This simple 15 minute chicken and polenta with broccoli looks fancy but can't be easier to make (and you squeeze in those veggies too!)

2 large boneless (skinless chicken breasts sliced half through their thickness to make 4 thinner portions)
1 tablespoon Italian seasoning
1/2 teaspoon salt and 1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon butter
1 tablespoon olive oil
1 18- ounce roll pre-made polenta
3/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon red pepper flakes (optional)
1/3 cup grated parmesan cheese
1 bag steamable broccoli florets

Steps:

  • Start by cooking the chicken:
  • Mix the Italian seasoning, salt, pepper and garlic powder together and sprinkle evenly over both sides of the chicken.
  • Heat a nonstick skillet over medium high heat and add the butter and oil. When the butter has melted and the skillet is hot, add the chicken and sauté until golden brown--about 5-6 minutes per side. Transfer to a plate and cover with foil.
  • Add the polenta to a medium saucepan, breaking it up with your fingers as you add it. It's okay if there are lumps, they will cook out.
  • Add the chicken broth, salt, and red pepper flakes if you are using them and stir well.
  • Bring to a simmer and mash out any lumps, stirring often until the polenta is smooth--about 6 minutes or so. Add the cheese and stir to combine. Turn off the heat and set aside.
  • Steam the broccoli according the package directions, drain.
  • Serve by laying 1/2 cup of polenta on a plate, add broccoli and top with sliced chicken. Serve warm.

4 skinless, boneless chicken breasts (about 8 ounces each)
1/4 cup extra-virgin olive oil
2 cloves garlic, smashed
1 teaspoon minced fresh rosemary
Pinch of red pepper flakes
Kosher salt and freshly ground pepper
1/3 cup dry white wine
1 cup low-sodium chicken broth
1 cup quick-cooking polenta
1/3 cup grated parmesan cheese
1 tablespoon unsalted butter
4 cups baby arugula (about 3 ounces)

Steps:

  • Invert a large cast-iron skillet and wrap the bottom with foil; set aside. Toss the chicken with 1 tablespoon olive oil, the garlic, rosemary, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Let stand 10 minutes.
  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the chicken and top with the foil-wrapped skillet. Cook until browned on the bottom, 6 to 8 minutes, then flip. Carefully rewrap the skillet with a clean sheet of foil; top the chicken with the skillet. Cook until the chicken is cooked through, about 7 more minutes. Transfer to a cutting board and let rest 5 minutes, then slice.
  • Meanwhile, pour the wine into the same nonstick skillet and simmer over medium heat until reduced by three-quarters, 1 to 2 minutes. Add the chicken broth and simmer until reduced to about 1/2 cup, about 3 more minutes.
  • Bring 4 cups salted water to a boil in a medium saucepan. Whisk in the polenta. Cook, whisking, until tender, about 5 minutes. Remove from the heat and stir in the cheese and butter until smooth. Season with salt and pepper.
  • Toss the arugula with the remaining 1 tablespoon olive oil. Divide the polenta among plates. Top with the chicken, pan sauce and arugula.

I started with a recipe for Chicken Cacciatore and made several modifications to include polenta and cannellini beans - both hot trends in Italian cooking. The juicy chicken thighs simmer in a tomato sauce, and are then spooned over creamy polenta for a robust and flavorful meal.

6 slices bacon
12 skinless chicken thighs, bone-in (about 1.5 lbs)
salt and pepper
1 tablespoon all-purpose flour, for dusting
1 tablespoon olive oil
1 large onion, chopped
3 garlic cloves, minced
2 (14 ounce) cans crushed tomatoes
2 teaspoons oregano
1/2 cup dry red wine
1/2 cup chopped fresh parsley
1/2 cup kalamata olive, pitted and sliced
1 (14 ounce) can cannellini beans, drained
3 1/2 cups water
1/2 teaspoon salt
3/4 cup cornmeal
1/2 cup grated imported parmesan cheese
fresh parsley, for garnish

Steps:

  • Instructions: Brown bacon in large deep pan. Remove bacon, leaving 1-2 T. drippings in pan.
  • Dust chicken pieces with flour, salt and pepper. Brown chicken pieces 4 minutes each side in bacon fat; remove to platter when browned both sides.
  • Make sauce: Heat oil, add chopped onion; sauté over low heat 6-8 minutes. Add garlic, sauté 2 more minutes.
  • Add all other sauce ingredients and mix. Add bacon and browned chicken pieces; gently simmer 30 minutes.
  • Add drained beans and simmer 10 more minutes. During this last 10 minutes, make polenta.
  • Polenta: combine water and salt in a large glass microwave-safe bowl; whisk in cornmeal. Cover and microwave on HIGH 4 minutes; stir. Uncover and microwave 2 minutes; stir. Microwave 2 more minutes; stir in Parmesan cheese; sprinkle with parsley.
  • To serve, spoon polenta in a bowl, then top with chicken and plenty of the chunky sauce. Garnish with parsley.

An easy baked chicken dish that can be modified all sorts of ways! I made this for dinner last night and liked it so much I wrote it down for later use.

Number Of Ingredients 13

1 lb prepared polenta
3 -4 pieces boneless skinless chicken breasts
1 (10 ounce) can cream of chicken soup (you can used the 98% fat free version, I used regular)
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can whole kernel corn
5 -6 ounces canned mushrooms (optional)
1/2 cup half-and-half
shredded four-cheese Mexican blend cheese
poultry seasoning (to taste)
garlic powder (to taste)
1 dash salt
1 dash pepper
1 dash paprika

Steps:

  • Preheat oven to 350 degrees.
  • Slice polenta into 1/2 inch thick slices and line the bottom of your casserole dish/pyrex dish with the slices. Set aside.
  • Cut excess fat off of the chicken and coat with chicken seasoning.
  • Place the chicken on top of the polenta slices.
  • Pour the canned corn over the chicken and spread evenly in the dish.
  • Add mushrooms or other veggies (broccoli florets or peas may be interesting) and spread evenly.
  • Pour the cream of mushroom and cream of chicken soup into a large bowl and add water as directed on the can. Mix and pour over the chicken, add the half and half.
  • Add some garlic powder on top of the mixture, as well as the salt & pepper and paprika for some color and a little bit of kick.
  • Put the dish in the oven and set your timer for 45 minutes.
  • Once the 45 minutes has elapsed, pull the dish out of the oven (be careful, it's hot and liquidy).
  • Grab several handfuls of cheese and sprinkle over the chicken.
  • Return the dish to the oven for another 15 minutes or until the cheese is melted.
