- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the ground turkey, steak seasoning, corn flake crumbs, and maple syrup in a bowl until the mixture is thoroughly combined. Heat the canola oil in a skillet over medium-high heat, and scoop up about 1/4 cup of the turkey mixture. Form the mixture into a patty, and place into the hot skillet. Repeat with remaining turkey mixture. Pan fry the patties until browned on both sides, 5 to 8 minutes per side. Remove patties to a cooling rack to drain. Place the patties into a baking dish in a single layer.
- Bake in the preheated oven until the patties are no longer pink inside and an instant-read meat thermometer inserted into the center of a patty reads at least 160 degrees F (70 degrees C), 20 to 25 minutes.

- In a large bowl, combine the first 7 ingredients. Crumble turkey over mixture and mix well. Shape into twelve 3-in. patties., In a large cast-iron or other heavy skillet, cook patties in oil in batches over medium heat until meat is no longer pink, 3-5 minutes on each side. Drain on paper towels if necessary. Freeze option: Place patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to a resealable freezer container. To use, place patties on a baking sheet coated with cooking spray. Bake in a preheated 350° oven until heated through, 15 minutes on each side.

MOM'S TURKEY SAUSAGE PATTIES
A quick and easy recipe for classic tasty breakfast sausage patties. Great with pancakes and eggs. This recipe has a mild to moderate zing. Increase cayenne and black pepper if you like more of a punch. Thyme may be substituted for sage, or use both.

TURKEY AND SAGE SAUSAGE

- Combine the turkey, pork fatback, sage, garlic, chives, pepper, nutmeg, orange zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
- At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
- Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the milk and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
- Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
- Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Serve in split toasted buns with spicy brown mustard and grilled red onions.

- Preheat oven to 250°F.
- Cook onion in 1 tablespoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden brown, 6 to 8 minutes. Remove from heat.
- Meanwhile, stir together bread crumbs and milk in a large bowl and let stand 5 minutes.
- Add onion to crumbs (reserve skillet), then add turkey, nutmeg, cinnamon, cayenne, cloves, yolks, 2 teaspoon salt, and 1 teaspoon black pepper and combine well.
- Line a large baking sheet with parchment paper. Form 24 (2-inch-wide) patties (about 1/2 inch thick) with damp hands and arrange on sheet.
- Heat 1 tablespoon oil in skillet over medium heat until hot, then cook patties in batches, turning once, until browned and just cooked through, about 8 minutes per batch. Drain briefly on paper towels, then keep warm in a baking pan, loosely covered with foil, in oven. Wipe out skillet and add 1 tablespoon oil between batches.
HOMEMADE TURKEY SAUSAGE
These low-fat homemade turkey sausage patties are simple to prepare and can be refrigerated or frozen. Be sure to buy ground turkey with some fat in it, ideally 93 percent lean, because some fat is needed to achieve that rich sausage essence. Besides, even with that much fat, the meat qualifies as lean.

- Whisk together the fennel seed, sage, salt, pepper, thyme, garlic powder and allspice in a small bowl.
- Place the turkey in a medium bowl, then sprinkle the seasoning blend over it.
- Use your clean hands or 2 forks to gently work the seasoning into the meat, being careful not to overmix.
- It's OK if they are not absolutely evenly distributed throughout.
- Form the mixture into 8 (3 inch) patties. May be refrigerated to meld flavors or frozen for future use.
- Heat half the oil in a medium skillet over medium high heat. Once the oil shimmers, add half the patties; cook until nicely browned on the outside and cooked through, about 3 minutes per side.
- Transfer to a plate; repeat with the remaining oil and patties.

- Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
- To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
- Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. - Makes 4 servings. Stir together all ingredients except oil in a large bowl until combined well.
- Form 1/4 cups of sausage mixture into patties (3 inches in diameter; about 8 total) using moistened hands and arrange on a wax-paper-lined tray.
- Lightly brush a 12-inch nonstick skillet with oil and heat over moderate heat until hot but not smoking.
