A low budget, low fat, easy and delicious salsa. You can add as many or as little veggies to your taste. This can easily be multiplied. Serve with crackers or tortilla chips.

TUNA WITH CAPERS, OLIVES AND LEMON
This is not your mother's mayonnaise-laden tuna salad, but it's just as easy to prepare. Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

- In a large bowl, mash garlic with the back of a spoon. Whisk in the lemon juice and 5 tablespoons of olive oil. Combine with the tuna, onion, olives, capers, herbs and salt to taste.
- Serve on buttered toast for sandwiches, or make into a dip: Pulse the tuna salad and butter in a food processor until it is creamy. With the motor of the processor running, slowly add the additional 4 tablespoons oil. Taste and add more salt or lemon juice if needed. Serve with cut vegetables (fennel and bell peppers are nice) and crackers.

- Mix black pepper, salt, cumin, garlic powder, and cinnamon together in a small bowl. Rub all over tuna steaks. Cover and refrigerate for at least 15 minutes.
- Meanwhile, stir pineapple, red onion, cilantro, lime juice, red pepper, and lime zest for salsa together in a bowl until combined. Cover and refrigerate until needed.
- Heat oil in a cast iron skillet over medium heat. Add tuna steaks and cook to desired doneness, 1 1/2 to 2 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium doneness. Remove from the skillet and slice steaks thinly.
- Spread sour cream in a thin layer over each warmed tortilla. Add tuna slices, top with pineapple salsa, and wrap to seal.

An easy and versatile appetizer that can be served hot or cold. While searching for seafood recipes I found this on Bumblebee's site. You can vary this by substituting various flavors of tuna & salsa. I might even try this with shrimp & cocktail sauce! Calorie count may be less because Zaar assumes you eat *all* the chips!

- To make the dough, add 2 cups (240 grams) all-purpose flour into a large bowl, along with 1/2 tsp (3 grams) sea salt, mix the dry ingredients together and then make a well, add in 1/4 cup (60 ml) extra virgin olive oil and a generous 1/2 cup (125 ml) water, mix together until you form a dough, then get in there with your hands and knead for just 1 to 2 minutes or until the dough is well combined, shape into a ball, place in the bowl and cover with a dishcloth
- While the dough is resting, add 3 eggs into a sauce pan, fill with cold water to 1 inch (2.5 cm) above the eggs and heat it with a high heat, once it comes to a boil, place a lid on the pan and turn off the heat, let the eggs sit for 11 to 12 minutes, then drain and add the eggs into a bowl with ice cold water
- Meanwhile, drain 5 cans tuna in olive oil (3 oz / 80 grams each) into a sieve with a bowl underneath, mix the tuna around to remove any excess olive oil, reserve the olive oil in the bowl
- Heat a fry pan with a medium-high heat and add in 3 tbsp (45ml) of the reserved olive oil from the tuna, after 1 minute add in 1/2 onion finely diced and 1/2 red & 1/2 green bell pepper finely chopped, mix with the olive oil, after 5 minutes and the vegetables are lightly sauteed, add in a generous 1/2 tsp (1.30 grams) sweet smoked paprika and quickly mix together, then add in 1/2 cup (112 grams) tomato sauce and season with sea salt & black pepper, mix together and simmer for 2 minutes or until the tomato sauce has thickned up, then turn off the heat in the pan, add the drained tuna and mix together until well mixed, set aside
