Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat a large skillet over medium-high heat and stir in the ground beef and Italian sausage. Cook and stir until the meat is crumbly, evenly browned, and no longer pink; drain. Stir in the spaghetti sauce, pizza sauce, and pepperoni, and heat until bubbly. Transfer the mixture to an 11x13 inch baking dish.

1 yellow onion, thinly sliced
1 green bell pepper, seeded and thinly sliced into rings
nonstick cooking spray, for greasing
½ cup pepperoni, sliced
¾ cup grated parmesan cheese
¾ cup shredded mozzarella cheese
7 slices provolone cheese
2 cups pizza sauce
all-purpose flour, for dusting
1 lb pizza dough

Steps:

  • Preheat the oven to 400°F (200°C).
  • Heat 1 tablespoon of olive oil in a 12-inch (30 cm) cast-iron skillet over medium-high heat. Once the pan is hot, add the onion and cook until softened, about 4 minutes. Remove from the pan and set aside.
  • Add the green pepper and cook until softened, about 5 minutes. Remove from the pan and set aside.
  • Turn off the heat. Grease the pan with nonstick spray.
  • Arrange the pepperoni in an even layer on the bottom of the pan. Top with the green peppers, onions, Parmesan, and mozzarella. Arrange the provolone slices over the shredded cheese in an even layer. Top with the pizza sauce and spread evenly.
  • On a lightly floured surface, roll out the pizza dough to a 12-inch (30 cm) round. Gently lay the pizza dough over the pizza sauce, making sure the dough reaches to the edges all around. Brush the dough with the remaining tablespoon of olive oil.

2 tablespoons olive oil (divided)
4 ounces sliced mushrooms
¼ cup sliced green peppers
¼ cup halved cherry tomatoes

½ teaspoon dried oregano
½ teaspoon crushed red pepper (plus more for serving)
¼ teaspoon salt
1 cup shredded low-moisture mozzarella
½ cup pizza sauce
Fresh basil (for serving)
Grated parmesan (for serving)

Steps:

  • Allow store-bought dough to rise at room temperature for 20 minutes. Preheat oven to 400°F.
  • Brush 1 tablespoon olive oil on the cast iron skillet. Layer the ingredients in the cast iron skillet, starting with the mushrooms, then green peppers, followed by tomatoes and onions. Season with oregano, crushed red pepper and salt.

1 packet (2 1/4 teaspoons) active dry yeast
18 ounces all-purpose flour (about 3 1/2 cups)
2 teaspoons fine sea salt
1/8 teaspoon cream of tartar
1/2 cup plus 3 tablespoons corn oil, plus additional for oiling the bowl
1 tablespoon melted unsalted butter
12 ounces deli sliced part skim mozzarella
1 pound bulk Italian sausage
8 ounces thinly sliced pepperoni
One 28-ounce can whole San Marzano tomatoes, crushed by hand
Grated Parmesan, for topping and garnish

Steps:

  • Mix sugar, yeast and 11 ounces room temperature water (about 80 degrees) in a bowl and let bloom for 15 minutes. Combine flour, salt and cream of tartar in the bowl of a stand mixer. Once yeast has bloomed, add to dry ingredients along with corn oil. Gently combine with a rubber spatula until a rough ball is formed.
  • Knead on low speed with the dough hook for 90 seconds. Transfer to a lightly oiled bowl and proof until doubled in size, about 6 hours. Punch down and let dough settle for 15 more minutes.
  • Position an oven rack in the middle of the oven and preheat to 450 degrees F.
  • Coat bottom and sides of a 12-inch cake pan or traditional Chicago style pizza pan with melted butter. Using your hands, spread out about three-quarters of the dough across the bottom and up the sides of the pan (save the remainder for another use). Cover entire bottom in mozzarella, all the way up to the edge. Cover half with a thin, even layer of raw sausage. Cover the other half with the pepperoni. 3 tablespoons fine yellow cornmeal
2 teaspoons kosher salt
2 1/2 teaspoons instant yeast
2 tablespoons extra-virgin olive oil, plus more for the bowl

2 tablespoons vegetable oil
1 cup plus 2 tablespoons warm water (100 degrees F to 110 degrees F)
3 tablespoons extra-virgin olive oil, plus more for the pans
2 cloves garlic, grated
1/2 teaspoon red pepper flakes
1 28-ounce can tomato puree (preferably San Marzano)
1 teaspoon dried oregano Kosher salt
3 8-ounce packages low-moisture whole-milk mozzarella cheese, thinly sliced
Finely grated parmesan cheese, for topping (optional)

Steps:

  • Make the dough: Combine the flour, cornmeal, salt, yeast, olive oil, melted butter, vegetable oil and warm water in the bowl of a stand mixer fitted with the dough hook. Mix on medium speed until the dough comes together and pulls away from the side of the bowl but still sticks to the bottom, about 3 minutes. Reduce the mixer speed to low and knead 5 minutes.   • Meanwhile, make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is slightly softened, about 1 minute. Add the tomato puree and 1 cup water. Stir in the oregano and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until slightly thickened, about 8 minutes.
  • Preheat the oven to 425 degrees F. Generously brush two 9 1/2-inch round deep-dish pizza pans (or 9-inch cake pans) with about 3 tablespoons olive oil each. Divide the dough in half; press each half into the bottom of a pan. Let the dough rest, 15 minutes. Push the dough down and press it up the sides of the pans with your fingers. Layer the cheese on top of each crust and spread each with 1 1/2 cups sauce.

1 (4 ounce) can sliced mushrooms, drained

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
