Yellow , Red and Green Heirloom Tomatoes along with leafy fresh basil make this salad bright and eye catching , the taste is fresh and the preperation is easy.

Ingredients

2 large yellow tomatoes, sliced
2 large tomatoes, sliced
2 green heirloom tomatoes, sliced
1 bunch fresh basil
10 ounces fresh mozzarella cheese
1 shallot, very thinly shaved
very good quality olive oil
very good aged balsamic vinegar
salt and pepper

Steps:

on a large platter start layering tomato , whole basil leaf cheese slice then repeat in rows up and down the platter.
sprinkle with shaved shallots (to taste).
drizzle with balsamic and olive oil.
sprinkle with salt and pepper to taste.

Remove the mozzarella from its brine, rinse under cold running water, and then pat dry with a piece of kitchen roll to remove any excess moisture.
Cut the mozzarella into 1cm (½") slices, and then arrange the cheese, tomato and basil on a plate, alternating each piece. (The eagle-eyed among you will notice that mine don't actually start with green and end with red!)
