1 cup shelled unsalted pistachios (5 ounces), coarsely chopped
1 cup unsweetened coconut flakes
2 tablespoons plus 2 teaspoons safflower oil
2 tablespoons plus 2 teaspoons mild honey, such as acacia
1 teaspoon finely grated lemon zest, plus juice for serving
Pinch of cayenne pepper
Coarse salt
2 large mangoes, peeled, pitted, and cut into 1/2-inch slices or cubed
1/2 large or 1 medium papaya, peeled, seeded, and cut into 1/2-inch slices
2 star fruits (carambolas), cut into 1/4-inch slices
2 bananas, cut into 1/4-inch slices
8 fresh lychees, peeled, halved, and seeded

Steps:

  • Preheat oven to 300 degrees. Toss together pistachios, coconut, oil, honey, lemon zest, cayenne, and 1/2 teaspoon salt. Spread on a parchment-lined rimmed baking sheet and bake, stirring once, until golden brown, about 15 minutes. Let cool completely. Crunch can be stored in an airtight container at room temperature up to 3 days.
  • Arrange fruits on a serving platter. Sprinkle with lemon juice and a pinch of salt. Serve, with crunch on the side.

A little different from normal fruit crumble. Tropical fruits are flavored with ginger and coconut. You can use chopped nuts if you don't like coconut.

2 mangoes
1 papaya
8 ounces pineapple
1 1/2 teaspoons ground ginger
1/2 cup margarine
1/2 cup light brown sugar
1 1/2 cups flour
1/2 cup unsweetened coconut

Steps:

  • Chop and seed fruit. Place in a pan with 1/2 tsp of ginger, 2 tbsp margarine, and 1/4 cup sugar. Cook over low heat for 10 minutes until fruit softens. Sppon into the base of a shallow ovenproof dish.
  • Mix flour and remaining ginger together. Rub in the remaining margarine until the misture resembles fine bread crumbs. Stir in remaining sugar and coconut and spoon over the fruit to cover completely.
  • Cook at 350 for 40 minutes until top is crisp. Decorate with extra coconut and serve.

1 large egg white
2 tablespoons clover or orange-blossom honey
1/2 teaspoon pure vanilla paste or extract
1 teaspoon grated Meyer-lemon zest, plus 2 tablespoons fresh juice
1 tablespoon poppy seeds
Pinch of kosher salt
2/3 cup unsweetened shredded coconut
1 quart strawberries, halved lengthwise if large
2 mangoes, peeled, pitted, and cut lengthwise into 1-inch-thick fingers
1 small papaya, peeled, halved, seeded, and cut lengthwise into 1-inch-thick fingers
1 small pineapple, peeled, cored, and cut into 1-inch-thick fingers

Steps:

  • Preheat oven to 325 degrees. Whisk egg white with honey, vanilla, lemon zest and juice, poppy seeds, and salt until foamy and thoroughly combined. Stir in coconut to evenly coat; spread on a rimmed baking sheet in a thin layer.
  • Bake, stirring a few times, until golden in places, 22 to 25 minutes. Let cool completely (mixture will crisp as it cools). Rub between your fingers, breaking up any clumps, until crumbled.
  • Arrange fruits on a platter; sprinkle with coconut crunch to serve. Fruits can be loosely covered with plastic, without coconut crunch, and refrigerated up to 8 hours. Coconut crunch can be stored in an airtight container at room temperature up to 1 week.

After spotting dried pineapple pieces at the grocery store, I had the idea of baking cookies which were different than the ordinary oatmeal raisin cookie. The rice krispies give them a nice crunch, but they are still chewy and soft with the coconut. Any type of dried fruit can be substituted for the pineapple pieces that I suggest. These cookies are sweet, so you may reduce the amount of sugar used, although I have not tried it. This batter is easily doubled.

1 cup canned, pitted Bing cherries in syrup
1 (17.3 ounce) package frozen puff pastry (2 sheets), thawed
¼ cup unsweetened desiccated coconut
½ cup lightly salted pistachio nuts, coarsely ground
1 large egg, beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Drain cherries and reserve juice for another use. Finely chop cherries and place in a bowl with coconut; mix well. Let sit until coconut absorbs excess liquid from the cherries, about 5 minutes.
  • Place 1 puff pastry sheet on a clean counter and lightly score a large triangle shape into it, like a Christmas tree; don't cut all the way through. Repeat with the second puff pastry sheet.
  • Set aside 2 tablespoons of the coconut-cherry mixture. Spread the rest inside the scored triangle on the first sheet of pastry. Sprinkle with ground pistachios and place the second pastry sheet on top, lining up the triangles. Transfer to one of the prepared baking sheets.
  • Cut out the shape of the tree along the triangular score line, and remove the outer pastry scraps. Make horizontal cuts on the tree from the outer edges in toward the middle, leaving about 1 inch intact in the center to resemble a trunk. Gently lift each horizontal strip, making sure to lift both sheets of pastry, and twist it a couple of times to expose the filling.
  • Use the puff pastry scraps to cut out a star shape for the top of the tree and a tree trunk for the bottom. Make sure to use both layers of pastry. Fill the trunk and star with the reserved cherry mix.
  • Place the star, trunk, and any extra pastry scraps onto the remaining baking sheet. Brush all pastry pieces with beaten egg.
  • Bake in the preheated oven until puffed and browned all over, 25 to 30 minutes. Gently lift parchment paper onto wire racks and allow to cool completely before serving, about 20 minutes.

75 g pistachios, raw, unsalted (1/2 cup)
155 g pistachio paste (1/2 cup)
60 g feuilletine (3/4 cup)
40 g confectioners' sugar (1/4 cup)
4 g kosher salt (1 teaspoon)

Steps:

  • Heat the oven to 325°F.
  • Put the pistachios on a sheet pan and toast in the oven for 15 minutes. Cool to room temperature.
  • Put the toasted pistachios in a clean kitchen towel and, with a sauté pan or a rolling pin, bash them into smaller pieces, ideally halving the pistachios, or breaking them down to no smaller than one-eighth their original size.
  • Combine the broken pistachios with the pistachio paste, feuilletine, confectioners' sugar, and salt in the bowl of a stand mixer fitted with the paddle attachment and paddle on medium-low speed for about 1 minute, until homogenous. The crunch can be stored in an airtight container at room temperature for 5 days or in the fridge for up to 2 weeks.
  • If you want to make this nut crunch gluten-free, substitute 75 g (1/2 cup) additional toasted ground pistachios for the feuilletine; used as the replacement for the milk crumbs, this makes the amazing almond flour Pistachio Layer Cake (page 83) entirely gluten-free.
  • Pistachio crunch is used in the Chèvre Frozen Yogurt dessert (page 217).

  • Preheat oven to 250°. Whisk first 6 ingredients and 3/4 teaspoon salt in large bowl. Whisk coconut milk, 1 1/4 cups warm water, 2 tablespoons maple syrup, and vanilla in medium bowl. Whisk coconut milk mixture into dry ingredients until batter is pourable.
  • Heat griddle or skillet over medium-high heat; brush with vegetable oil. Working in batches, add batter by 1/4 cupfuls. Working quickly and using back of spoon, spread each pancake to about 4-inch round. Cook until small bubbles appear on surface and bottoms of pancakes are golden, reducing heat if browning too quickly, 2 to 3 minutes. Turn over; cook until golden, 1 to 2 minutes. Transfer to baking sheet. Keep warm in oven.
  • Place 2 to 3 pancakes on each plate. Top with tropical fruit salad, maple syrup, and chopped pistachios.
