TRUFFLED GNOCCHI MACARONI AND CHEESE

Steps:
- Preheat oven to 375°F.
- Cook gnocchi to al denté. according to package directions. Drain and set aside.
- While pasta is cooking, prepare cheese sauce. Melt 3 tablespoons truffle butter in large saucepan or Dutch oven over medium heat. Add flour and whisk to combine, cooking over medium-low heat 3-4 minutes, whisking, until flour mixture becomes light brown in color. Add milk while whisking and cook over medium heat 5-10 minutes or until sauce thickens.
- While the sauce cooks, melt remaining tablespoon of truffle butter. Add bread crumbs, 2 tablespoons parmesan cheese, melted butter, garlic clove and parsley to a food processor and process for 30 seconds or until minced. Set aside.
- Remove sauce from heat and add swiss, white cheddar, and remaining 1/2 cup parmesan cheeses; stir until melted. Season with kosher salt and white ground pepper.
- Add drained gnocchi to sauce and stir to combine. Pour into an 8x8-inch baking pan or 1 quart casserole dish and sprinkle with bread crumb mixture and additional parmesan cheese, if desired. Bake 10-15 minutes or until the top is lightly browned and bubbly. Serve immediately.
TRUFFLED MACARONI AND CHEESE
A more grown-up version of a favorite dish. Nice as a side for Thanksgiving or Christmas. The truffle oil definitely makes it more expensive, but it's worth it.

- Preheat the oven to 350 degrees.
- Cook macaroni according to package directions.
- Toss macaroni with truffle oil & set aside.
- Melt the butter in a saucepan over medium heat. Add the onion & cook over medium heat for 5 minutes. Add the bacon & the flour, combine well & cook for 1 minute.
- Whisk in the milk & chicken broth, stirring continuously. Bring to a boil. When the mixture comes to a boil, take off the heat & stir in the mustard, salt, pepper & cheeses. Stir well until all the cheese melts & is well incorporated into the sauce.
- Mix together the sauce and the macaroni and pour into a greased baking dish.
- Bake at 350 for 20 minutes.
FOUR-CHEESE TRUFFLED MACARONI AND CHEESE
This is one of my favorite things to make once the weather gets a chill in the air. It's great for cheese-lovers (like myself) and works great as leftovers or at dinner parties! Truffle oil has by far been one of the best culinary purchases I have made. One little bottle has lasted me a year, and can be used with so many things, like this recipe. Top with a pinch of truffle salt!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook cavatappi in boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain.
- Melt butter in a large pot over medium-low heat. Whisk flour into butter until mixture has a thick, paste-like consistency, about 30 seconds. Slowly whisk 2 cups milk into butter-flour mixture until smooth. Stir in remaining milk, increase heat to medium high, and cook, whisking constantly, until mixture is thick and almost boiling, 5 to 10 minutes.
- Stir Gouda cheese, Cheddar cheese, Swiss cheese, and 1 cup Parmesan cheese into milk mixture until cheese melts and cheese sauce is smooth. Fold cavatappi into cheese sauce; pour mixture into prepared baking dish.
- Stir remaining Parmesan cheese and bread crumbs together in a small bowl. Sprinkle bread crumbs mixture over cavatappi mixture and drizzle truffle oil over the top.
- Bake in the preheated oven until golden and bubbling, about 30 minutes. Cool for 10 minutes before serving.

BLACK TRUFFLE GNOCCHI
A great twist on a Northern Italy favorite! This is always a crowd pleaser and one of my personal favorites.

Steps:
- Bring shallots and white wine to a boil in a large sauté pan, slightly reduce heat and cook until reduced by half.
- Add the butter and cook until melted.
- Add the truffle oil and stir well, remove from heat and set aside.
- Bring a pot of salted water to a boil, add the gnocchi and cook until done. Before dumping the water remember to reserve the 1/4 cup of water.
- Place the pan containing the sauce back on a medium-low heat, add pasta water, cheese and gnocchi. Toss until evenly covered and smooth.
- Add pepper and truffle salt, toss well.
- Serve in a pasta bowl and top with additional pepper, black sea salt and shaved truffles.
