VEGAN DULCE DE LECHE CARAMEL SAUCE
It's really one of the easiest gluten-free vegan things to make, and I dare say one of the most delicious too. you can eat this stuff straight out of the jar, but use it in cake recipes, on ice cream, and as a spread. From Gluten Free Vegan Love.

Steps:
- Place all ingredients in a pot or a large sauce pan (a deeper pot works better in case of accidental boiling over). Bring to a low boil (watch out that it doesn't boil over - this thing can bubble up pretty quickly!), stirring occasionally.
- Reduce heat to low and leave to simmer for 2 1/2 - 3 hrs, stirring occasionally. Somewhere between the 2 and 3 hour mark keep a closer eye out on the mixture until it looks and feels like it's got the right thickness and consistency. It should reduce roughly by half by the time it's ready.
- When it's at the right consistency, remove from heat and transfer to a glass jar. Allow it to cool at room temperature. Store in the fridge if you're not using it immediately. You can prepare this recipe a few days in advance if you're planning on using it in something.
- Note: It will turn a nice brown color.

- Whisk with a hand whisk to combine and heat on high heat, stirring constantly until the mixture begins to boil. Turn the heat down to medium and let it boil (uncovered), stirring every now and then, until the mixture has reduced and thickened (about 20 minutes). Keep a close eye on it so that it doesn't boil over.
- Let the sauce cool for a few minutes in the pot before transferring to jars. Allow to cool completely in the jars before refrigerating. It will continue to thicken in the fridge into a thick caramel.

- Combine coconut milk and coconut sugar in a medium pot. Heat at medium heat and stir or whisk until your sugar dissolves. Add in your salt and vanilla and stir again. Add in tapioca here if you want it thicker. If you want a thinner sauce then do not add it.
- Next increase heat until milk/sugar mixture comes to a soft boil. Let it soft boil (around medium high) for about 20 minutes or until 10 ounces is reduced to one cup or around that.
- Remove from Transfer sauce to small glass jars. Let it Cool then cover and store in fridge until ready for use.
