- Filling -
- Peel and cut potatoes into small pieces. Cover with water and cook until easily pierced with a fork. Drain (reserving 1 cup water for dough) and mash well. I use a potato rice.
- Meanwhile sautee onion in oil for about 7 minutes over meadium heat. Once onions are done, combine salt pepper, potatoes and onions and mix well. You can add a bit of well drained sauerkraut if you would like.
- To Make Dough:.
- Combine flour, salt, oil and reserved water in large bowl, and mix until dough forms a ball. If dough is dry, add more water, 1 tablespoon at a time, until moist. If dough is sticky, add more flour, 1 tablespoon at a time, until it's smooth.
- Put it all together!
- Roll the pierogi dough on a floured board or countertop until 1/8" thick. Cut circles of dough with a cookie cutter or drinking glass. Place a small ball of filling (about a tablespoon) on each dough round and fold the dough over, forming a semi-circle. Press the edges together with the tines of a fork.
- Boil the perogies a few at a time in a large pot of water. They are done when they float to the top (about 8-10 minutes). Rinse in cool water and let dry.
- If you want to pan fry them, can a "healthy" pat of vegan butter to a pan, wait for it to melt and them fry on each side until golden.

- To make the filling start by boiling the potatoes in salted water. Drain well and mash until smooth. Set aside to cool. In the meantime fry the onion over a low/medium heat in 2 teaspoons of oil for about 5 minutes until softened. Add to the potato mash.
- Roughly chop and mash the tofu until crumbly using a potato masher. Add into the potato mixture along with the vinegar, Worcestershire sauce, 2 teaspoons of oil and seasoning.Stir the mixture thoroughly. Set aside while you make the dough.
- To make the dough in a large bowl combine the flour, salt and oil and gradually pour in the hot water stirring all the time. Turn the mixture onto a clean work surface and knead until all the ingredients have been incorporated then continue kneading for about 5 more minutes until the dough is silky smooth. Cover with a bowl and set aside for 20 minutes.
- Divide the dough into 2 parts (easier to work with) and roll out one part (keeping the other covered) on top of a very lightly floured surface as thinly as possible, 2-3 mm in thickness. Using the rim of a glass with a diameter of about 7 cm make round shapes (gather up excess dough and add to the other dough part).

- To make the dough, stir the flour and salt together in a medium mixing bowl. Stir in the water and butter to form a dough. Transfer the dough to a lightly floured surface and knead for about 6 minutes, until smooth and elastic. Transfer the dough to a lightly oiled bowl and cover. Allow it to rest for 1 hour.
- While the dough rests, caramelize the onions. Place the onions and oil into a medium skillet and stir a few times to coat the onions with oil. Set the skillet over medium-low heat. Allow to cook, stirring occasionally, until the onions become very soft and light brown, about 45 minutes.
- While the dough rests and the onions caramelize, place the potato into a medium pot and cover with water. Place the pot over high heat and bring the water to a boil. Allow to cook until the potato is fork tender, about 15 minutes. Don't overcook it.
- Drain the potato into a colander and return it to the pot. Mash the potatoes with a potato masher and stir in the milk, nutritional yeast flakes, white wine vinegar, garlic and salt. When the onions are finished cooking, stir them into the potato mixture.
