TRUFFLED MASHED POTATOES
Steps:
- Peel the potatoes and cut them in 1-inch chunks. Place them in a large, deep saucepan, cover with water, and bring to a boil. Lower the heat and simmer for 20 to 25 minutes, until very tender. Drain and return the potatoes to the saucepan.
- Meanwhile, heat the half-and-half and butter in a small saucepan over medium heat until the butter melts. Off the heat, add the truffle butter and allow it to melt. If the butter doesn't melt completely, heat the mixture slightly but don't allow the truffles to cook! With a hand mixer, beat the hot potatoes in the pot until they are broken up. Slowly beat in most of the hot truffle cream, the Parmesan, 2 1/2 teaspoons salt, and 1 teaspoon pepper and beat until the potatoes are thick and smooth. (You may have some truffle cream left over - reserve it for reheating.)
- To keep the potatoes hot or to reheat them, place them in a heatproof bowl set over a pot of simmering water. Heat slowly, adding more truffle cream if the potatoes get too thick. Season to taste and serve hot.

- Preheat the oven to 400°F.
- Mash the potatoes.
- Half of the flour plus the yeast are put into one cup of hot water and then poured over the potatoes.
- The composition is mixed well (~30 minutes).
- The dough is kneaded with more flour and allowed to rise in a warm place (under a blanket or in an oven on warm) for 2 hours.
- To the risen bread is added the rest of the flour and the salt dissolved in hot water and is kneaded vigorously for 30 minutes or until the dough does not stick to the hand anymore.
- The dough is allowed to rise again for 50 minutes the dough can be cut or placed in the form of choice.
- Make sure to rub a bit of oil or butter on the bread pans so the dough does not stick.
- Let the bread rise for another 30 minutes inside the bread pans.
- Bake for 30 minutes.
CHANTILLY MASHED POTATO CASSEROLE
The addition of whipped cream into mashed potatoes is what makes them Chantilly mashed potatoes. I was skeptical, but this was one of the most outstanding alternative mashed potato recipes I've ever had. With a light and luxurious texture, it's a perfect side dish for any holiday or special occasion.

- Preheat the oven to 475 degrees F (245 degrees C).
- Place potatoes into a pot, cover with fresh, cold water by 2 inches, and add 2 tablespoons kosher salt. Set heat to high and bring to a boil. Reduce heat to medium and simmer until tender, testing by poking potatoes with a knife. The time will depend on the size of your potatoes but could be between 15 and 20 minutes.
- Remove from the heat and let drain in a colander for 5 to 10 minutes.
- Transfer into a large bowl and mash thoroughly with a potato masher until no lumps remain. Add butter, kosher salt, and Gruyere cheese. Mix and mash until everything has been incorporated.
- Add cayenne, 3/4 cup Parmigiano-Reggiano cheese, and buttermilk, and mash until well combined. Taste and adjust for salt.
- Whisk cream in a metal bowl until thick and fairly stiff peaks form, 1 to 2 minutes. Pour 1/2 of the whipped cream onto the potatoes and cut it in with the side of a spatula to lighten the mixture. Repeat with remaining whipped cream but do it carefully to preserve the maximum amount of volume, cutting in until just barely mixed.
- Transfer into a well-buttered casserole dish and distribute gently with a fork. Smooth the top with a spoon if desired. Sprinkle remaining 1/4 cup Parmigiano-Reggiano on top and dust lightly with cayenne.
- Place the baking dish on a pan and bake in the center of the preheated oven until beautifully browned, 15 to 20 minutes.
- Remove from the oven and sprinkle with green onions before serving.

TRANSYLVANIA MASHED POTATOES
I have not tried this recipe. I got it from New Hampshire Police Association Cookbook. The recipe was submitted by Kerry Plaisted. Not only does this dish have a wonderful and mild garlic flavor but it is guaranteed to keep vampires away. Enjoy!

Steps:
- Wash and peel potatoes. Place in large pot and cover with lightly salted water. Bring to boil over medium heat and cook until easily penetrated by fork. Do not overcook.
- Melt butter in small saucepan. Peel garlic and add to butter over low heat, cooking until tender. Do not let garlic burn. When garlic is tender add cream and black pepper, heat almost to a boil.
- Drain water from potatoes and mash with a fork or potato masher. Add just enough chicken broth to break down potatoes.
- Place garlic mixture in a blender or food processor and puree. Once this step is complete slowly add the mixture to the potatoes and beat with an electric hand mixer until smooth, and serve.
