Steps:
- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

- In a large bowl, mix tuna, egg, bread crumbs, green onions, and garlic. Blend soy sauce, teriyaki sauce, ketchup, sesame oil, and pepper into the mixture. Form the mixture into about 6 patties approximately 1 inch thick. Lightly sprinkle each patty on all sides with cornmeal.
- Heat oil in a medium skillet over medium heat. Fry each patty about 5 minutes on each side, until golden brown.

- In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

CURRIED TUNA PITA POCKETS
A crunchy flavor packed tuna salad that would work great for lunch or a light supper. The original recipe first appeared in Jolie Warner's "take a can of tuna" and as presented includes my modifications. What distinguishes this recipe is the addition of fresh basil which adds a sweet grassy flavor in contrast to the heat of the curry. Serve sandwiches with a crispy salad and enjoy. You could also turn this into an entree salad and serve pita wedges on the side. As presented, this is intended to be eaten shortly after preparation. If you are planning to chill it a few hours, I would suggest scaling back the curry powder as the flavor grows stronger and overshadows the other flavors in the salad.

JESSICA'S FAMOUS TUNA PATTIES
These amazing baked tuna patties were discovered when the kids were hungry and it was the night before grocery day! I had to do what I could with what we had to avoid getting a "We want (fill in the blank with a fast food restaurant)!" protest from the kids. I made these babies off the top of my head and they were an instant hit. The kids loved them, I loved them, and I was easily able to hide the carrots in them from my husband, so he loved them too!

Steps:
- Pre-Heat Oven to 375.
- Spread oil over bottom of pan (any metal pan should work, I used a pizza pan that has a lip on it).
- Mix remaining ingredients in a large mixing bowl.
- Divide mixture into 8 equal parts.
- Form mixture into patties and place on the pan.
- Bake patties for 10 minutes.
- Turn patties over. (Be careful they may fall apart easily.).
- Continue to bake for an additional 5-10 minutes until they start to brown.
- Remove and let them sit for 5 minutes to firm.
