Roast Turkey With Berry-Mint Sauce and Black Walnuts image

The flavor of heritage turkey breeds is richer and more pronounced than that of commercial turkeys sold at supermarkets nationwide. Put plainly, heritage breeds taste more like turkey. Heritage birds are raised outside, pecking at a varied diet. They tend to have meatier thighs and smaller breasts, and a higher ratio of dark meat to white meat. The Onondaga tribe, among others from the Northeastern United States, would have been able to serve them with forest berries, perking up the rich, dark meat with color and flavor. Sparked with mint, this berry sauce is bright and fruity, with just enough acid to complement the richness of the turkey.

1 (10- to 12-pound) turkey, preferably a heritage breed
Coarse sea salt
1 bunch fresh sage
3 cups wild rice cooking liquid (reserved from Wild Rice and Berries With Popped Rice, if desired) or turkey stock, plus more as needed
6 medium leeks, white and pale green portions only, halved lengthwise, cut into 2-inch pieces and rinsed clean
2 tablespoons sunflower oil
1/2 cup maple syrup, plus more as needed
3 cups fresh raspberries or blackberries
3 cups fresh or frozen cranberries
2 tablespoons chopped fresh mint, plus more as needed
1/2 cup black walnuts (see Note), lightly toasted and chopped
Pea shoots or microgreens, for garnish

Steps:

  • Remove giblets from the turkey cavity and discard or reserve for another use. Pat the turkey dry using paper towels. Rub the turkey all over with 1/2 teaspoon salt per pound of turkey. Tuck the sage sprigs inside the turkey cavity.
  • Set the turkey on a baking sheet, breast-side up. Place in the refrigerator, uncovered, for at least 4 hours and up to 6 hours to dry out the skin (this will help it crisp when it roasts).
  • When you are ready to cook the turkey, remove it from the refrigerator and allow it to come to room temperature, 1 1/2 to 2 hours.
  • Heat the oven to 450 degrees. Pour the rice cooking liquid or stock into a large roasting pan and add the leeks. Place a roasting rack on top, then transfer the turkey to the roasting rack, breast-side up, and tuck the wings underneath. Brush the exposed turkey generously with the oil. Transfer to the oven and roast, 30 minutes. Baste the turkey with the pan juices, adding rice cooking liquid or stock as needed to make sure there is a 1/2-inch layer of liquid at the bottom of the pan.
  • Reduce the oven temperature to 350 degrees and continue roasting, basting every 30 minutes, until an instant-read thermometer inserted into the thickest part of a thigh reaches 165 degrees, 1 to 1 1/2 hours. If the skin begins to darken too much, tent the turkey loosely with aluminum foil. Brush 1/4 cup maple syrup over the turkey. Transfer turkey to a cutting board to rest for 30 minutes before carving.
  • Transfer 3/4 cup of the turkey pan juices to a heavy-bottomed saucepan. Add the raspberries or blackberries, cranberries and the mint to the saucepan, stir with a wooden spoon to combine, and bring to a boil. Reduce the heat to medium and cook, stirring occasionally, until the cranberries have popped open, the raspberries have fallen apart and the liquid is thick enough to coat the back of a spoon, 10 to 12 minutes. Stir in the remaining 1/4 cup maple syrup, then add maple syrup and mint according to taste.
  • Carve the turkey. Smear some berry sauce on each plate. Top with the leeks then the turkey. Garnish with walnuts and pea shoots or microgreens, and pass more berry sauce alongside.

1-1/4 cups white wine or chicken broth
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
2 teaspoons dried rosemary, crushed
1/2 teaspoon pepper
3 turkey breast tenderloins (3/4 pound each)
3 tablespoons cornstarch
1/2 cup half-and-half cream or whole milk
1/2 teaspoon salt

Steps:

  • In a 3-qt. slow cooker, combine the wine, onion, garlic and bay leaves. Combine rosemary and pepper; rub over turkey. Place in slow cooker. Cover and cook on low for 7-9 hours or until turkey is tender., Remove turkey to a serving platter; keep warm. Strain and skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine the cornstarch, cream and salt until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with turkey.

Turkey neck and giblets
1 small onion, coarsely chopped
1 carrot, sliced
2 stalks celery, sliced
4 sprigs parsley
1 bay leaf
1 10- to 12-pound turkey
1/2 pound sweet Italian sausage, casing removed
4 slices white bread
3/4 cup milk
1/2 pound pitted prunes
1 cup dry red wine
2 tablespoons unsalted butter
1 tablespoon safflower or peanut oil
1 large onion, chopped
2 cloves garlic, minced
4 stalks celery, finely chopped
1 teaspoon dried thyme
Coarse salt and freshly ground pepper to taste
1/3 cup parsley, chopped
1 cup walnuts, chopped
2 tablespoons melted butter for basting
8 strips of bacon
1 cup red wine

Steps:

  • Preheat oven to 375 degrees. Combine the ingredients for the turkey broth and simmer for one hour. Strain and reserve the broth. Wipe the turkey inside and out with paper towels and set aside.
  • Saute the sausage meat over medium heat, separating it with a fork. Drain off the fat and put the sausage meat into a mixing bowl. Meanwhile, soak the bread and the milk in a small bowl. Simmer the prunes in the wine for 20 minutes, covered. Set aside.
  • With a paper towel, wipe out the frying pan in which you sauteed the sausage. Add the butter and oil and cook the onion, garlic and celery until soft. Sprinkle with thyme, salt and pepper and add to the sausage meat with the parsley and walnuts.
  • Drain the bread from the milk, squeeze it and add it to the sausage meat. Add the prunes with their cooking juices and mix thoroughly.
  • Season both cavities in the turkey with salt and pepper and fill with the stuffing. Truss with skewers or needle and thread. Tie legs together and tuck in wings. Place turkey breast-side-up in roasting pan. Brush generously with melted butter and place the bacon strips on top. Cover breast with foil.
  • Roast turkey two hours, basting every 30 minutes with pan drippings. Uncover and continue roasting for one to two hours longer, depending on size of turkey, until a thermometer inserted into the thickest part of the thigh registers 170 degrees.
  • Place turkey on a serving dish and cover loosely with foil. Pour the fat from the roasting pan. Add two cups turkey broth to the pan and bring to boil, scraping up any cooked particles. Add the wine and bring to boil, stirring. Reduce to one-and-a-half cups. Season with salt and pepper and serve separately in a warm sauce boat.

1 cup dried stuffing cubes
1 cup chicken stock
2 tablespoons extra virgin olive oil
1 1/2 lbs ground turkey
salt & pepper
1 egg
3 tablespoons grated onions
3 garlic cloves, finely chopped
1 tablespoon poultry seasoning
1 teaspoon fennel seed
1 teaspoon crushed red pepper flakes
1 1/2 cups chicken broth
2 tablespoons butter
1 1/4 cups couscous
salt & pepper
1 cup flat leaf parsley sprig
1/2 cup walnuts, chopped & toasted
1 cup whole berry cranberry sauce
1 cup applesauce, no sugar added
2 tablespoons maple syrup (dark amber)

Steps:

  • Preheat oven to 425°F Place a rack on a large baking sheet. Using a food processor, grind the stuffing cubes into crumbs, then transfer to a small bowl. Douse the stuffing with the stock to soften. (Don't clean out the food processor; set aside.).
  • Drizzle the oil into a large bowl. Add the turkey, season with salt and pepper. Mix in the moist stuffing crumbs, egg, onion, garlic, poultry seasoning, fennel seeds, and crushed red pepper. Roll the meat into 1-1/2 to 2 inch balls . Arrange on the prepared baking sheet and roast until browned, about 15 minutes.
  • For the couscous: In a medium saucepan, bring the stock and butter to a boil. Stir in the couscous; season with salt and pepper. Cover the pan, turn off the heat and let stand for 5 minutes. Using the reserved food processor, chop the parsley. Fluff the couscous and stir in the parsley and walnuts.
  • For the sauce: In a small bowl, combine all of the sauce ingredients. Serve with the meatballs and couscous.
