This extremely healthy and nutritious recipe is one of the best ways to start the day. This low fat, low-GI recipe will keep you nourished as well as help regulate your blood sugar levels. For me the best part is that it tastes good and warms you from the inside out.

Steps:
- Add the water, pinhead oatmeal and salt into a heavy based pan and bring to the boil over a medium heat while stirring with a wooden spoon. Once it starts to thicken reduce the heat to a simmer.
- Cook the porridge on a simmer for 25 minutes stirring regularly until the porridge is cooked to a smooth and creamy consistency.
- Serve hot with a drizzle honey and milk or add some dark chocolate nibs (my daughters favourite). I love to add the milk to my porridge after it has been cooked to make it even more creamier. It also helps to cool it down slightly so you can eat it without scalding your mouth. You just can't beat that!

Irish Oatmeal Soda Bread ~ I've made this authentic Irish quick bread even more delicious with the addition of oat flour...you won't find an easier, or more tasty quick bread anywhere ~ it's ready in under an hour!

- Set oven to 425F
- Whisk the flours, salt, and soda together in a large mixing bowl. Make a well in the center, and add about 1 1/2 cups of the buttermilk. Gradually mix the flour and buttermilk, adding the remaining buttermilk if your dough seems too dry. The dough will have a rough texture to it.
- Transfer the dough to a floured surface and knead briefly until it comes together. Form into an 8 inch round disk. Transfer to a baking sheet and cut a cross in the top with a sharp knife.
- Bake for about 25-30 minutes, or until golden brown. It should sound hollow when you rap the bottom.
- Let cool for a few minutes, but then enjoy it while still warm, with some good Irish butter, of course!

- Preheat oven to 350°F. Grease and flour a 9x13-inch baking pan. In a small, bowl, combine the oatmeal with the boiling water and let it sit for 20 minutes. In a medium bowl, cream the butter, brown sugar, and white sugar. In a small bowl, whisk the eggs and vanilla together. In a large bowl, whisk the flour, baking soda, cinnamon, nutmeg, and salt together until well blended. Add the egg mixture to the oatmeal mixture and stir until combined. Then add the sugar/butter mixture to the egg/oatmeal mixture and stir until combined. Add the egg/oatmeal mixture to the flour mixture and stir until combined. Pour into baking pan and bake about 30 to 35 minutes until golden brown and a toothpick comes out clean. While cake is baking make the icing. In a medium bowl, cream the butter and brown sugar. Add the walnuts, coconut, and vanilla. If you need to thin the icing a bit, add the cream 1 tablespoon at a time. Immediately after you remove the cake from the oven, adjust your oven to "broil". Spread the icing on the hot cake and pop it under the broiler until it's a bit brown and the coconut is toasted. If possible, serve warm.
