Popcorn shrimp make a nice appetizer or side dish for both adults and children. Best served with cocktail sauce.

Steps:
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Place flour in a bowl. Whisk egg and milk in another bowl. Combine bread crumbs, salt, basil, parsley, garlic powder, and onion powder in a third bowl.
- Gently press shrimp into flour to coat and shake off excess. Dip into egg mixture and press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded shrimp onto a plate while breading the rest; do not stack.
- Deep fry breaded shrimp in preheated oil until golden brown, 3 to 4 minutes. Transfer shrimp to a paper towel-lined platter to drain.

VEGAN 'CHEESY' POPCORN
Using more oil than popcorn kernels - a technique developed by Jessica Koslow, the chef and owner of Sqirl in Los Angeles - gives you an ultracrunchy popcorn with rich flavor. Ms. Koslow prefers grapeseed oil for its high smoke point and clean taste. But to mix things up, you can combine grapeseed oil with a more flavorful oil such as virgin coconut, olive oil, butter, duck fat, or bacon grease. Use 1/4 cup of each. After popping, you can toss the kernels with just salt (they won't need any more fat by way of butter) or a flavorful spice mix. Here, they're tossed with nutritional yeast, which gives them a Parmesan-like umami flavor, along with a little rosemary or kelp powder for depth.

- In a large Dutch oven or heavy-bottomed pot set over medium-high heat, heat oil and 3 popcorn kernels. When kernels pop, add remaining kernels, lower heat to medium-low, and cover almost all the way with a lid, leaving a tiny crack open for steam to escape (face the crack away from where you are standing).
- Cook, shaking occasionally, until popping stops.
- Transfer popcorn to a bowl, and immediately toss with salt, nutritional yeast, black pepper, dried rosemary and red-pepper flakes. For maximum crunch, let popcorn settle for 5 to 7 minutes before eating.

Steps:
- Heat 2 tablespoons vegetable oil in a very large pot over medium-high heat. Put 4 popcorn kernels into the oil and cover until popped; add remaining kernels to the saucepan in an even layer. Cover and remove from heat, about 30 seconds. Return to heat and gently shake pan back and forth over the burner until popping slows to several seconds between pops, 1 to 2 minutes.
- Divide popcorn among large bowls and set aside.
- Combine brown sugar, corn syrup, coconut oil, and salt in a sturdy pot over medium-high heat. Cook, stirring occasionally, until the mixture reads 270 degrees F (132 degrees C) on a candy thermometer. Add condensed milk, mix well, and heat back up to 270 degrees F (132 degrees C). Remove from heat and let cool for 1 minute. Mix in vanilla extract.
- Pour hot caramel over popcorn. Mix well until coated.

- In a medium bowl, add seasoned flour ingredients. Mix well.
- Place half of the flour mixture into a large zip lock bag, reserve the rest.
- Add the shrimp to the bag and shake until each shrimp is coated with flour. Shake off any excess flour.
- In a separate bowl, add egg, milk, and cajun seasoning. Mix well.
- Dredge the floured shrimp in the egg mixture, then coat with the fresh seasoned flour mixture.
- Heat oil at 350°F (180°C).
- Fry shrimp for a few minutes until golden brown and cooked through.
- Serve with your favorite dipping sauce.

VEGAN MOCK POPCORN SHRIMP
One of my absolute favorite restaurants, Kate's Joint, serves these really awesome poppers called "Mock Popcorn Shrimp". I've been trying to make something similar for years! These aren't quite like them, but so far the best attempt I've had at a copycat. I use La Flor seafood seasoning, feel free to use a homemade mix or something like Old Bay. Prep time doesn't include your method for drying out the tofu as some take the lazy shortcut like I do, others do the press method that takes a few hours-- but unlike grilling the tofu where you only need it to be moderately dry, you need it to be REALLY dry for this!

- Dry out the tofu however you have to-- whether it's the stove top, microwave, or plate-press method. But it has to be really, REALLY dry in order for this work. I drain the package very well then blot with a dish towel once the block is on a plate, then nuke it in 2-minute intervals, blotting off water every time, until little to no water comes out then I let it cool off so I can handle it.
- Cut the tofu into little cubes.
- Mix the remaining ingredients EXCEPT the olive oil in a long rectangular dish/container.
- In a tossing bowl, toss the dry tofu cubes with the olive oil to fully coat them.
- Dredge the cubes with the flour mixture.
- Lightly fry in canola oil then blot on paper towels.

VEGAN SHRIMP
Homemade vegan shrimp (vegan prawns) made from king oyster mushrooms and seasoned to taste like shrimp. Use this mock shrimp as you would shrimp in any recipe.

- Cut the brown caps off the top of the king mushroom as well as the hard bottom inch or so.
- Slice the mushroom stems into rounds about 1/4 inch thick. Then cut the circles into the shape of a shrimp.
- In a saucepan, heat 1/3 cup of water, 1/2 teaspoon kelp flakes, 1/2 teaspoon of Old Bay seasoning, and 1/2 teaspoon of salt. Heat until it starts to boil then take off the heat and pour the broth over the cut mushrooms.
- Allow the mushrooms to marinate in the broth for about 20 minutes.
- Heat vegan butter in a skillet until melted, then add the marinated "shrimp."
- Saute the shrimp over medium heat for about 3 minutes on each side. You can also add some minced garlic for extra flavor and sprinkle them with a little paprika to give them a red color. They are also delicious with a squeeze of lemon juice if desired.
- Serve as you would shrimp or toss them into your favorite recipes that call for shrimp.

BACON WRAPPED COCONUT QUICHE AND COCONUT POPCORN SHRIMP
I made coconut flavored quiche adding fresh corn to enhance more sweet flavor and wrapped with bacon so that it has sweet salty taste which enhances your appetite. To make it tastier and more fun to eat, I made popcorn shrimp adding more coconut and top with spicy cocktail sauce.

- 1. Preheat oven to 350 degrees F. Grease bottom of a muffin baking pan with 6 cups with non-stick cooking spray. Put flour into a shallow plate. Beat 1 egg into a bowl. Put panko and cornmeal into another shallow plate and mix to combine.
- 2. Pat shrimp dry with paper towels and season with salt and black pepper.
- 3. Make filling. In a blender, put coconut milk and corn. Puree until almost smooth (some small texture is still remained for texture).Transfer the mixture into another bowl. Add 2 eggs and Parmesan cheese to the bowl and whisk to combine. Season with salt and black pepper.
- 4. Cook bacon in a non-stick skillet over medium heat until lightly browned flipping once. Drain on paper towels.
- 5. Place each bacon along sides of each muffin cup. Pour the filling into each cup evenly. Bake in the oven for 23-25 minutes or until center of the quiche is almost set.
- 6. In the meantime, make coconut popcorn shrimp. Peel, divined and remove tail from each shrimp and pat dry with paper towels .Dredge shrimp in flour, dip in the egg and coat with cornmeal mixture. In a deep skillet, heat coconut oil to medium high. Work in batches. Deep fry shrimp until cooked through and golden brown (add more oil from second batch if necessary). Drain on paper towels lined plate.
- 7. When the quiche is baked, remove the pan from the oven and put popcorn shrimp on each quiche (2 shrimp for each), return the pan into the oven and bake in the oven for another 2 minutes. Let rest on a rack for 5 minutes.
- 8. In the meantime, make cocktail sauce. In a small bowl, mix together ketchup, Worcestershire sauce, lemon juice, soy sauce and Tabasco.
- 9. To serve, remove each quiche from the pan and place on each serving plate. Drizzle the cocktail sauce over the popcorn shrimp. Sprinkle with coconut flakes over the top.
