ASPARAGUS LEEK TART

1 pie crust
3/4 lb thin asparagus, cut into 6 inch spears
olive oil flavored cooking spray
1 tablespoon butter
1 lb leek, chopped white part only
1 teaspoon chopped fresh dill
1 cup low-fat milk
2 large eggs
1/4 teaspoon ground pepper
salt (optional)
1/2 cup swiss cheese or 1/2 cup gruyere cheese

Steps:

  • Preheat oven to 425 degrees.
  • Fit pre made pie crust into a 9 inch tart pan, with removal bottom (if you use the crusts that come rolled -- usually don't have to roll out creases).
  • Press pastry into sides of pan, put into freezer for 15 minutes.
  • Blind bake for 15 to 17 minutes until crust is golden, cool completely.
  • Spread asparagus on a large jellyroll pan; spray with cooking spray and shake to get all sides, sprinkle with salt, roast until tender about 10 minutes.
  • Cool and transfer to a plate.
  • In a large skillet over med heat, melt butter. Add leeks, dill and salt (optional) cover and cook over med low heat until leeks have softened, 5 to 6 minutes.
  • Transfer to small bowl.
  • In a med bowl, whisk together milk and eggs, leeks and pepper.
  • Pour unto crust.
  • Arrange asparagus on top of milk mixture; sprinkle top with cheese.
  • Bake until filling is set and golden on top, approx 30 minutes.
  • Cool on a wire rack 30 minutes.
  • Serve warm or at room temperature.

CHEESY ASPARAGUS TART

4 tablespoons salted butter
2 large leeks, halved lengthwise and thinly sliced
Kosher salt and freshly ground black pepper
One 14-ounce package refrigerated rolled pie dough (2 crusts)
2 cups grated fontina cheese
1 cup ricotta
1 teaspoon chopped fresh thyme
12 ounces asparagus, trimmed and chopped into 1-inch pieces
1 large egg

Steps:

  • Heat a large skillet over medium heat and add the butter. When the butter has melted, add the leeks, then sprinkle with salt and pepper and cook, stirring occasionally, until soft and golden brown around the edges, 8 to 10 minutes. Set aside.
  • Preheat the oven to 450 degrees F.
  • Unroll the two pie crusts and lay on a sheet pan so that the pieces overlap slightly. Trim the edges of the pastry where it rides up the sides of the sheet pan and press these trimmings into the bare areas so that you are left with a 10-by-16-inch pastry rectangle.
  • Sprinkle over the fontina, leaving a 1-inch border, then top with the leeks. Dollop on the ricotta. Scatter the thyme and asparagus pieces over the ricotta and sprinkle with salt and pepper. Fold the uncovered pastry edge inwards to make a 1/2-inch border all the way around the tart, in the style of a galette.
  • Whisk the egg with a splash of water in a small bowl. Brush it all around the pastry edge.
  • Bake the tart until it is a deep golden brown, 15 to 18 minutes. (If the crust is browning too fast, reduce the heat to 425 degrees F.)
  • Remove the tart from the oven, then allow it to sit for 5 minutes. Cut into pieces and serve.

  • Cut the leeks into discs removing the green, leafy section and cut both the asparagus and the mushrooms into quarters. Then, add all of the vegetables to a large pan along with a tbsp of olive oil. Cook on a medium heat for around 10 minutes to allow them to soften and reduce in size. Dice up your turkey into small bite-size pieces and coat it in a thin layer of flour as this will serve as a thickening agent. Add the Turkey to the pan and cook until it is sealed.
  • Now, add the stock, salt, pepper, crème fresh, herbs, garlic, mustard and wine then stir thoroughly. Bring to a boil and cook on a medium heat for a further 10 minutes to allow the ingredients to blend and the sauce to thicken.
  • Once cooked, drain the majority of the sauce using a sieve and an additional pan. This will be used as gravy to serve. It also stops the pastry getting soggy but still allowing the contents to be full of flavour.
  • Add the pie filler into a large, square lasagne style dish. Roll out the pastry so it is large enough to cover the dish however when placing it on, do not coat it around the rim. Instead, tuck it around the filler as best you can.
  • Using a knife, gently score the surface of the pastry in a diagonal cross-hatch pattern and then coat with beaten egg.
  • Place it an oven at 190C and cook for at least 30 minutes until the pastry is golden-brown. Serve with the gravy you previously extracted and your choice of sides such as vegetables and potatoes.

  • Trim each leek at the root end, making sure the stalk stays intact, then cut off the top where the green part begins. Cut leeks in half lengthwise. Immerse in a bowl of cold water to loosen any sand or grit. Rinse under cold running water, and pat dry.

  • Preheat oven to 190°C/375°F/gas 5. Cut bacon into chunks and fry with thyme leaves. Add chopped leeks, fry for a few minutes then put a lid on, turn down heat and cook for 30 minutes, stirring occasionally.

In this supremely springy recipe, thick asparagus stalks and thinly sliced leeks are glossed with olive oil and covered in salty capers. No one knows when people started making pies, but they were common in medieval Middle Eastern and European cooking. "The Oxford Companion to Food" speculates that the English word may come from the word "magpie," because magpies collect random items in the way a pie often houses varied ingredients. It's appropriate, then, that this pie is here to accommodate your Thanksgiving leftovers: turkey, of course, but also leftover roasted squash or sautéed mushrooms in place of peas, chop up half a rutabaga instead of carrot and celery, or a stray leek or shallot instead of onion. Any fresh soft herbs can go in the biscuit topping. For an even simpler version, use canned biscuits arranged on top of the filling as the crust, or defrosted puff pastry with a vent cut in the middle. For a more assertive flavor, use the larger amount of mustard.

2 celery ribs, including leaves, chopped
1/4 cup all-purpose flour
1 teaspoon onion powder

Juice of ½ lemon (about 1 generous tablespoon)

Steps:

  • Make the biscuit dough: In a large bowl, combine the flour, baking powder and salt. Add the cold chunks of butter and toss to coat. Using your fingers, pinch, smear and squeeze the butter into the flour until the butter pieces are the size of a penny or the size of a pea. There's no need for perfection, but the butter should be evenly distributed throughout the flour, and each butter bit should be coated in flour. Stir in the chives and herbs. Pour the buttermilk into the mixture and mix it briefly and gently with a fork, just until a shaggy dough forms. Cover and put the dough in the refrigerator while you make the filling.
  • Make the filling: Heat the oven to 400 degrees. In an oven-safe 10-inch skillet, melt the butter over medium-high heat. Add the onion, season lightly with salt, and cook, stirring occasionally, until translucent and shrunken, 6 to 8 minutes. Add the garlic, carrot and celery, and cook, stirring, until fragrant and slightly softened, about 3 minutes. Add the flour and the onion powder, and cook, stirring constantly, until the flour is completely incorporated with the vegetables, about 1 minute. Whisk in the chicken broth, mustard, Worcestershire and lemon juice, and cook, whisking, until the mixture comes to a bubble. Let it cook, whisking once or twice, until it thickens to lightly coat the back of a spoon, about 2 minutes. Stir in the turkey and the peas. Season generously with black pepper; taste and season with additional salt if desired. Remove pan from the heat.
  • Evenly scatter the biscuit dough over the top of the filling, in golfball-size clumps. (Don't press or roll the dough into neat balls, which can make the biscuits tough.) Put the skillet on a foil-lined sheet pan to catch any drips and bake in the oven until the filling is bubbling and the biscuits are lightly browned, 35 minutes.   • Preheat your oven to 190°C/375°F/gas 5. Put your bacon in a large pan on a medium heat and add your thyme leaves. Add a lug of olive oil and the butter and let it all fry off a few minutes. Add all of your prepped leeks and fry them off for about 3 minutes so they are well-coated in the butter. Add a pinch of salt and pepper then pop the lid on top, turn the heat down to medium and let them cook away gently for 30 minutes, stirring every 5 to 10 minutes to make sure they dont catch. Theres going to be enough moisture in the leeks to keep them happy in the pan so they should be soft and melt in your mouth once theyre done.
  • When your leeks are ready, add the turkey meat to them and stir. If youve got a bit of stuffing mixed in there you can put that in too. Add the flour, mix it in well then pour in your stock and stir again. Add the creme frache then turn the heat up and bring everything back up to the boil. Have a taste and add a bit more salt and pepper if it needs it then turn the heat off. Pour the mixture through a sieve over another large empty pan and let the wonderful gravy from the mixture drip into the pan while you roll out your pastry.
  • Get a deep baking dish roughly 22 x 30cm. Dust a clean surface and a rolling pin with a bit of flour and roll your pastry out so its about double the size of your dish. Crumble the chestnuts over one half of the pastry then tear a few of the sage leaves over the chestnuts. Fold the other half of pastry on top then roll it out carefully and evenly so you have a rectangle big enough to cover your baking tray. Dont worry if a few bits stick out here and there.
  • Spoon that thick leek mixture from your sieve into the pie dish and spread it out evenly. Lay your pastry on top, tuck the ends under then gently score the pastry diagonally with your knife. Add a pinch of salt to your beaten egg then paint this egg wash over the top of your pastry. Pop your pie in the oven for about 35 to 40 minutes or until the pastry is puffed up and golden brown. When the pie is ready, re-heat the lovely gravy and serve with your pie, along with some peas tossed in butter, lemon, salt and pepper and everyones happy!

olive oil
1 slice butter
2 kg leeks, washed, trimmed, white end chopped into chunks, green end finely diced

800 g cooked turkey, torn into big chunks
2 pints chicken stock or 2 pints vegetable stock
2 tablespoons plain flour
2 tablespoons creme fraiche or 2 tablespoons double cream
500 g puff pastry
12 chestnuts, roasted and peeled
2 sprigs fresh sage, leaves picked
1 egg, beaten

Steps:

  • Pre-heat the oven to 190°C/375°F/Gas 5.Put your bacon in a large pan on a medium heat and add the thyme leaves. Add a lug of olive oil and the butter and let it fry for a few minutes. Add all of the leeks and fry them for about 3 minutes so they are well coated in the butter.   • Spoon turkey mixture into pie dish (I add a little of the drained gravy just spooned gently over the top-but not too much).Lay the pastry on top and tuck the ends under. Gently score the pastry diagonally with a knife, then brush with beaten egg.
  • Bake for 35-40 minutes. Heat up the strained off gravy and serve with the pie ( I thicken it very slightly with a mixture of water and cornflour).
