2 tablespoons extra-virgin olive oil
8 cups uncut baby spinach, raw
2 tablespoons minced garlic
1/3 cup chicken broth
2 teaspoons sea salt
2 teaspoons freshly ground black pepper
2 teaspoons grated Parmesan

Steps:

Heat olive oil in medium stock pot, when hot add spinach and chopped garlic. Cook until fully wilted, then add chicken broth and reduce. Season with salt and pepper.
Garnish with the Parmesan and serve immediately.

2 cup(s) low-fat 1% cottage cheese
1 1/2 cup(s) grated fat free chedder cheese
3 large eggs
1/4 cup(s) flour
4 tablespoon(s) (1/4 cup) light,soft tub margarine, melted

Steps:

Mix togeher all ingredients.
Pour into a slow cooker
Cook on High for 1 hour, Reduce heat to Low and cook 4 more hours.

Stir in cottage cheese and soup mix.
Cook over low heat stirring occasionally until mixture is hot.
