1/4 cup dried cherries
2 celery ribs, chopped
1/4 cup honey mustard
Kosher salt and freshly ground black pepper
1/2 cup mayo
2 cups shredded roasted turkey
4 split-top hot dog buns, buttered and griddled
BBQ chips and pickle spears, for serving

Steps:

  • Mix dried cherries, celery, honey mustard and some salt and pepper in a medium bowl. Let sit to let flavors meld, 10 minutes. Add mayo and mix until incorporated. Adjust seasoning if necessary. Add turkey, then mix and season to taste.
  • Serve on split-top buns topped with crushed BBQ potato chips and pickles on the side.

1 pint grape tomatoes
2 tablespoons olive oil
1/4 teaspoon kosher salt
2 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1/2 cup mayonnaise
1/4 cup whole-grain mustard
8 slices rye bread
8 small leaves butter lettuce
8 ounces thinly sliced roasted turkey breast
8 cornichon pickles

Steps:

  • For the tomatoes: Preheat the oven to 400 degrees F.
  • On a small rimmed baking sheet, spread the tomatoes, olive oil, salt, garlic and basil. Toss well to coat. Roast until the tomatoes are popped and beginning to brown, about 25 minutes. Allow to cool slightly.
  • For the spread: Mix together the mayonnaise and mustard in a small bowl.
  • For the sandwich: Lay out the bread and spread the mayonnaise-mustard mixture on each slice. Working 2 slices at a time, place 2 lettuce leaves on one slice and about 6 roasted tomatoes on the opposite slice. Ribbon 3 slices of turkey on the lettuce. Place the 2 halves together and secure with 2 toothpicks with a cornichon on each one. Continue with the remaining ingredients. Cut in half before serving.

  • Preheat broiler.
  • In a small bowl stir together honey and mustard. Slice tomato lengthwise. Arrange bread on a baking sheet and toast under broiler until golden on one side. Turn bread over and spread honey mustard on untoasted sides. Sprinkle Cheddar over honey mustard and broil until cheese is melted. 1 cup cider vinegar
1/4 cup honey (preferably raw or cream honey)
2 bay leaves
1 1/2 teaspoons finely chopped peeled fresh ginger
1 1/4 teaspoons brown mustard seeds
1/2 teaspoon coarse salt
2 teaspoons grainy mustard
4 small whole-wheat rolls, halved
4 ounces sharp white cheddar cheese, thinly sliced

Steps:

  • Put onion and cucumber into a heatproof nonreactive medium bowl; set aside. Bring vinegar, 2 tablespoons honey, bay leaves, ginger, mustard seeds, salt, and 1/2 cup water to a boil in a medium saucepan. Reduce heat, and simmer, stirring occasionally, 5 minutes. Pour over onion and cucumber. Cover loosely, and let cool completely, stirring occasionally to submerge vegetables. Pickled vegetables can be refrigerated in an airtight container up to 2 weeks.
  • Stir together remaining 2 tablespoons honey and the mustard; spread on bottom of rolls. Divide cheese among rolls; top each with 1/3 cup drained pickled vegetables and top half of roll. Sandwiches can be stored, wrapped in parchment, in a cool place up to 4 hours.
