- Preheat the oven to 350 degrees F (175 degrees C).
- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
- Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
- Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
- Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix beef, stewed tomatoes, saltine crackers, onion, bell pepper, egg, and taco seasoning together in a bowl until thoroughly combined. Transfer 1/2 the mixture to a 9x13-inch pan. Place pepper Jack cheese slices down the middle. Top with remaining meat mixture to seal cheese in between. Top with BBQ sauce.

UNBEATABLE TACO MEATLOAF
I was disappointed with the lack of flavor of other Mexican meatloaves so I created this one. The secret to this moist loaf is the white bread although it may seem out of place. Its a little work but your tastebuds will thank you!

Steps:
- Move oven rack to top insert and broil poblano 4-5 minutes on each side until skin is blistered and mostly black. Remove and place in an airtight container for 20 minutes. Gently remove blistered skin and dice poblano.
- Dice onions, green pepper and jalapeño. Sautee in a bit of oil until onion is almost translucent. Allow to cool completely.
- Dice black olives and green onions.
- In a large bowl, combine the ground beef, 1/2 onion/jalapeño/green pepper mixture, 1/2 of the poblano, 1/2 green onions, and 1/2 cup Black olives, 1/2 cup Crushed Doritos, finely diced white bread slice, 2 tablespoons of taco sauce, whole packet of taco seasoning, 1/4 cup Half and half, and 1 egg and egg white.
- Shape into 4 small meatloaves and place on baking sheet. Bake at 350 degrees until loaves reach 160 degrees.
- Cut Velveeta into small cubes and add can of Rotel. Add in the remaining poblano, onions/jalepeno,and 4 tablespoons of salsa and cook over medium heat in saucepan until combined and melted stirring frequently. Serve over meatloaf. Sprinkle remaining green onions over loaves.

- Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. BETTER THAN MOM'S MEATLOAF
My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
- Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.
- Combine remaining ketchup with balsamic vinegar and remaining 1 teaspoon Worcestershire in a small bowl. Mix until well combined and spread over the top of the meatloaf.

I like meatloaf, my DH likes tacos. We both LOVED this recipe! Found in TOH "Comfort Foods Book **Updated to add -- I have done a few revisions on this recipe to include a different pan size for the "boil over" issue. I have also found that if turkey and beef are combined it is a bit drier, you can use all turkey or all beef it is really up to you.

I found this recipe in the "Cooking with Paula Deen" magazine and prepared it for my family. It is the hands down the best meatloaf I've ever had and my family was very pleased. Give this one a try and I think you'll agree. When you do, share your thoughts. One thing I learned about preparing meatloaf; when mixing and forming it, don't manhandle it. Over handling and squeezing the ingredients into the meat to blend cause the meatloaf to be tough; handle with care and you'll be rewarded with a wonderful meal.

- Preheat oven to 350 degrees.
- Place a wire rack on a foil-covered bakiing sheet.
- In a large bowl, gently combine beef, crushed chips, zucchine, onion, beans, egg, fajita seasoning and salt.
- Form mixture into a loaf and place on a prepared wired-rack.
- Bake 40 minutes.
- Top with cheese and salsa.
- Bake for an additional 20 minutes or until a meat thermometer inserted in meatloaf registers 165 degrees.
- Note: Meatloaf can also be baked on the rack of an aluminum foil-lined broiler pan. I covered my wire rack with foil and cut slits in it randomly so fat could drain off onto the baking sheet preventing the meatloaf from soaking in fat as it cooks.

- Preheat oven to 350 F and line a baking sheet with parchment paper.
- Add the beef, bread crumbs, 1/2 cup enchilada sauce, taco seasoning, bell pepper, jalapeño, onion, and egg to a large bowl. Mix to combine.
- Transfer the mixture to the prepared baking sheet and shape into an 8x4 inch loaf. Bake for 1 hour.
- Remove the meatloaf from the oven. Brush all over with remaining 1/4 cup enchilada sauce. Top with the shredded cheese.
- Bake for 15 minutes, or until cheese is melted.
- Transfer to a serving platter and top sliced jalapenos and cilantro.
