1 (13 1/2-ounce) bag store-bought large tortilla chips
1 cup refried beans
3/4 cup shredded Monterey Jack cheese
3/4 cup shredded cheddar cheese
1/2 cup chopped pickled jalapeno chiles
1 jalapeno chile, seeded, ribs removed, and minced
1/2 cup canned sliced black olives
Fresh cilantro leaves
Chili sauce or hot-pepper sauce
Chopped tomatoes, for serving (optional)
Sour cream, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Top each chip with about 1 teaspoon beans and 1 1/2 teaspoons cheese; evenly divide chiles and olives among tortilla chips. Transfer to an ovenproof serving platter, forming layers; add chili sauce.
  • Bake until heated through and cheese melts, 3 to 5 minutes. Remove, and garnish with cilantro leaves. Serve immediately topped with tomatoes and sour cream, if desired.

4 tablespoons ground beef
3 tablespoons taco seasoning
1 pinch cumin
2 teaspoons green onions, chopped
2 teaspoons red bell peppers, chopped
2 jalapenos, chopped
1/4 cup water
1/4 cup Simply Potatoes® Shredded Hash Browns

Steps:

  • Cook red bell peppers on medium heat in olive oil until tender. Remove and set aside. Cook ground beef until browned. After browned, add cumin and taco seasoning, green onions, jalapenos, red bell peppers and water and cook on low heat for 3 minutes. Deep fry simply potatoes hash browns until crispy. Remove and set aside. Add con queso cheese and continue cooking on low heat while stirring continuously. Add fried hash browns and stir for two minutes. Remove from heat. Serve as dip.

1 lb ground beef or 1 lb ground turkey
1 (15 ounce) can diced tomatoes
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
1 (4 ounce) can diced olives
4 cups packaged shredded Mexican blend cheese
1 package taco seasoning
1 cup sour cream
1 cup guacamole

Steps:

  • Brown beef (or turkey) in a large skillet.
  • Drain fat from skillet and add taco seasoning, diced tomatoes, kidney beans and black beans.
  • Simmer combined ingredients for 10 minutes, or until flavors are blended.
  • Empty contents of skillet onto a large serving tray, top with cheese, diced olives, guacamole and sour cream.
  • Serve warm with tortilla chips.
