5 to 7 minutes, until no longer pink.
- Meanwhile, prep the mushrooms. Without washing the mushrooms, wipe the caps with a slightly damp paper towel or sponge to remove any dirt. Trim the stems, then roughly chop the caps and stems. Add the mushrooms, fennel seeds, 1 teaspoon salt, and 1 teaspoon pepper to the sausage and cook for 10 minutes, until the mushrooms give off their liquid and the liquid evaporates. Set aside to cool for 10 minutes. Stir in the mascarpone and the fresh bread crumbs and season to taste. The seasoning will depend on how highly seasoned the sausage meat is.
- Melt the remaining 12 tablespoons of butter in a small saucepan. Unfold the phyllo dough and keep it covered with a slightly damp (not wet!) kitchen towel. Transfer one sheet of phyllo to a board, brush it lightly with melted butter, and sprinkle with a teaspoon of dry bread crumbs.
- Place a second sheet of phyllo directly on top, brush with butter, and sprinkle with dry bread crumbs; repeat until you have 5 sheets piled up.
- With the long edge of the stack of phyllo facing you, make a 1-inch strip of sausage filling (about 1/3 of the filling) near the bottom edge. Fold up the sides and roll the phyllo firmly up and over, rolling the log away from you. Transfer the log, seam side down, to the prepared sheet pan. Brush with butter and score diagonally at 1-inch intervals. Make two more strudel logs and place them on the sheet pan.
- Bake the strudels for 20 to 30 minutes, rotating the pan once to cook evenly, until browned. Cool slightly, cut in pieces through the scored lines, and serve warm.
FOREST MUSHROOM STRUDEL
This is adapted from Cooking at Home with the CIA, a book I often turn to when I want to make something that is both tasty, and sure to impress. This recipe is both- savory sauteed wild mushrooms combined with tangy goats cheese and fresh herbs; all wrapped in layers of phyllo dough and baked to crispy golden perfection. You may use whatever mushrooms you love in this recipe, it will even be good with plain button mushrooms. You can also fiddle with the herbs- I chose tarragon because I love the assertive anise flavor, but other fresh herbs will also produce a wonderful result. My adaptations from the original include reducing the butter by 6 tablespoons, specifying chanterelle mushrooms, and replacing chervil with tarragon.

- Melt 2 Tablespoons butter in a saute pan over medium heat. Add shallot and garlic. Saute for about 3 minutes, until soft and translucent.
- Add the mushrooms and wine, and continue to cook until the mushrooms have released their moisture and most has evaporated, about 10 minutes. Remove from heat and allow to cool.
- Preheat oven to 400°F Prepare a baking sheet with cooking spray.
- Add the goat cheese and herbs to the cooled mushrooms. Combine well, then taste for seasoning. Add salt and/or pepper as needed to suit your taste.
- Melt 6 tablespoons of butter in a saucepan over low heat, or in the microwave.
- Lay out one sheet of phyllo dough on a work surface, and brush with 2 tablespoons of butter, coating the entire surface. Scatter with 1 tablespoon of breadcrumbs. Top with second sheet of phyllo, and repeat coating with butter, and breadcrumbs. Top with third sheet of phyllo, and repeat coating with butter, and breadcrumbs. Leave just enough butter to coat the top of the strudel after rolling (about 1/2 tablespoon).
- Scoop the mushroom mixture evenly onto the short end of the phyllo, leaving just enough room on the edge to pick up the edge and roll over. Roll the phyllo and mushrooms into a log, and place on the prepared baking sheet. (I tuck the ends under for a neater presentation.) Brush with the remaining butter.
- Using a very sharp knife, make cuts in the top of the roll at the points where you would cut serving sized pieces (quarters for first course servings, or eighths for party sized servings).
- Bake for 15-20 minutes, until golden brown. Remove from the oven and let cool slightly before cutting completely through the cuts made in the previous step and serving.

MUSHROOM AND CAMEMBERT STRUDEL
The strudel is a layered pastry most often filled with sweet fruit, but this dish is reinvented as a "rough puff" pastry, made savory with a hearty filling of cheese, spinach, mushrooms and bacon.

- For the rough puff: Combine the flour and salt in a large bowl. Add the butter and use a pastry cutter or your hands to cut or rub the butter into the flour until it is covered with flour and resembles chunky wet sand. There should still be chunks of butter visible in your mixture -- do not overwork.
- Add the cold water slowly and start to mix until the dough comes together. It will still be quite shaggy and crumbly.
- Lay out a large piece of plastic wrap and dump the dough in the center. Wrap the dough tightly, pressing down firmly to help compress and form it into a square. Allow the dough to rest in the refrigerator for at least 30 minutes and up to 1 day.
- Put the dough on a lightly floured surface and roll out to approximately a 10-by-16-inch rectangle. (You should still see the butter marbled in the dough.) Using a letter-folding technique, fold the top third down and bring the bottom third up, folding over the center like a letter. Turn the dough one-quarter and roll out again to three times its length. If the dough is too soft, chill in the refrigerator for 20 minutes. After rolling, repeat the letter fold a second time. Cut the dough in half to make 2 squares. Wrap each in plastic wrap and chill for at least 30 minutes and up to 1 day. You will use half the dough for the strudel.
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment.
- For the filling: Melt the butter in a medium skillet over medium-high heat. Add the mushrooms, thyme leaves and salt, stirring a little to coat the mushrooms with butter. Spread out and let cook undisturbed until caramelized on one side, about 3 minutes. Stir and continue to saute until golden all over. Add the sherry and continue to stir until all the liquid has cooked off. Set the mushrooms aside until ready to use.
- Add the spinach and 2 ounces water to the same pan over medium-high heat and stir as it wilts. Season with salt. When all the spinach is wilted and dark green, drain in a colander. When cool to the touch, wring with your hands to remove as much of the liquid as possible.
- Remove a dough square from refrigerator and unwrap onto a well-floured surface. Roll out into a 10-by-16-inch rectangle. Lay the Camembert down the center of the dough, leaving 2 inches empty at both ends. Layer the spinach evenly over the Camembert, followed by the mushrooms. Sprinkle the bacon over the vegetables and then the Parmesan. To close your strudel, fold in the shorter ends towards each. Next, pull the top flap of dough up and over the center, covering the filling. Lastly, close the strudel with the final flap.
- Beat the egg in a small bowl and brush over the entire strudel. Sprinkle with flaky salt and decorate with thyme sprigs. Cut 6 vents on top and bake until the strudel is golden brown, 35 to 40 minutes. Rest 5 minutes before serving.
