This flavorful recipe from Mary Stretchbery produces two moist ham loaves that are topped with a sweet homemade sauce. "I sometimes serve one loaf and freeze individual slices of the other," she pens from Weston, Ohio. "The slices are great for fast sandwiches at lunchtime."

3 eggs
1-1/2 cups milk
2 cups graham cracker crumbs
1/2 teaspoon salt
1/2 teaspoon ground allspice
3 pounds fully cooked smoked turkey ham, ground
1 pound ground turkey
SAUCE:
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 cup packed brown sugar
1/2 cup cider vinegar
1-1/2 teaspoons prepared mustard

Steps:

  • In a large bowl, combine the eggs, milk, cracker crumbs, salt and allspice. Crumble turkey ham and turkey over mixture; mix well. Pat into two ungreased 9x5-in. loaf pans., In a bowl, combine the sauce ingredients; place half in a freezer container. Cover and freeze one loaf and container of sauce for up to 2 months. Pour about 1/2 cup of remaining sauce over the second loaf. Bake at 350° for 45 minutes. Baste with remaining sauce. Bake 35-45 minutes longer or until thermometer reads 165°. Drain.To use frozen ham loaf and sauce: Thaw in the refrigerator overnight; bake as directed. , To use frozen ham loaf and sauce: Thaw in the refrigerator overnight; bake as directed.

Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

1 lb fresh ground turkey
1 lb ham, ground (or turkey ham)
1 cup breadcrumbs
1 egg
1 teaspoon salt
1/8 teaspoon pepper
3/4 cup milk
2/3 cup brown sugar
1 teaspoon dry mustard
1/2 cup water
1/4 cup vinegar

Steps:

  • Grind meat (if necessary).
  • Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
  • Shape into a loaf.
  • Bake at 350 degrees Fahrenheit for one hour.
  • For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
  • Pour sauce over loaf.
  • Continue to bake for another hour.

2/3 cups panko (Japanese) breadcrumbs
1/2 cup milk
3 pounds lean (7 percent) ground turkey, preferably organic
1 medium onion, finely chopped
2 large eggs, lightly beaten
1/4 cup plus 2 tablespoons ketchup
1/4 cup chopped flat-leaf parsley
1 tablespoon plus 1 teaspoon Dijon mustard
1 tablespoon coarse salt
1 teaspoon rubbed sage
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place panko and milk in a large bowl; stir until well combined. Let stand 5 minutes.
  • Add turkey, onions, eggs, 1/4 cup ketchup, parsley, mustard, salt, sage, and pepper to breadcrumb mixture. Gently mix until well combined. Transfer mixture to a 9 3/4-inch-by-5 3/4-inch loaf pan. Brush top with remaining 2 tablespoons ketchup.

1 ½ cups bread crumbs, or as needed
2 teaspoons salt
ground black pepper to taste
1 tablespoon poultry seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.

2 ½ pounds ground ham
½ pound ground pork
½ onion, chopped
2 cups rolled oats
2 eggs
2 ½ tablespoons chopped fresh parsley
1 teaspoon ground mustard
½ teaspoon ground black pepper
1 ½ cups evaporated milk
1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice
salt and black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
  • Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.

1 tbsp olive oil
1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

1½ lbs ground turkey
1 cup plain bread crumbs
1 cup minced onion
3 teaspoons minced garlic
¾ cup shredded carrots
½ cup fresh spinach (chopped)
⅓ cup shredded Mozzarella cheese
¼ cup ketchup
1 Tablespoon fresh parsley (chopped)
2 eggs
1 Tablespoon Worcestershire sauce
1¼ teaspoon salt
½ teaspoon pepper
¼ cup ketchup
2 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Add ground turkey, breadcrumbs, minced onion, garlic, carrots, spinach, Mozzarella cheese, ketchup, parsley, eggs, Worcestershire sauce, salt, and pepper into a large bowl.
  • Mix until everything is fully incorporated. (Sometimes clean hands work best for this step.)
  • Place in a loaf pan that has been sprayed with nonstick cooking spray, or line a sheet pan with parchment paper or aluminum foil and pour meat on the prepared pan then use your hands to form into a loaf shape, trying to keep it level so it cooks evenly.
  • Bake for 30 minutes.
  • While baking, mix glaze ingredients together. Remove meatloaf from oven and brush glaze over top.
  • Place back in the oven for another 30 minutes, or until internal temperature reaches 165 degrees F.
  • Remove and let cool for 10 minutes before serving. Sprinkle with chopped parsley to garnish if desired.
