TUSCAN CHICKEN AND SAUSAGE WITH PASTA RECIPE

When its time for dinner try my Tuscan Chicken and Sausage with Pasta Recipe. It will be like bringing your favorite Italian restaurant into your own kitchen. You'll how easy it is to make and how much money you'll save making this restaurant-style dish at home.

8 oz chicken tenders
1 cup sliced mushrooms
¼ cup roasted red peppers- sliced
4 oz sweet Italian sausage
6 oz sweet marsala
6 oz chicken stock
2 tbsp unsalted butter
2 tbsp flour
2 tbsp grated romano cheese
1 tbsp fresh chopped basil
½ lb linguine or spaghetti

Steps:

  • Cook pasta per instructions on the box at the same time you begin cooking this dish.
  • Dredge chicken tenders in flour seasoned with salt and pepper
  • place floured tenders in a large saute pan with enough olive oil to saute them.
  • Cook chicken 3-4 minutes on one side and turn them over
  • Add the raw sliced sweet sausage, sliced mushrooms and roasted red peppers to the pan. Continue cooking the mixture for about 5 minutes turning the chicken after it has been browned on the other side.
  • Add all but 2 ounces of the marsala wine to the hot pan. This is called deglazing and will loosen all of the delicious bits stuck to the pan allowing them to add flavor to the dish.*The alcohol will cook off in about a minute.
  • Add the chicken stock, and a pinch of black pepper (season to taste).
  • Reduce the heat to medium and continue to cook while sauce is reducing.
  • Take the butter and coat it in flour pressing flour into the butter and add to the sauce (this is called a beurre manie) it will thicken the sauce and the butter will impart a rich flavor
  • As the sauce begins to thicken lower heat to simmer, and add remaining marsala and grated cheese
  • Serve over pasta, garnish with fresh chopped basil, additional grated cheese and enjoy!

¾ pound Italian chicken sausage links, casings removed and sausages cut into 1/4-inch pieces
1 onion, chopped
1 yellow squash, sliced
2 cloves garlic, pressed
1 (32 ounce) carton chicken broth
2 (15 ounce) cans white beans, drained and rinsed
1 (15 ounce) can Italian-style diced tomatoes
2 cups baby spinach leaves
⅓ cup red wine
1 teaspoon Italian seasoning
3 tablespoons grated Pecorino-Romano cheese

Steps:

  • Cook sausage in a large pot over medium-high heat until cooked through and completely browned, 5 to 7 minutes. Drain and discard grease.
  • Cook and stir onion with the sausage until translucent, about 5 minutes. Add squash and garlic; cook and stir until the garlic is fragrant, about 1 minute more.
  • Pour chicken broth, white beans, and diced tomatoes into the pot; stir. Add spinach, red wine, and Italian seasoning; bring the mixture to a simmer and cook until hot, about 15 minutes. Ladle soup into bowls and garnish with Pecorino-Romano cheese to serve.

1 green pepper, chopped
1/2 small onion, sliced, separated into rings
1/4 cup roasted red pepper strips
3 cloves garlic, minced
1/2 cup KRAFT Tuscan House Italian Dressing
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 400ºF.
  • Sprinkle chicken with black pepper; place in 13x9-inch baking dish sprayed with cooking spray.
  • Combine all remaining ingredients except cheese; spoon over and around chicken. Sprinkle with cheese.
  • Bake 30 min. Reduce oven temperature to 350ºF. Bake 15 min. or until chicken is done (165ºF).

1 lb boneless skinless chicken thighs
1 lb chicken sausage or 1 lb turkey sausage
2 teaspoons olive oil
1/2 cup white wine
1 (9 ounce) package frozen artichoke hearts
1 medium onion, cut in wedges and separated
1 red bell pepper, cut in 1 1/2-inch squares
1 yellow bell pepper, cut in 1 1/2-inch squares
1 lb cremini mushroom, cleaned and quartered
1 teaspoon dried thyme
1 teaspoon dried rosemary
kosher salt, to taste
fresh ground black pepper, to taste
1 (15 ounce) can low sodium chicken broth

Steps:

  • Cut the chicken into 1½" cubes. Cut the sausage into similarly-sized pieces.
  • In a skillet, heat the olive oil over medium-high heat until it shimmers. Working in batches, brown the chicken and sausage in the olive oil. Transfer to a crockpot as they are finished.
  • Pour the wine into the skillet to deglaze, scraping up any browned bits on the bottom of the pan, then add to crockpot.
  • Add the artichoke hearts, the onion, the peppers and the mushrooms to the crockpot. Add the herbs, and salt and pepper to taste. Add the chicken broth. Cover tightly and cook on low 8-10 hrs or high 3-4 hours.

4 bone-in, skin-on chicken thighs
2 teaspoons salt, for the chicken
1 teaspoon pepper, for the chicken
1 tablespoon oil
3 cloves garlic, chopped
½ onion, diced
1 tomato, diced
2 cups spinach
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan cheese
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Season the chicken all over with salt and pepper.
  • Heat the oil in a skillet over medium-low heat.
  • Place the chicken thighs skin side down in the skillet and cook for about 13 minutes to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
  • Flip the chicken, then cook for about another 15 minutes, until the chicken is cooked through. Remove from pan.
  • Add the garlic and onion, stirring until onions are translucent. Stir in the tomatoes and spinach until the spinach is wilted.
  • Add the heavy cream, salt, and pepper, bringing to a boil.
  • Add the Parmesan cheese and parsley, stirring until the sauce has thickened slightly.
  • Place the chicken back in the pan, spooning the sauce on top of the chicken.

Steps:

  • Preheat oven 350°.
  • In a 9x13-inch pan, place oil.

3 tablespoons olive oil, divided
6 bone-in chicken thighs (about 2 pounds)

1 large sweet red pepper, cut into 1-inch pieces
