Here's an easy-to-make recipe for a delicious fudge that's completely raw and vegan. The best part about this recipe is that it is really fast to make and it doesn't necessarily require a food processor or blender. I recommend rolling the balls in cocoa powder.

- Add in the dates, vanilla and sea salt and process again until a sticky, uniform batter is formed. (You can add a tablespoon of coconut oil, only if needed to help the mixture come together.) You don't want to over process, or the batter will become oily, so process until crumbly, but sticky when pressed between your fingers.
- Scoop the dough by heaping tablespoons, then roll between your hands to form balls. Arrange them on a baking sheet lined with parchment paper, then place in the fridge or freezer to set for at least 30 minutes before serving. Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life. (I prefer them frozen, myself!)

- For either recipe, soak the chopped dates in hot water for 10 minutes, then drain out the water. I boil a kettle for the "hot" water (the hotter the water, the softer the dates will be).
- Place the dates with the remaining ingredients for that recipe (excluding the hemp seed or coconut for coating) into a food processor. Blend until smooth. This takes some time as you need to scrape the edges of the food processor down a few times to ensure everything is incorporated.
- If coating the bites with hemp seeds or coconut, sprinkle a layer of the coating onto a plate and roll the bites around in the coating until covered.

- Fill a glass container with very hot water. (I heat about 2 cups in the microwave for about 1 1/2 minutes.)
- Add dates to water, cover with plastic wrap and set aside for 5-10 minutes. This softens the dates and makes them easier to puree. It's not necessary if the dates are very soft.
- Remove dates from water and place in a small food processor along with 1 Tablespoon of water that the dates soaked in.
- Pulse until smooth, scraping down the sides as necessary. Add additional water to thin the consistency of the paste, if desired.

- PREP: Line a baking sheet or plate with parchment paper. Then, place a few spoonfuls of desiccated coconut into a separate small bowl or dish. This is NOT the 1 cup of coconut that goes into the balls, but what the balls get rolled into so that they're coated on the outside! Set aside.
- In a large food processor, add pitted medjool dates, desiccated coconut, cacao powder, hemp seeds, and water. Pulse until it forms a paste-like texture. If things aren't sticking together, feel free to add a splash more water until it does.
- Using a large spoon, take a couple spoonfuls of the mixture from the food processor and place it in your hands. Roll into balls, then roll the balls in the dish with the coconut until the outsides of the balls are fully coated. Place finished ball onto the parchment lined baking sheet/plate. *this part is meant to be a little messy!
- Repeat until all mixture is used up. Recipe as written should make about 10-12 balls, depending on size.
