TUNA SALAD ROLL UPS
As we were walking through the grocery store, we stopped to try a sample at the Deli. It tasted like Tuna Salad rolled up in a tortilla and it was very good. We went home and made our own version and it tasted even better. The recipe is easy, tasty, and you can make a low fat version.

Steps:
- In a small mixing bowl, mixed drained tuna, mayonniase, onion, relish, and seasoning salt.
- Warm tortillas and spread mixture on tortilla.
- Roll up tortilla into the shape of a tube.
- May slice into smaller pieces and serve with a toothpick.

TUNA APPETIZER ROLL UPS
Here's a fun appetizer to make ahead: hearty crepes and canned tuna appetizer roll ups... perfect for your next garden party!

Steps:
- Add the sifted flour, caster sugar, a pinch of salt, milk and egg to a large mixing bowl.
- Stir into a runny batter. Pour a drop of oil in a non-stick pan and place it over medium-high heat. Then add a generous spoonful of the crepe batter to the hot pan.
- Lightly turn the pan a little to spread the batter over the surface evenly. Then let the crepe bake for some minutes until the edges start to brown. Carefully lift the crepe a little and see if it is golden enough. Then flip it over and bake it on its uncooked side.
- Once baked, transfer the crepe to a clean plate and cover with tinfoil. Add another drop of oil to the hot pan and another batch of crepe batter. Do this until there is no batter left anymore. You should end up with 4 thin crepes. Place them in a neat stack on top of each other and let them cool down fully. In the meantime transfer the drained tuna to a mixing bowl and add the cream cheese.
- Stir and add half of the chopped dill. Season with a little pinch of pepper and salt.
- Stir. Once the crepes are cooled, spread them with the tuna mixture.
- Sprinkle with the rest of the chopped dill and extra pepper or salt to taste. Then roll the crepes up.
- Roll them tightly in some cling film and let the crepes cull in the fridge for an hour.
- Then remove the cling film, slice the crepes up. Place them on a clean serving plate.

- Add the cream cheese and dill weed to a small bowl and mix together until fully combined.
- Wash the cucumber in cold water, then cut it in half and chop half of it into small pieces.
- Spread ¼ of the mixture onto each tortilla.
- Spread ½ can of tuna onto each tortilla.
- Sprinkle ¼ of the cucumber chunks onto each tortilla.
- Starting at one end of each tortilla, start rolling, and roll until you meet the other end.
- Chill for 1 hour in the refrigerator.
- Cut into 1 inch pieces, arrange flat on a platter to serve.

I wanted some tuna fish without bread one night and whipped one of these up. Makes a great snack or platter.

- Drain tuna and put in a small bowl with tomatoes and carrots. Mix well. (If adding mayo or mustard, mix that in as well.).
- Take one lettuce leaf and place some of the tuna mix in the middle of it.
- Wrap the lettuce up and stick a toothpick in so it will stay. You should be able make 12 of these.
- Serve and enjoy!
BROCCOLI TUNA ROLLUPS
My mother-in-law gave me this recipe many years ago. It makes a quick and tasty meal for those busy weeknights!

Steps:
- Combine soup and milk; set aside.
- Cut broccoli spears into 1 inch pieces. Combine tuna, broccoli, 1/2 cup cheese, and 1/2 can of onion rings. Stir in 3/4 cup of the soup mixture.
- Divide tuna mixture evenly between the tortillas and roll up. Place seam side down in a lightly greased 9x13 baking dish.
- Chop tomato and stir into remaining soup mixture. Pour over tortillas.
- Cover pan with foil and bake at 350 degrees for 35 minutes. Top center of tortillas with remaining cheese and onion rings and bake, uncovered, for 5 minutes more.

- Place tuna, mayonnaise, curry powder and shallots in bowl.
- Spread bread slices with butter on both sides, remove crusts.
- Spread mayonnaise mixture over one side of each slice of bread.
- Roll up from one corner to the other and secure with a toothpick.
- Place on baking dish and sprinkle with grated cheese.
- Bake in moderate oven for 10- 12 minutes or until crunchy and golden.
