3 tablespoons extra-virgin olive oil
1 small yellow onion, finely chopped
7 cloves garlic, minced
1/2 to 1 jalapeno, seeded and finely chopped
1/4 cup finely chopped celery (with leaves)
7 plum tomatoes (about 14 ounces), halved, seeds squeezed out, and diced
1/2 cup kalmata olives, roughly chopped
2 tablespoons capers
Freshly ground black pepper, to taste
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped parsley

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, jalapeno, and celery, season with pepper, and cook, stirring, until soft and fragrant, about 4 minutes. Add the tomatoes, olives, and capers and cook, stirring, until hot, about 2 minutes more.
  • Remove from the heat and stir in the lemon juice and parsley.

1/4 Dijon mustard
1 tablespoon pressed garlic
1 pound turkey tenders (99% fat-free)
1 1/2 cups chopped tomato
2/3 cup chopped orange segments
1/2 cup chopped red onion
3 tablespoons chopped fresh parsley
2 tablespoons orange juice
2 tablespoons drained capers

Steps:

  • Combine mustard and garlic in large bowl. Add turkey and turn to coat. Let stand approximately 45 minutes or less
  • Combine next 6 ingredients in medium bowl. Season to taste with salt and pepper.;(Can be prepared up to 2 hours ahead. Cover.)
  • Preheat oven to 450°F. Line baking sheet with foil. Transfer turkey to prepared baking sheet. Pat on all remaining mustard mixture. Bake until cooked through, about 20 minutes. Let stand 5 minutes. Cut into thin slices. Transfer to plates and top with tomato compote.

Four 8-ounce center-cut bluefish fillets, skin-on
2 tablespoon extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Make the compote. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, jalapeno, and celery, season with pepper, and cook, stirring, until soft and fragrant, about 4 minutes. Add the tomatoes, olives, and capers and cook, stirring, until hot, about 2 minutes more.
  • Remove from the heat and stir in the lemon juice and parsley. Set aside covered with foil to keep warm.
  • Place a rack 5 inches from the broiler element and preheat.
  • Prepare the fish. Using a sharp knife, slash the bluefish skin to form cross-hatch marks. Transfer the fillets to a foil-lined baking sheet and brush all over with the oil. Season with salt and generously with pepper. Broil the fish skin-side down, until just cooked through, about 5 minutes. (If the skin comes loose during cooking, you may remove and discard it.)
  • Using a metal spatula, transfer the fillets to 4 warmed plates and top with the compote. Serve immediately.

1 cup long-grain white rice
2 tablespoons olive oil
1 medium onion, halved lengthwise and thinly sliced
4 garlic cloves, slivered
Coarse salt and ground pepper
1 can (14 1/2 ounces) diced tomatoes, in juice
1/2 cup pitted Kalamata olives, slivered
2 tablespoons capers, drained and rinsed
4 red snapper fillets (6 to 8 ounces each), halved crosswise

Steps:

  • Preheat oven to 400 degrees. Cook rice according to package instructions; set aside, covered.
  • While rice is cooking, heat 1 tablespoon oil in a large skillet over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion begins to soften, 5 to 7 minutes. Add tomatoes and their juice, olives, and capers; cook, stirring occasionally, until slightly thickened, 3 to 5 minutes.
  • Meanwhile, place snapper fillets on a rimmed baking sheet. Drizzle with remaining tablespoon oil, and turn to coat. Arrange fillets in a single layer, skin side down. Season generously with salt and pepper.
  • Bake until fish flakes easily and is opaque throughout, 10 to 12 minutes. Serve with rice and tomato-olive compote.

Turkey burgers are known to be tasteless and boring - so here is my take on not-so boring burgers. I have combined a couple of recipes to come up with these! Mainly a Wolfgang Puck recipe with Martha Stewart's ideas & a whole selection of others! Inactive prep time 15 minutes. :(

4 ounces butter
3 garlic cloves, minced
1 teaspoon chopped onion
1 lb button mushroom, chopped fine in a food processor
1 lb portabella mushroom, cut into 1/4-inch pieces
1/4 cup chopped thyme
1/4 cup chopped oregano
1 bay leaf
salt
pepper
crushed red pepper flakes
3 tablespoons prepared mango chutney, finely chopped or 3 tablespoons roast peach chutney
2 lbs ground turkey (7%)
8 hamburger buns
romaine lettuce leaf
thinly sliced red onion
1 cup chopped tomato
1/4 cup minced red onion
1/4 cup minced cilantro
1/4 cup minced green onion
2 tablespoons minced jalapenos
1 tablespoon mango chutney or 1 tablespoon roast peach chutney
2 tablespoons vegetable oil
1/2 teaspoon salt
3 tablespoons lime juice

Steps:

  • MUSHROOM PUREE AND BURGERS:.
  • To a hot saute pan over medium high heat, add the olive oil and butter and melt.
  • Add garlic, onion, and bay leaf, and sweat for 1 minute.
  • Add the mushrooms, season with salt and pepper, and cook until liquid is released and mushrooms are almost dry.
  • Stir in the thyme and oregano; remove from the heat and allow to cool.
  • Remove the bay leaf.
  • Place the turkey in a large mixer and add the cooled mushroom mixture, mix well and season with salt and pepper.
  • Form the mixture into 8-ounce patties.
  • Pan fry or grill the burgers until cooked through.
  • Serve on a bun with romaine lettuce, sliced red onions and chunky tomato salsa compote.
  • CHUNKY TOMATO SALSA COMPOTE:.
  • In a small saucepan, combine all of the ingredients and bring to a boil.
  • Lower to a simmer and cook until most of the liquid has reduced.

1 package (17.6 ounces) turkey breast cutlets

1/2 cup chicken broth
3 tablespoons butter
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1 tablespoon capers, drained

Steps:

  • In a shallow bowl, combine the flour, salt and pepper. Add turkey slices, one at a time, and turn to coat., In a large skillet, cook turkey in oil in batches for 2-3 minutes on each side or until no longer pink. Remove to a serving platter and keep warm., Add broth to the pan, stirring to loosen browned bits. Bring to a boil; cook until liquid is reduced by half. This is one of my favorite main dishes and it is easy. It came from a friend and I make it often. My kids loved it. Occasionally I will add chopped mushrooms.

8 small red potatoes
3 medium tomatoes
1 small onion
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dried rosemary
1 (16 ounce) package turkey cutlets
2 tablespoons shortening
2 teaspoons capers

Steps:

  • In 3-quart saucepan over high heat, heat potatoes and enough water to cover to boiling. Reduce heat to low and cover and simmer 10-15 minutes until potatoes are fork tender. Drain and keep potatoes warm.
  • Meanwhile dice tomatoes, thinly slice onion; set aside.
  • On waxed paper, mix flour, salt, and rosemary. If turkey cutlets are large, cut them into desired serving size. Dip turkey cutlets into flour mixture to lightly coat.
  • In non-stick 12-inch skillet over medium-high heat, in hot melted shortening, cook turkey cutlets, a few at a time, about 5 minutes or until lightly browned and they lose their pink color throughout, removing pieces to plate as they brown.
  • Spoon off any fat in skillet. Stir in diced tomatoes, onion, and capers. Reduce heat to medium-low; cover and cook 10 minutes or until vegetables are tender. Return turkey cutlets to skillet; heat through.
  • To serve, arrange potatoes and turkey cutlets on 4 dinner plates. Spoon sauce over turkey.

1/4 cup good olive oil
1 bulb fennel (or 2 smaller ones), trimmed and chopped
Salt and pepper
1 teaspoon thyme leaves
1 tablespoon minced garlic
6 plum tomatoes, chopped (canned are fine, but drain excess liquid)
1/2 cup big, plump olives, green or black or a combination, preferably unpitted
1/4 cup capers, optional
4 servings cooked fish, optional
1/2 cup chopped parsley leaves, for garnish

Steps:

  • Put the oil in a skillet over medium heat. Add the fennel and some salt and pepper, and without browning (adjust the heat as necessary), cook it down, stirring occasionally, until it's quite soft, about 20 minutes. Add the thyme and garlic, and cook 1 minute, stirring.
  • Add the tomatoes, olives and capers, raise the heat a bit, and cook until the mixture is saucy, about 15 minutes. Serve as a side dish or top with a portion of cooked fish. Garnish with parsley.
