BRAISED ESCAROLE WITH OLIVES AND RAISINS



Braised Escarole with Olives and Raisins image

Number Of Ingredients 8

3 tablespoons olive oil
2 shallots, chopped
1 garlic clove, smashed and peeled
1/4 teaspoon red pepper flakes, optional
1 teaspoon kosher salt
1/2 cup pitted green olives, roughly chopped
1/4 cup golden raisins
2 large heads escarole (about 1 1/2 pounds), roughly chopped into 2-inch pieces

Steps:

  • Heat a large straight-sided skillet over medium heat until hot. Add the oil, shallots, garlic and pepper flakes, if using, then season with 1/4 teaspoon salt. Stir with a wooden spoon until the shallots are soft and fragrant, about 3 minutes. Add the olives and raisins and stir to combine. Add the chopped escarole and season with the remaining 3/4 teaspoon salt. Stir to combine and coat the escarole in the flavors. Cover with the lid and allow to steam for 5 minutes. Remove the lid and increase the heat to medium-high. Cook, stirring often, until the liquid has evaporated and the greens are tender, another 3 minutes.

A pan-fried rainbow trout fillet is paired with sauteed escarole, orange juice and zest, and green olives for a quick solo dinner. The best part? It's a one-pot meal so cleanup will be a breeze.

2 teaspoons extra-virgin olive oil
1 skin-on trout fillet (4 ounces)
Coarse salt and ground pepper
3 cups escarole, torn into pieces
1/4 teaspoon grated orange zest, plus 2 tablespoons orange juice
4 green olives, pitted and coarsely chopped

Steps:

  • In a large skillet, heat oil over medium-high. Pat fish dry and season both sides with salt and pepper. Add fillet to skillet, flesh side down, and cook until fish is golden brown and releases easily from skillet, about 5 minutes. Gently flip and cook until opaque throughout, about 2 minutes. Transfer to a plate. Add escarole, orange zest, and olives to skillet. Cook, stirring constantly, until escarole wilts, about 2 minutes. Add orange juice and toss to coat. Serve alongside trout.

Sauteed Idaho Brook Trout With Orange image

4 rainbow trout, about 1/2 pound each, butterflied, with bones, heads and tails removed
1/4 cup milk
1/2 cup all-purpose flour for dredging
Salt and freshly ground pepper to taste
2 tablespoons olive or vegetable oil
24 orange sections with membranes removed
2 tablespoons chopped shallots
4 sprigs fresh lemon thyme, leaves only, or 1/2 teaspoon dried thyme
1 tablespoon lemon juice
3 tablespoons lemon-flavored vodka, like Absolut Citron
2 tablespoons soft butter
4 sprigs fresh basil or parsley for garnishing

Steps:

  • Place the trout in a large pan and pour in the milk. Spread the flour over a flat dish and season with salt and pepper. Remove the trout from the milk and dredge them in the flour, shaking to remove excess flour.
  • Heat the oil in a large nonstick skillet or black steel pan over high heat. Add the trout, flat side down, for about 3 minutes, or until lightly browned. Turn and saute for another 2 minutes or until fully cooked. Remove and set aside. Keep warm.
  • Pour off the excess fat from the pan. Add the orange sections, shallots and lemon thyme, and cook briefly, just to warm through. Do not brown the shallots. Stir in the lemon juice, the vodka and the soft butter. Blend well.
  • To serve, place trout, one each, on warm plates, and spoon the sauce over it. Garnish with the basil.

2 cloves garlic, peeled and very thinly sliced
2 tablespoons chopped fresh tarragon leaves
1 lemon, peeled and separated into segments
2 cups assorted olives
2 tablespoons chopped fresh chives
1/4 cup extra virgin olive oil
1/4 cup dry white wine
1/4 cup bottled clam juice
4 7-ounce trout fillets (or gutted whole fish)
Coarse salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees.
  • Line a rimmed baking sheet with aluminum foil. Scatter the garlic, tarragon, lemon segments, olives and chives over the foil. Drizzle with the olive oil, wine and clam juice. Season the fish fillets on both sides with salt and pepper, and arrange in the pan without crowding. Cover with another sheet of aluminum foil and crimp the sheets of foil around the edges to seal, pressing gently on the top to release any excess air.
  • Place the baking sheet in the oven and bake until the fish is very firm to the touch, about 20 minutes. Serve with olives, lemon segments and ample amounts of pan juices over and around the fish.
