TURKEY BREAST WITH LEMON AND CAPER SAUCE



Turkey Breast with Lemon and Caper Sauce image

Two 2- to 2 1/2-pound boneless, skin-on turkey breasts, rinsed
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
3 cloves garlic, crushed
3 sprigs fresh thyme, plus more for garnish, optional
2 sprigs fresh rosemary, plus more for garnish, optional
10 tablespoons unsalted butter
1/2 cup white wine
2 cups turkey stock
1 tablespoon small capers in brine, rinsed
1 tablespoon fresh parsley, minced, plus sprigs for garnish, optional
Zest of 1 lemon
1 shallot, minced

Steps:

  • Let the turkey breasts stand at room temperature for 1 hour prior to cooking.
  • Preheat the oven to 325 degrees F. Fit a baking sheet with a wire rack.
  • Pat the turkey breasts dry and season heavily with salt and pepper all over. Put the olive oil in a large skillet or cast-iron pan over medium-high heat. Sear the breasts skin-side down until light golden brown, about 5 minutes. Flip the breasts over and add the garlic, thyme, rosemary and 4 tablespoons of the butter to the skillet. Once the butter has melted, use a spoon to baste the turkey breasts with the herb and garlic infused butter for 30 seconds.
  • Transfer the breasts to the rack on the baking sheet, pour the butter and herb mixture over the breasts and cook, basting every 15 minutes, until the internal temperature of the thickest part of the breast reaches 160 degrees F, 1 1/2 to 2 hours. Transfer to a cutting board, tent with aluminum foil and rest for 15 minutes.
  • Deglaze the skillet that the breasts were seared in with the white wine over medium-high heat, then reduce until almost dry, 5 to 8 minutes. Add the turkey stock and reduce by 90 percent, another 8 to 10 minutes. Reduce the heat to low and slowly whisk in the remaining 6 tablespoons butter, keeping the mixture creamy and emulsified. Once all the butter is incorporated, add the capers, parsley, lemon zest and shallot. Season with salt and pepper to taste.
  • Slice the turkey and transfer it to a platter. Pour some sauce over the slices and serve the rest of the sauce on the side. Garnish with fresh herb sprigs if desired.

4 fillets of turkey steaks, about 1 1/4 pounds
Salt to taste if desired
Freshly ground pepper to taste
3 red, ripe tomatoes, about 1 pound
3 tablespoons olive oil
1/4 pound mushrooms, thinly sliced, about 2 cups
2 teaspoons finely minced garlic
1/2 teaspoon chopped dried rosemary
1/4 cup dry white wine
3 tablespoons butter
2 tablespoons finely chopped basil or parsley
2 tablespoons flour
Juice of 1/2 lemon
1/4 cup finely chopped parsley

Steps:

  • Sprinkle turkey pieces on both sides with salt and pepper and set aside.
  • Core, peel and seed tomatoes. Cut into small cubes. There should be about two cups.
  • Heat two tablespoons of the oil in a saucepan and add mushrooms. Cook, stirring, until mushrooms give up their liquid. Cook further until liquid evaporates. Add garlic and rosemary and stir. Add wine and cook about one minute.
  • Add tomato, salt and pepper and cook five minutes. Add two tablespoons of the butter and the basil or parsley and stir. There should be about 2 1/4 cups.
  • Meanwhile, coat turkey pieces with flour and shake off excess.
  • Heat remaining oil and butter in a skillet large enough to hold the pieces in one layer. Put the slices in the skillet and cook on one side until golden brown, about 3 to 4 minutes. Turn slices and continue cooking about 4 to 5 minutes. Sprinkle with lemon juice.
  • Spoon tomato sauce over a warm or hot serving dish and top with the turkey slices. Serve sprinkled with parsley.

2 cloves garlic, grated or pasted
1 stick butter, softened
1/4 cup minced fresh herbs, such as parsley, chives, thyme and rosemary

One 12-ounce bag fresh cranberries
1 cup sugar
Pinch salt
1 cinnamon stick
1 strip orange rind
1 pomegranate
2 tablespoons all-purpose flour

1/3 cup heavy cream
1/4 cup freshly grated Parmigiano-Reggiano

Steps:

  • For the roasted turkey breast: Preheat the oven to 350 degrees F. Place the turkey on a baking rack over a baking sheet. Combine the garlic and softened butter with the herbs and lemon juice. Slather about 5 tablespoons of the garlic-herb butter over the turkey breast and sprinkle liberally with salt and pepper, reserving the remaining garlic-herb butter for the gravy. Roast the turkey 45 minutes.
  • For the cranberry pomegranate sauce: Meanwhile, place the cranberries in a medium saucepot with the sugar, salt, cinnamon stick, orange rind and 1 cup water. Bring to boil and cook until all the berries pop and the sauce thickens, about 15 minutes. Cool and remove the rind and cinnamon stick. Peel the pomegranate in a bowl of water, separating the seeds, and drain. Add the pomegranate seeds into the sauce.
  • For the creamy gravy: Right before serving the turkey, melt the remaining garlic-herb butter over medium heat in a saucepan. Whisk in the flour, followed by the stock, to thicken. Whisk in the Worcestershire and season with salt and pepper. Stir in the cream and cheese, and keep warm until ready to serve.
  • Slice the roasted turkey breast and serve with the room temperature sauce and warm gravy, with steamed greens on the side.
  • Cook's Note: If the turkey is a make-ahead meal, you will need an extra 1 cup stock for reheating. Place the turkey in a low baking dish with the extra 1 cup stock and loosely cover with foil. Reheat at 350 degrees F 20 to 25 minutes, then crisp up the skin under the broiler.
  • This recipe will result in leftovers for sandwiches.

If your looking for a recipe to use fresh summer kissed tomatoes from your garden or local supermarket, this is truly a wonderful dish to make. I normally make this dish in summer when the tomatoes are at their best. It's especially good if you have tomatoes in your garden or local farm grown because they surpass supermarket quality in flavor. I've made it many times with the turkey patties and have made it using only the fresh tomato sauce. I've also used this fresh tomato sauce as a topping for bruschetta which is out of this world. Like many of my recipes, this recipe was developed by combining a recipe from here and another from there with a twist and tweak of my own. I hope you enjoy this dish as much as my family, friends, and I have.

3 lbs nicely ripe tomatoes (preferably fresh garden tomatoes or vine ripened if store bought)
3 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil plus 1 tablespoon pure olive oil
1/2 cup coarsely chopped fresh basil leaf
2 tablespoons finely chopped garlic
salt, pepper to taste
1 lb linguine
1/2 cup freshly grated parmesan cheese
1 cup fine fresh breadcrumb, from firm white bread (Portuguese, French or Italian bread)
2/3 cup half-and-half
1 lb ground turkey
1 1/2 teaspoons salt
3/4 teaspoon white pepper or 3/4 teaspoon black pepper, preferably freshly ground
1/4 teaspoon ground nutmeg
1/8 teaspoon granulated sugar
4 teaspoons freshly grated lemon peel (from 1 1/2 lemons)
1/4 cup finely chopped parsley
3 -4 garlic cloves, minced
1/2 cup finely chopped scallion
1 -1 1/2 tablespoon olive oil
1 tablespoon butter

Steps:

  • Fresh Tomato Sauce:.
  • Coarsely chop the tomatoes, making sure to reserve the juice. Place tomatoes and juice in large bowl. Add the vinegar, 3 tablespoons of the extra-virgin olive oil, and the basil.
  • Add the tablespoon of olive oil to a sauté pan over medium high heat. Sauté the garlic for 3 minutes, stirring. (Do not allow it to brown) (You may also add garlic to sauce raw. If you decide to add it raw, you can cut the garlic in half because it will be much stronger in flavor). Add to tomato mixture. Season to taste with salt and pepper.
  • Let mixture sit at room temperature for at least 4 hours. (It can also be made a day ahead of time and kept in refrigerator).
  • When ready to serve, Prepare turkey patties as indicated below.
  • Cook linguine in a large pot of boiling, salted water. When pasta is al dente, drain in a large colander, then transfer to a large bowl.
  • Toss linguine with the tomato sauce and turkey patties. Incorporate parmesan cheese throughout or top each serving with the cheese.
  • Lemony Turkey Patties:.
  • Mix crumbs with half and half in a large bowl. Add all remaining ingredients and mix until well blended (mixture will be very soft).
  • Moisten hands (to make meat mixture easier to handle) and shape into sixteen 1 - 1 ½" circumference patties. Let stand for 15 minutes.
  • Heat olive oil and butter in a large nonstick skillet over medium heat until it bubbles and starts to brown. Add patties and cook until browned and crisp on both sides and no longer pink in centers, about 5 minutes. Place on paper towels to drain. Add to Linguine recipe.
  • NOTE:.
  • This recipe is also great served with only the fresh tomato sauce, but the turkey patties certainly add the "oomph". Definitely use summer tomatoes as mentioned in "Recipe Description" section. Supermarket vine ripened tomatoes are also decent enough to use.
  • I also use this tomato sauce for making bruschetta. If using it for bruschetta, make sure to drain the juices from the tomatoes as it can make your bread soggy. I also add a bit of fennel seed (cause I like it) and grated parmesan or romano cheese over the top (or combo). Quickly pop the bruschetta's into the oven for a couple of minutes or so until cheese just melts.

1/4 cup low-sodium store-bought chicken broth
2 tablespoons plus 2 teaspoons olive oil
3 1/4 teaspoons coarse salt
1 1/2 teaspoon Worcestershire sauce
2 teaspoons honey
1/4 teaspoon cayenne pepper
1/4 cup Roasted Garlic
2 tablespoons chopped mixed fresh herbs such as oregano, thyme, parsley, or sage

Steps:

  • Place turkey, meat-side up, on a rack set inside a roasting pan.
  • In a medium bowl, mix together chicken broth, 2 tablespoons olive oil, 2 teaspoons salt, Worcestershire sauce, honey, and cayenne pepper. Fill a turkey injector with chicken broth mixture (you will have to refill injector several times). Inject small amounts of solution at regular intervals all over turkey, taking care to remove injector from turkey before refilling. Refrigerate turkey for at least 2 hours and up to overnight.
  • Preheat oven to 375 degrees.
  • In a small bowl, mix together garlic, herbs, butter, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Using your fingertips, gently loosen skin on both sides of turkey breast so that it is separated from the flesh. Divide garlic mixture evenly and spread under skin on each side of breast. Season turkey all over with remaining teaspoon salt and remaining 1/2 teaspoon pepper; brush skin with remaining 2 teaspoons olive oil.
  • Transfer turkey to oven and roast, uncovered, for 1 hour. Tent turkey with parchment paper-lined aluminum foil and continue to roast until a thermometer inserted into the thickest part of the breast reaches 165 degrees on an instant-read thermometer, 20 to 40 minutes more. Remove turkey from oven and let stand 20 minutes before carving.
