These are a real pain in the butt to make, but they are worth it. The best ginger cookies I have ever eaten.

¾ cup butter
1 cup packed brown sugar
1 egg
¼ cup molasses
2 ¼ cups all-purpose flour
2 teaspoons ground ginger
2 teaspoons baking soda
½ teaspoon salt
1 ½ tablespoons minced fresh ginger root
½ cup chopped crystallized ginger

Steps:

  • In a large bowl, cream together the butter and brown sugar until smooth. Beat in the egg and molasses. Combine the flour, ground ginger, baking soda, and salt; stir into the molasses mixture using a wooden spoon. Mix in the fresh and crystallized gingers. Cover, and refrigerate dough for at least 2 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Shape dough into 1 inch balls, and place about 2 inches apart onto ungreased cookie sheet.
  • Bake for 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks.

2/3 cup brown sugar
1Â egg, beaten
1 cup whole-wheat flour
1 cup self-rising flour
1 teaspoon ginger powder
1 tablespoon fresh ginger, grated
1 teaspoon salt
2 cups walnuts, chopped
½ cup candied ginger, well chopped

Steps:

  • Heat oven to 350 degrees.. Cream together butter and sugars until fluffy. Add eggs and combine well. Stir in flours, ginger powder, fresh ginger and salt until just combined. Fold in the walnuts.. Spoon onto ungreased cookie sheets. Top with chopped candied ginger.. Bake 10 to 14 minutes, until very light brown

  • Bake 5 to 7 minutes or until edges are set. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

1/2 teaspoon almond extract
1 1/2 cups Gold Medal™ all-purpose flour
1 cup butter or margarine
1 1/2 cups packed brown sugar
1/4 cup honey
1/4 cup light corn syrup
1/2 teaspoon vanilla
1 cup walnut pieces
1 cup unblanched or blanched whole almonds
1 cup pecan halves

Steps:

  • Heat oven to 350°F. In medium bowl, beat 3/4 cup butter, 1/2 cup brown sugar and the almond extract with electric mixer on medium-low speed until blended. On low speed, beat in flour until soft dough forms. Press dough in bottom of ungreased 13x9-inch pan. Bake 17 to 20 minutes or until golden brown.
  • Meanwhile, in 2-quart saucepan, cook 1 cup butter, 1 1/2 cups brown sugar, the honey, corn syrup and vanilla over medium-high heat 12 to 15 minutes, stirring frequently, until mixture comes to a full rolling boil. Boil 1 to 2 minutes, stirring frequently. Remove from heat.
  • Sprinkle walnuts, almonds and pecans over crust. Pour brown sugar mixture over nuts. Bake 13 to 15 minutes longer or until top of mixture is bubbly. Cool completely, about 1 hour. For bars, cut into 6 rows by 6 rows.

1/2 cup packed brown sugar
1 large egg, room temperature
3 tablespoons molasses
1/2 teaspoon grated fresh gingerroot

½ cup white sugar
½ cup packed brown sugar
¼ teaspoon baking soda
1 egg
1 teaspoon vanilla extract
½ cup butter, softened
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a medium bowl, stir together the flour, white sugar, brown sugar, and baking soda. Add the egg, vanilla, and butter; mix until dough forms. Stir in the chopped walnuts. Roll dough into 1 inch balls and place 2 inches apart onto the prepared cookie sheets.

  • gently stir in crystalized ginger and fresh ginger.
  • cover and refrigerate dough for 1 hour.
  • shape dough in 1 inch balls and roll in white sugar or powdered sugar -- or nothing and place on a baking sheet. may flatten SLIGHTLY not too much or they loose thier chewiness, or not at all.
  • bake 8-10 minute cookies will be soft. check at 8 min.DO NOT OVERBAKE.

5 1/3 ounces salted butter, softened (a generous 2/3 cup)
5 1/3 ounces shortening (a generous 2/3 cup)
4 ounces cream cheese
5 1/2 ounces sugar
2 tablespoons vanilla
1 1/3 cups flour
1 cup oat flour
1 pinch nutmeg
1/3 cup ground walnuts
2 cups finely chopped walnuts
1/4 cup currants (optional)
turbinado sugar, for rolling
32 walnut halves
maple syrup, for brushing

Steps:

  • In a large bowl, cream together the butter, shortening, cream cheese and sugar until fluffy.
  • Add vanilla, beat in well.
  • Add flours, nutmeg and ground walnuts, beating inches
  • Fold in the chopped walnuts and currants (if using). [Photo24688]
  • Scoop 1/2 the batter (it will be very soft and sticky) onto a sheet of wax paper set on a double layer of foil.
  • Using damp hands, roll dough into a log about 2" in diameter.
  • Wrap in the waxed paper / foil layers and freeze until very firm, at the least 3-4 hours and up to 6 months.
  • When ready to bake, preheat the oven to 350F and line 2 baking sheets with parchment.
  • Unwrap one log and roll it in the coarse sugar to coat the sides completely.
  • Use a sharp serrated knife to cut the log into 1/4" thick rounds and place them 1" apart on sheets.
  • Lightly press a walnut half onto the tacky surface of each cookie (dough will have defrosted somewhat) and using a pastry brush lightly glaze the top of each round.
  • Bake, one sheet at a time, for 16-17 minutes. They will not look overly browned but this is OK.
  • Cool completely on the sheets.

  • Heat the butter in a skillet until it is just barely melted. Stir in the molasses, natural cane sugar, and fresh ginger. The mixture should be warm, but not hot at this point, if it is hot to touch let it cool a bit. Whisk in the egg. Now pour this over the flour mixture, add the crystallized ginger (make sure it isn't too clumpy), and lemon zest. Stir until just combined.
  • I like these cookies tiny, barely bite-sized, so I scoop out the dough in exact, level tablespoons. I then tear those pieces of dough in two before rolling each 1/2 tablespoon of dough into a ball shape. From there, grab a small handful of the big sugar you set aside earlier and roll each ball between your palms to heavily coat the outside of each dough ball. Place dough a few inches apart on prepared baking sheets. If you like a slightly larger cookie, use 1 tablespoon of dough for each. Bake for 7-10 minutes or until cookies puff up, darken a bit, get fragrant and crack.
