8 frozen breaded chicken tenders
1 loaf (1 pound) frozen pizza dough, thawed
1/2 cup marinara sauce
1/4 teaspoon garlic powder
2 cups (8 ounces) shredded part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese
2 tablespoons thinly sliced fresh basil
Additional warmed marinara sauce

Steps:

  • Bake chicken tenders according to package directions. Remove from oven; increase oven setting to 450°., Meanwhile, grease a 12-in. pizza pan. Roll dough to fit pan. In a small bowl, mix marinara sauce and garlic powder; spread over dough., Cut chicken into 1-in. pieces. Top pizza with chicken and mozzarella cheese. Bake on a lower oven rack 12-15 minutes or until crust is golden brown and cheese is melted. Sprinkle with Parmesan cheese and basil. Serve with additional marinara.

1 pound whole-wheat pizza dough
1 ½ cups shredded cooked chicken breast (8 ounces)
¾ cup pizza sauce, divided
¼ teaspoon garlic powder
¼ teaspoon crushed red pepper
All-purpose flour for rolling dough
1 cup shredded low-fat mozzarella cheese or 4 ounces fresh mozzarella, torn into pieces
½ cup grated Parmesan cheese, divided
¼ cup thinly sliced fresh basil

Steps:

  • Preheat oven to 475 degrees F. Coat a large rimmed baking sheet with cooking spray. Let dough stand at room temperature while you prepare the toppings.
  • Stir chicken, 1/4 cup pizza sauce, garlic powder and crushed red pepper together in a small bowl.
  • Roll the pizza dough out on a lightly floured surface to the approximate size of the baking sheet. Transfer to the prepared baking sheet. Spread the remaining 1/2 cup pizza sauce over the dough. Spread the chicken mixture over the sauce. Top with mozzarella and 1/4 cup Parmesan. Bake until browned and bubbling, 16 to 20 minutes. Sprinkle with basil and the remaining 1/4 cup Parmesan. Cut into 10 pieces.

I decided to combine my love for pizza and my husband's favorite meal, Chicken Parmesan. It was easy and delicious and is definitely a keeper in my book!

1 (13.8 ounce) can refrigerated pizza crust
½ cup marinara sauce
2 cups Kraft Italian blend cheese
8 breaded chicken strips (cooked and sliced)
1 Tablespoon Italian seasoning

Steps:

  • Heat oven to 400 degrees.
  • Roll dough onto a greased cookie sheet and use a rolling pin to reach desired thickness.
  • Spread marinara on top of dough.
  • Sprinkle on cheese, chicken and Italian seasoning.
  • Bake for 18-20 minutes or until the crust is golden brown.

3/4 cup low-fat pizza or marinara sauce (lower-sodium, if possible)
8 ounces Basic Grilled Chicken (see page 219) or lean, store-bought grilled chicken, cut into bite-sized pieces
2 ounces (about 1/2 cup plus 2 tablespoons) finely shredded reduced-fat mozzarella cheese (no more than 3 g of fat per ounce; I used Lucerne, found at Safeway chains)
1 tablespoon grated reduced-fat Parmesan cheese (look for it in a plastic canister or jar, not in the refrigerated section)
1 to 2 tablespoons fresh basil slivers, optional
1/8 to 1/4 teaspoon crushed red pepper flakes, or more to taste, optional

Steps:

  • Preheat the oven to 450°F.
  • Place the crust on a baking sheet large enough for it to lie flat. Spread the sauce evenly over the crust to cover all but the outer 1/2 inch. Top it evenly with the chicken and then the mozzarella, Parmesan, basil, and red pepper flakes, if using. Bake the pizza until the cheese melts and the dough is lightly crisped, 10 to 12 minutes. Transfer it to a platter or cutting board. Let stand 5 minutes, and then slice into 8 equal slices and serve immediately.

Number Of Ingredients 15

2 boneless, skinless chicken breasts, cubed
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 cup flour
8 eggs, beaten
3 cups seasoned bread crumbs
oil, for frying
1 cup tomato sauce
8 oz mozzarella cheese, sliced or shredded
¼ cup grated parmesan cheese
fresh basil, chopped, to garnish

Steps:

  • In a food processor, add the chicken, salt, pepper, oregano, garlic powder, onion powder, and paprika, and pulse until thoroughly combined, with no large chunks.
  • Spread the mixture evenly into the bottom of a plastic wrap-lined, 10-inch (25 cm) cake pan. Fold over the excess saran wrap on top, and press it into a flat shape. Freeze until completely frozen solid, 2-4 hours.
  • In 3 separate shallow dishes, distribute the flour, eggs, and bread crumbs.
  • Unwrap the frozen chicken disc and dip it in the flour, shaking off any excess.
  • Submerge it into the eggs, then cover it completely with the bread crumbs, pressing the bread crumbs into the chicken.
  • Freeze for 15 minutes.
  • Preheat oven to broil.
  • Add oil to a large, deep pan halfway up the side to 400°F (200°C).
  • Carefully lower the chicken disc into the oil with tongs, making sure it doesn't splash. If the bottom is getting more color than the top, flip the patty extremely carefully and fry the other side until a deep golden brown.
  • Remove the chicken disc from the oil and transfer to a wire rack. Blot with paper towels to remove excess oil.
  • Add the tomato sauce to the fried chicken disc, spreading it in an even layer.
  • Lay the mozzarella over the sauce, then sprinkle with Parmesan over the top.
  • Broil for 5-8 minutes, or until the cheese is bubbly and golden brown.
  • Top with basil, slice, and serve.
