- Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 7 minutes. Remove from the oven and remove foil; set aside. Reduce heat to 350°. , In a large skillet, cook sausage until no longer pink; drain well on paper towels. Place cottage cheese and egg in a blender; cover and process until smooth. Transfer to a large bowl; stir in potatoes, sour cream, oregano, salt and pepper., Place sausage in pastry shell; top with potato mixture. Drizzle with butter. Bake for 50-60 minutes or until a thermometer reads 160°. Sprinkle with cheese; let stand until melted. Garnish with tomatoes tossed with minced parsley if desired.

- Preheat oven to 375 degrees F. Stir 1/2 cup of the cheese into the potatoes; set mixture aside.
- In a large skillet, cook ground beef, sausage, and onion until meat is brown and onion is tender. Drain off fat. Stir zucchini or yellow summer squash, undrained tomatoes, tomato paste, and pepper into meat mixture in skillet. Bring to boiling.
- Divide meat mixture evenly among six 10-ounce individual casserole dishes. Spoon mashed potato mixture into mounds on top of hot meat mixture in casseroles. Sprinkle with remaining 1/4 cup cheese. If desired, sprinkle with paprika. Cover with plastic wrap; chill for at least 4 hours or up to 48 hours.
- To serve, preheat oven to 375 degrees F. Remove plastic wrap; place casseroles in a 15x10x1-inch baking pan. Cover with foil. Bake for 35 minutes. Remove foil. Bake, uncovered, for 5 minutes more. Let stand for 5 minutes before serving.

- Peel and cut potatoes into ½" pieces, place in a saucepan with enough water to cover potatoes and 1 tablespoon kosher salt. Cover and place on high heat and allow to boil.
- While potatoes are cooking, place a large skillet over medium high heat with olive oil in it. Add chicken and stir. Grate onion and add to pan. Stir to combine. Using a garlic press, mince garlic and add to pan. Add 1 teaspoon salt and ½ teaspoon pepper, stir to combine.
- Preheat oven to broil.
- Meanwhile, in a small saucepan over medium heat whisk 2 Tbsp butter and flour and allow to cook for 3 minutes. Add chicken broth and poultry seasoning. Whisk to combine and cook for 2-3 minutes until thickened.
- Add corn and beans to chicken mixture, pour gravy on top. Stir to combine.
- Drain potatoes, add 2 Tbsp butter, cream cheese, sour cream, ¼ cup milk, 1 teaspoon kosher salt and ½ teaspoon fresh ground pepper to pan and pour potatoes on top. Mash and combine with potato masher. Add ½ of cheese, stir to combine.
- Spread mashed potatoes over top of the chicken mixture. Spread evenly to edges of pan. Sprinkle remaining cheese over top. Place pan in oven under broiler until cheese is golden brown and bubbly. 1-3 minutes. Keep a close eye on cheese.
- Remove from oven, sprinkle with parsley, serve and enjoy.

- Heat oven to 375°F. Spray 2-quart casserole or 11x7-inch glass baking dish with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add beef, onion and carrots to skillet; sprinkle with seasoned salt and pepper. Cook 3 to 5 minutes, stirring frequently, until beef is brown.

MEXICAN SHEPHERD'S PIE
This is a Mexican version of the Shepherd's Pie that is so popular in the UK. I decided to try this one night when I did not have any mashed potatoes. Its cheap, quick and easy...and my kids loved it! Serve with a tossed green salad for a great family meal!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13 inch baking dish with cooking spray.
- Place the beef and onion in a skillet over medium heat. Cook until beef is evenly brown and onion is tender. Drain grease. Season with garlic powder, salt, and pepper. This is a recipe my Irish aunt gave me. Her husband is Italian, and she developed this recipe to blend things they both like. It is a variation of Shepherd's Pie. For richer flavor, substitute beef broth for water in gravy.

- Grease a 2-quart casserole dish.

- Peel the potatoes and put in a large pan with water along with the sausages. Cook until the potatoes are tender enough to be mashed.
- Drain and mash the potatoes. Set aside. Chop the sausages and set aside.
- In a large pan, add the butter, ½ grated onion, mashed potatoes, and milk. Mix until it becomes a puree. Season with salt and pepper. Set aside.
- In a large pan, put the oil, chopped onion, green chilli and mix until the onion is transparent.
- Add the chopped sausage, tomatoes, and salt. Cook until the tomatoes are soft and become a sauce. Sprinkle in the parsley and green onions. Mix gently. Set aside.
- Preheat the oven to 200ºC (400ºF).
- In a large, oven-safe casserole dish, smooth a layer of half the potato puree, a layer sausage sauce, mozzarella, then the remaining potato puree.
- Sprinkle the top with parmesan cheese and chopped parsley.
- Bake for 35 minutes or until the cheese is melted and the top layer is turning it is golden.

ITALIAN SHEPHERD'S PIE
While not traditional, I really like this version of Shepherd's Pie. Ketchup or HP sauce are excellent condiments for this recipe. You can substitute pretty much any veggie you like for the green pepper - peas and corn are my personal favorites - 1 cup would probably be enough.

- Brown ground beef in large frying pan, drain grease.
- Add 1 Tbsp oil to pan, return beef to pan, add onion, garlic, Italian seasoning and dried red pepper flakes.
- Fry until onion is softened.
- Stir in drained tomatoes, Worcestershire sauce, 1 tsp each salt and sugar and 1/2 tsp pepper.
- Break up tomatoes with a fork.
- Cook over medium heat, stirring often for about 15 minutes, or until most of liquid has evaporated.
- Meanwhile cook potatoes in boiling water until tender, about 15 minutes.
- Drain potatoes.
- Add butter, milk, nutmeg, salt and pepper.
- Beat potatoes on medium speed of electric mixer until light and fluffy.
- Then beat in egg.
- Fold in 1/4 cup Parmesan.
- Meanwhile seed, core green pepper and cut into 1/4 inch pieces.
- Stir into cooked meat mixture.
- Turn into a 9" square baking dish.
- Spread potato mixture evenly on top of meat mixture.
- Sprinkle with remaining Parmesan.
- Bake right away, or cover tightly and refrigerate for up to 2 days before baking.
- Bake in the center of preheated 350 F oven for 40 to 50 minutes or until potatoes are golden tipped.
- If casserole has been refrigerated it may require an extra 15 minutes baking time.
- Let stand for 10 minutes before cutting.

- In deep frying pan, sauté ground beef and onion until done. Drain grease.
- Add rest of ingredients except last 4 (mashed potatoes, parmesan cheese, egg and paprika.).
- *Best to fold in the green beans lastly, too, so they don't get all broken up.
- Mix well, and bring to a boil.
- Cook and fold/stir for 2-3 minutes.(Be careful not to wreck the green beans.).
- Pour into lightly greased baking dish, shallow or deep, it doesn't really matter so long as it all fits.
- Stir beaten egg and parmesan cheese into prepared mashed potatoes. *Make sure potatoes are cool enough, though, so when you mix in the egg you don't end up with scrambled egg pieces, and stir in quickly.
- Top pie/casserole with mashed potato concoction.
- You can spread it on, or do dollops, or even pipe it on with a pastry bag and tip to make it pretty.
- Sprinkle tops of potatoes with a little paprika for color.
- Bake, uncovered, in 350 oven for for about 40 minutes until bubbly and potatoes are just lightly browned on the tops.
