SEAWEED SALAD WITH SCALLOPS
Sweet and briny scallops need little more than a splash of oil and a pinch of seasoning to be delicious. Because they're often enjoyed raw, it's important to purchase fresh, high-quality bivalves. Many store-bought scallops are soaked in a phosphate solution that plumps them up with water (therefore bumping up the price), so it's important to look for scallops that are labeled "dry" or "dry-packed." A waterlogged scallop doesn't sear well, and a phosphate-marinated scallop may taste like soap, especially when consumed raw as they are here. In this 10-minute recipe, the scallop takes center-stage while seaweed and cucumber provide texture, and soy sauce and sesame oil add depth.

Steps:
- Peel cucumbers if they have been waxed, then trim their ends and cut them in half the long way. Scoop out seeds with a teaspoon. Sprinkle each half with about 1/4 teaspoon of salt, then place them in a colander. Let drain for about 30 minutes. Rinse lightly, and drain again. Cut into 1/8-to- 1/4-inch-thick slices and place in a bowl.
- Mix together the fish sauce, lime juice, garlic, chili, lemon grass and sugar. Thin with a tablespoon of water. Taste, and add more of any flavoring you wish. Toss dressing with cucumbers, and set aside.
- Place greens on a large platter. Put a large nonstick skillet over high heat. In a bowl, toss scallops with oil, then sprinkle them with salt and cayenne. When skillet begins to smoke, add scallops one at a time; do not crowd them. Cook for about 2 minutes on the first side, turning as they brown; depending on their size, cook for 1 to 3 minutes on the second side. (Scallops are best when their interior is slightly underdone; cut into one to check it.)
- Toss cucumbers with most of the herbs, and spoon them and the dressing over the greens. Top with the scallops. Drizzle with sesame oil, and top with remaining herbs. Serve immediately.

Steps:
- On a flat dish, combine parsley, thyme, sesame seeds, 1 tablespoon of the lemon zest, and only the fronds from fennel. This will be your seasoning for the scallops.
- Make sure to pat dry the scallops, then season to taste with salt and pepper.
- Roll the sides (NOT the round-flat sides) of each scallop in the herb mix (like rolling a penny across the table), and set aside until pan is hot.
- Heat up skillet (cast iron is best) and barely coat with olive oil. When skillet is nice and hot, sear flat sides of scallops for 2 minutes per side until opaque and slightly spongy, but not too firm. You want them to cut like soft butter with a fork.
- Set scallops aside, keeping them warm with a foil-tent until salad is ready.
- Time for salad -- Place sliced fennel in bottom of serving bowl and top with orange supremes.
- Add remainder of the lemon zest and juice over the salad.
- Season to taste with salt and pepper, and drizzle with olive oil.
- Toss gently and place onto serving plates.
- Place seared scallops on top, and serve immediately.

TRIPLE SESAME SALAD WITH SCALLOPS
The perfect whole-meal salad features as much flavor, texture, and bulk as any other well-prepared meal, and the fact that the base is a pile of greens makes me feel like I'm getting away with something. This one takes about ten minutes longer than a plain green salad and by changing the topping can be made in different ways every time, always with a minimum of effort. Use a blender for the dressing; it makes quick work of dispersing the sesame paste or peanut butter throughout the liquid ingredients-something that can be a real hassle with a fork or a whisk-creating a perfect emulsion. And because the blender purees the garlic and ginger, there's no need to mince them; just peel, chop roughly, and drop them into the blender with the other ingredients. My first choice for topping this salad is grilled scallops-they're almost ludicrously fast and easy, and their texture and flavor complement both greens and dressing-though shrimp, steak, or chicken thighs all could be substituted.

Steps:
- Start a grill. Combine the soy sauce, vinegar, tahini, sesame oil, hot pepper, honey, garlic, and ginger in a blender and whiz until smooth. When the grill is hot, sprinkle the scallops with salt and grill them for about 2 minutes per side; they should remain tender and undercooked in the middle.
- Combine the greens and basil if you're using it and divide among 4 plates. When the scallops are done, top the greens with them, then drizzle with the dressing; sprinkle with the sesame seeds and serve.
