VEGAN CREAM OF SPINACH SOUP



Vegan Cream of Spinach Soup image

The best thing about this soup? It takes less than half an hour from chopping board to table; and is dead easy. Unlike starchy soups that need about 30-40 minutes to cook through, this soup only needs about 20 minutes. Just chop up your ingredients, bring to the boil, simmer, blend and serve. I can't seem to go past using whole roasted garlic in my soups. It just brings a depth of flavour that is hard to beat. I suppose, if you are on a winning blend - just keep spinning. If you want to really "go green", you can always add in more spinach. But I find this balance of vegetables works well. Once again, I rely on my beloved cashews to cream up this vegan soup. If you have a high-speed blender such as a Vitamix, you will get a soup that is velvety and smooth. Don't worry if you don't have one. You will still get a beautiful tasting result. It just won't be as smooth. You might have some pieces of cashew. But I don't mind that rustic touch.

2 cups raw organic fresh spinach
1 cup organic zucchini (about 1 zucchini)
1 cup chopped red onion (about 1 medium onion)
1/4 cup scallions (about 6) or 1/4 cup green onion (about 6)
1/4 cup flat leaf parsley (a handful)
1/4 cup celery (1 large stalk)
4 cups strong vegetable broth
1 roasted garlic, bulb
1/4-1/2 cup raw cashews
1 dash fresh lemon juice, to taste
celtic sea salt

Steps:

  • Place the garlic whole in the oven on about 400 for about 30 minutes until soft and roasted.
  • In a saucepan saute onions and scallions with a pinch of celtic sea salt to bring out the sweetness until translucent.
  • Add in spinach, celery, zucchini and parsley and cook for about 5 minutes.
  • Add in stock and squeeze in roasted garlic pulp and bring to the boil.
  • Simmer for about 20 minutes until the veggies are cooked through.
  • Allow to cool slightly and then puree in the blender with the cashews and
  • return to the stove to warm and serve.
  • Serve sprinkled with parsley and a grain ball. YUM!

This creamy broccoli spinach soup is made using a handful of ingredients and comes together in under 15 minutes! It is super nutritious, rich and creamy, vegan and absolutely delicious! The post also contains tips for making broccoli rice.

1.1 pounds broccoli, florets and stalk (roughly chopped *see Instructions)
3.53 ounces spinach
2 garlic cloves (chopped)
1 onion (chopped)
2 tablespoons olive oil
3-3½ cups vegetable stock (hot)
Pepper to taste

Steps:

  • *Prepare the broccoli rice by cutting off the broccoli stalk, slicing off the tough outer layer and chopping the stack roughly, along with the florets before adding into the blender. Blitz until the mixture becomes crumbly (not mushy) Avoid overcrowding the blender and make broccoli rice in batches if you have to.
  • Dissolve the stock cubes in the hot water.
  • In a large pot heat up the oil, add the garlic and onion and fry over a medium heat for 2 minutes, stirring often. Add the broccoli rice and continue cooking for 5 minutes, stirring often. Add the spinach, pour in 3/4 of the stock, cover and bring to a boil, then simmer for 3 more minutes. Puree the soup, add the remaining stock if necessary, adjust the seasoning (I only added some pepper) and enjoy!

Serve this creamy spinach soup piping hot, with a fresh buttered baguette. Delicious! You can make a vegetarian version by using vegetable stock in place of the chicken stock. Also, you can add a dash of paprika, cayenne, or red pepper flakes if you like more spice. Note: I used a 32 oz. box of organic chicken stock, and we thought it was fine that way (we like ours with plenty of broth). But the three cups of chicken stock that the recipe calls for should work nicely if you like a thick soup, or are going to blend it. I don't have an immersion blender, but feel free to blend this soup if you prefer a smooth version.

3 tablespoons grated carrots
1/2 cup onion, finely chopped
16 ounces frozen chopped spinach (or fresh)
3 cups chicken stock (or vegetable stock)
1 cup cream or 1 cup milk
1 dash garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 dashes ground nutmeg (to taste)

Steps:

  • In a medium saucepan, melt butter over medium heat.
  • Add the carrots and onion and saute in the butter until softened, about 3-5 minutes.
  • Add the stock and bring to a boil over high heat, then add the spinach.
  • Reduce heat to medium and let simmer for about 8-10 minutes, or until spinach is done.
  • Whisk in the milk or cream and the seasonings and heat through briefly (about five minutes more), stirring occasionally.
  • Remove from heat.
  • Serve piping hot.

1 cup chopped onion (from about 1/2 medium onion)
Kosher salt
1/2 cup chopped celery (from about 1 medium stalk)
1 clove garlic, smashed
Freshly ground black pepper
2 medium Yukon gold potatoes, peeled and diced (about 3/4 pound)
4 cups broccoli florets
1/2 cup unsweetened soy milk
1/4 cup nutritional yeast
1/4 teaspoon freshly grated nutmeg

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onions and 1/2 teaspoon salt and cook until light brown, about 7 minutes. Add the celery, garlic and 1/4 teaspoon pepper and cook for 5 minutes. Add the potatoes, 4 cups water and 1/2 teaspoon salt, raise the heat to high and bring to a boil. Return the heat to medium, cover and cook until the potatoes are tender, about 15 minutes. Add the broccoli, cover and cook until the broccoli is bright green, about 5 minutes.
  • Transfer the soup to a blender; add the soy milk and puree until smooth, leaving the filler cap slightly open to let steam escape (or puree the soup in the pot with an immersion blender). Return the soup to the saucepan and bring to a simmer; stir in the nutritional yeast and nutmeg. Add water if needed to adjust consistency and add salt and pepper to taste.
