- Prepare rigatoni according to directions on box. Remove sausage meat from casing, set aside. In hot skillet saute onions. Add pepper and crumbled sausage meat. Stir and cook over medium high heat for 5 minutes. Add garlic and red pepper flakes. Add chicken stock and bring to a simmer. Add florets and cover to steam. Once broccoli is tender add rigatoni to pan. Stir to coat. Serve.

Steps:
- Bring a large pot of lightly salted water to a boil. Place farfalle in pot and cook 8 to 10 minutes, until al dente; drain.
- Place sausage in a large skillet over medium heat and cook until evenly brown; set aside. Heat 1/4 cup oil in skillet. Stir in garlic and onion, and cook until tender. Mix in zucchini, squash, tomatoes, bell pepper and basil. Dissolve bouillon in the mixture. Season with red pepper. Stir in remaining oil. Continue cooking 10 minutes.
- Mix pasta, sausage and cheese into skillet. Continue cooking 5 minutes, or until heated through.

- Crumble sausage into a large nonstick skillet. Add the onion, green pepper and mushrooms. Cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. - Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.
- Add the broccoli, red pepper flakes, salt, and pepper and stir to combine.
- Add the pasta and chicken stock and bring to a boil. Cook for 10-12 minutes, stirring constantly, until the liquid is absorbed and the pasta is tender. Add the Parmesan and stir to incorporate.
- Divide the pasta between serving bowls and garnish with more Parmesan.

- In a large saute pan, heat the olive oil over medium-high heat. When the oil is hot, add the garlic and cook it, stirring, for about 1 minute or until it is golden brown. Take care not to let the garlic burn.
- Add the onions and cook the mixture for about 3 minutes, stirring occasionally, or until the onions are golden brown.
- Add the turkey sausage (sqeezing out of the casings), basil, and parsley. Break up the sausage, using a wooden spoon or long-handled fork, and cook the mixture for 2 to 3 minutes or until the sausage is browned.
- Add the beans, chicken stock, and butter, raise the heat to high, and bring the sauce to aboil. Reduce the heat slightly and simmer it briskly for 5 to 8 minutes or until it starts to thicken.
- Meanwhile, in a large pot filled with boiling salted water, cook the pasta for 4 minutes. Add the broccoli and cook it for another 3 to 4 minutes or until the pasta is al dente.
- Stir in 1/4 cup of the grated cheese and cook the sauce for about 3 minutes or until it thickens. Season it to taste with salt and pepper.
- Stir in 1/2 cup of the cheese. Let the mixture simmer 2 minutes before removing it from the heat.
- Drain the pasta well. Bring the sauce to a boil. Add the pasta and broccoli to the sauce and mix well.
- Serve the pasta with grated cheese passed on the side.

- Bring a large pan of water to the boil and cook the pasta until nearly al dente. Throw in the broccoli and cook for 2 mins more. Drain, saving 1-2 tbsp of the water.
- Heat the oil in a large frying pan and add the garlic, fennel seeds, if using, and chillies. When they start to colour a bit, add the sausage and cook until golden and cooked through. Tip in the pasta and broccoli with the reserved water and toss. Serve hot with the Parmesan shavings.

TURKEY SAUSAGE WITH BROCCOLI
I had to make something for a luncheon at work. I needed to feed a crowd and I was sooo busy that week that I needed something easy. So here it is. I did this in two days only because I didn't have enough time in one day. It is easy and quite delicious. This got great raves! It's a good party dish. Measurements might be a tad off. I'm the type of cook that just throws in.

Steps:
- Cut up onions and fry in olive oil till carmelized.
- As I said I did this the day before and put them in refrigerator.
- Just because of a time issue.
- If you make it all in one day carmelize onions and then put aside.
- Cut through the casing on the sausage and cut sausage into small pieces.
- Throw away casing.
- While olive oil is hot throw sausage in pan.
- Cut up your broccoli and throw in the pan.
- Add wine and 2 tablespoons of butter.
- About 15 minutes.
- While doing this boil your penne with some salt.
- I use Kosher salt.
- Once the penne is boiled and drained put in large pan.
- Then add broccoli, sausage and all your spices.
- Mix in the carmelized onions.
- Then add grated parmasean cheese.
- Mix well and have some on top.
- Bake for 15 minutes 350 oven.
- Everything is really cooked.
- You just want to heat it up.

- PREP. Prepare broccoli by trimming the stems off, and cutting into bite sized pieces. Mince the garlic. Grate the cheese into a measuring cup.
- Remove the turkey sausage from the casings. Pan-fry in a skillet on the stove top until cooked through, breaking it apart as it cooks. Pour in a collander and drain the grease off.
- In a large stock pot, bring water to a boil. Pour the rigatoni pasta in the pot, along with a good amount of salt. (Salt flavors the pasta AND the pasta water - which will be used later.) Add the broccoli and wait for it to continue to boil. Reduce heat to medium, making sure the water is bubbling (but not too much). Cook until the pasta is al dente.
- Remove the pan from the heat, and pour into a collander, making sure to reserve some of the pasta water. I usually set a bowl under the collander so I don't forget!
