Ingredients

1 lb mild cheddar cheese, crumbled
6 hard-boiled eggs, chopped
2 scallions, finely chopped
1 cup mayonnaise

Steps:

Combine all ingredients.
Mash together with alittle pepper, salt and paprika.
Add more mayo if necessary to form a cohesive ball.
Divide into 2 balls.
Chill, covered at least 1 hour.
Serve with crackers and small bread slices.

1 1/4 cup flour
1 tsp. baking soda
1/4 tsp. salt
1 cup butter
1 cup brown sugar
1/4 cup hot water
2 cup quick oatmeal
Date Filling
2 cups cut up dates
1/2 cup white sugar
3/4 - 1 cup water

Steps:

Sift flour, baking soda & salt. Cream butter and add sugar slowly. Add dry ingredients alternately with the hot water. Add oatmeal. Form into log. Wrap in floured wax paper and chill overnight. Cut in 1/4 inch slices and bake on greased cookie sheet. Allow cookies to stand a few minutes before removing from pan. Cool. Spread with date filling to make sandwiches. Cook until dates are mooshy - Cool before spreading on cookie

Ingredients

1 cup dates, pitted and chopped
½ cup white sugar
¾ cup water
½ cup butter, softened
½ cup packed brown sugar
1 ½ cups all-purpose flour
¼ teaspoon baking soda
1 ¼ cups rolled oats
½ teaspoon salt

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.
Bake 15 minutes in the preheated oven, or until browned.
