The tattered recipe in my files is a good indication of how popular these doughnuts have been in our family over the years. They disappear in a hurry, so I typically double the recipe.

- In a large bowl, dissolve yeast in warm water. Add milk, butter, sugar, salt and egg and 2 cups flour. Beat until smooth. Stir in enough flour to form a soft dough. , Do not knead. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; roll into a 12x8-in. rectangle. Cut into 3x1-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , In an electric skillet or deep-fat fryer, heat oil to 400°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine glaze ingredients. Dip tops in glaze while warm.

VANILLA CREAM LONG JOHNS
Long John donuts filled with a homemade vanilla cream mixture and glazed in chocolate and maple glazes.

- 1) For filling, whisk eggs with sugar in a medium bowl until they are nice and light. Then whisk in flour and cornstarch. In a medium sauce pan, combine milk, cream, and vanilla bean (scraped). Heat over medium-low heat until it's just simmering.
- 2) Carefully whisk hot milk mixture into egg mixture, working with a bit of liquid at a time to slowly bring up temperature of eggs. Once both mixtures are combined, stir in extract and return everything to sauce pan.
- 3) Cook over low heat, stirring constantly, until mixture thickens, about 2-3 minutes. You can store this in the fridge for a few days. Place plastic wrap right on top of filling so a film doesn't form.
- 4) To make donuts, combine milk and water in a mixing bowl. Add yeast and let sit for 5 minutes until yeast foams.
- 5) Add all other ingredients, flour last, and mix with a dough hook until dough forms a soft, but not sticky ball. If it's sticking to the bowl, add more flour. If you don't have a mixer, you can just use a wooden spoon.
- 6) Dust dough with flour and let rise for 2 hours or until it doubles in size.
- 7) Roll out dough on lightly floured surface into a 12×18 rectangle. Slice into 12 even rectangle pieces. Let pieces rise for 15 minutes or so.
- 8) Fry donuts at 350 degrees for 2-3 minutes per side. You'll have to flip them because they float. Remove donuts to drain on a paper towel or on a wire rack.
- 9) For glazes, mix liquids in a saucepan over low heat until hot. If you're using chocolate, melt it in pan. Then whisk in powdered sugar until glaze is thick, but pourable.
- 10) To fill donuts, use a long narrow knife to hollow out a cavity. Then pipe in filling using a pastry bag. It's helps to have a helper for this part.
- 11) Dip donuts in glaze after they are filled (or you can skip the filling). Let glaze harden for a few minutes. Eat as soon as possible!
HOLLAND CREAM (WHITE CREAM FILLING)
This is the white cream filling used in Smear Faces, Cream Horns, etc. I have looked forever for the Holland cream recipe for donuts. I have never had any luck. I have worked on this recipe for a long time. I use this in my donuts at my cake shop.

- In a saucepan over medium heat, stir the white sugar and water until the sugar has dissolved and the mixture is boiling. Remove from heat, and let cool completely. Pour the syrup into a large mixing bowl, and beat in vegetable oil, shortening, and clear vanilla extract with an electric mixer on high speed to blend.
- Beat in the confectioners' sugar, 1 cup at a time, until the filling is thick and fluffy. If it's too thick, beat in a tablespoon of water at a time until it's the correct consistency.

- In a small bowl, dissolve the yeast in 1/2 cup lukewarm water. Set aside until bubbly, about 10 minutes. In a large bowl, dissolve shortening in 1 cup of boiling water. Cool to lukewarm.
- Mix the evaporated milk, eggs, nutmeg, sugar and salt into the shortening and water. Stir in the yeast mixture and one cup of the flour until well blended. Gradually mix in remaining flour 1 cup at a time until dough is firm enough to remove from the bowl. Knead for about 5 minutes on a lightly floured surface, or until smooth. Let rest for 10 minutes.
- Roll the dough out on a floured surface to 1/4 inch thick. Cut into strips 1 inch wide and 6 inches long. Place onto waxed paper, and let rise until doubled in size, about 1 hour.
- Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Carefully remove the Long Boys from the waxed paper and place a few at a time in the hot oil. Fry for about 3 minutes per side, or until light brown. Set over wire racks to drain. Drizzle with glaze.
- To make the glaze, mix the confectioners' sugar with enough water to make it able to drizzle in a long strand. Adjust amounts if necessary.

- In the bowl of an electric mixer fitted with the dough hook attachment, stir together yeast and milk; let stand until yeast is dissolved, about 1 minute. Add flour, 1/3 cup sugar, salt, and eggs; mix on low speed until dough comes together, about 1 minute. Continue mixing on low 2 to 3 minutes more. Add butter, a few pieces at a time, mixing after each addition and until butter is fully incorporated and dough is soft, 5 to 6 minutes.
- Remove dough from bowl and wrap tightly with plastic wrap. Refrigerate at least 6 hours and up to 15 hours.
- Lightly flour a baking sheet; set aside. On a well-floured work surface, roll out dough into 12-inch square about 1/2 inch thick. Using a 3 1/2-to-4-inch round biscuit cutter, cut out 9 doughnuts. Transfer to prepared baking sheet and cover with plastic wrap; let stand in a warm spot until they've doubled in height and feel poufy and pillowy, 2 to 3 hours.
- Fill a large heavy-bottomed saucepan with oil to a depth of 3 inches; heat over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, place doughnuts in the hot oil, taking care not to crowd them. Fry until golden brown on one side, 2 to 3 minutes; turn and continue frying on remaining side until golden, 2 to 3 minutes more. Using a slotted spoon, transfer doughnuts to a paper towel-lined baking sheet until cool enough to handle.
- Place remaining cup of sugar in a small bowl. Toss doughnuts in sugar, one at a time, to evenly coat. Return doughnuts to paper towel-lined baking sheet to cool completely, 30 to 40 minutes.
- Meanwhile, in the bowl of an electric mixer fitted with the whisk attachment, beat heavy cream until stiff peaks form. Gently fold in pastry cream; you should have 3 cups of filling. Transfer to a pastry bag fitted with a small round tip; set aside.
- Poke a hole in the side of each cooled doughnut and fill with about 1/3 cup filling; serve immediately.

- Dissolve soda in boiling water and add to mixture.
