SIMPLE HOMEMADE VANILLA ICE CREAM



Simple Homemade Vanilla Ice Cream image

This simple, no-cook homemade vanilla ice cream is creamy, refreshing, and so easy to make. It's perfect all through the summer...and any time!

4 cups heavy cream
5 cups half and half
2 cups granulated sugar
4 tablespoons pure vanilla extract
optional 3 vanilla bean pods (instead of extract)
pinch of salt
rock salt
crushed ice

Steps:

  • In a large bowl, whisk all ingredients together until well mixed. Stir until the sugar dissolves. When adding the vanilla flavor, you can switch out the vanilla extract for vanilla bean. It's so so yummy! Just split open the vanilla beans with a small knife, and scrape the seeds into the ice cream mixture and mix well. If you can, refrigerate the mixture for 30 minutes or more (even overnight) for full vanilla flavor. It also helps it freeze faster! Pour the mixture into your ice cream freezer, and churn ice cream according to the manufacturer's instructions. Place the ice cream in an airtight plastic container, and store at the back of the freezer. You can eat the ice cream right away, but it's more of a soft-serve ice cream at that point. Freeze for a couple of hours before serving if you want to be able to scoop the ice cream.

Steps:

  • Whisk together the milk and sugar until the sugar is completely dissolved.
  • Stir in the vanilla and a pinch of salt.
  • Mix in heavy cream until well combined.
  • Pour into ice cream machine and churn according to the machine's directions.
  • Scoop into storage containers and freeze until solid enough to scoop.

2 cups Heavy cream
1 cup Milk ((whole))
2/3 cup Organic cane sugar
1 tsp Vanilla extract
1 pinch Salt

Steps:

  • In a mixing bowl, add milk, sugar, and a pinch of salt.
  • Whisk on low speed using the whisk attachment of a hand blender or stand mixer until all the sugar is dissolved.
  • Add vanilla extract and heavy cream.
  • Mix well with a spatula or a spoon (do not whisk).
  • Chill the mixture in the fridge for about 2 hours.

This recipe is so easy, and so creamy. No eggs to cook before hand, and if you don't have an ice cream machine, it still works very well. You can add 2 cups of fruit sweetened with a couple tbsp of corn syrup, or a couple of cups of crushed cookies, or a cup of mini chocolate chips just before freezing.

1/2 cup cold milk
1 tablespoon vanilla
1 (14 ounce) can fat-free sweetened condensed milk (like Eagle Brand)
1/4 teaspoon salt
2 cups heavy whipping cream

Steps:

  • Stir milk, vanilla, condensed milk and salt in a medium bowl.
  • Beat heavy cream in a large bowl with an electric mixer until stiff peaks form.
  • Gently fold in milk mixture.
  • Pour into ice cream machine.
  • Or, if you don't have one, just pour into shallow 1 1/2 quart metal bowl or pan.
  • Operate ice cream machine per manufacturer's suggestions, or just place the shallow pan into the freezer, and stir once after 2 hours.
