TOFU AND PEPPER TEMPURA

1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 egg
1 teaspoon yellow food coloring
2/3 cup iced water
6 cups grape seed oil, for frying
1 cup large diced red onion
1 cup large diced red pepper
1 cup large diced green pepper
1 cup small mushroom caps
2 cups diced tofu
12 large bamboo skewers, soaked in water for 15 minutes
1 cup all-purpose flour
Salt and freshly ground black pepper
Soy sauce and chives, for dipping, optional

Steps:

  • Sift all the dry ingredients together in a large bowl. Beat the egg and food coloring, if using, together in another bowl. Once incorporated, add the cold water. Gradually, add the wet ingredients to the dry ingredients and mix thoroughly to remove any lumps. Set aside.
  • While the batter is resting, preheat the grape seed oil in a deep heavy skillet, over medium heat, to around 350 degrees F. Make sure, for safety, that the oil only comes 3/4 of the way up the pan.
  • Alternate the vegetables and tofu on the skewers to form a colorful stick of vegetables.
  • In a large shallow dish and the flour and season it with salt and pepper, to taste. Gently roll the tofu and vegetable skewers in the flour, coating it well and shaking off any excess flour. Dip the skewers into the tempura mix, and let the excess batter drip back into the bowl. Add the skewers to the hot oil, in batches if necessary, and cook until golden brown and crispy, about 3 to 5 minutes. Transfer to a serving platter and serve with a simple dipping sauce of soy sauce and chopped chives, if desired. Enjoy.

14 ounce packet of extra firm tofu
½ cup of rice flour
½ cup of all-purpose flour
¾ tsp of baking soda
¼ tsp of salt
1 cup of club soda*
Frying oil (enough to submerge your tempura tofu strips)

Steps:

  • The first step towards the best tempura tofu is to freeze your packet of tofu. This gives the tofu a much chewier, firmer texture that's perfect for deep fried tofu recipes. Use a tofu press to press out as much liquid as you can from the block of tofu before cutting the block into tempura sized strips. Place your tofu strips into a resealable container and freeze overnight. The next day, allow the tofu to thaw, then press out any excess water a second time.
  • When you're ready to start preparing your tempura batter, you need to remember to fry your tofu right away, as the batter itself needs to be cold for the best results. You can set up your skillet or pot and start heating up enough frying oil to cover your tempura strips while you prepare the batter (it doesn't take too long).
  • Prepare your batter by first measuring out rice flour, all-purpose flour, salt, and baking soda into a mixing bowl. Mix the ingredients together and pour in cold club soda. You don't need the batter to be smooth; lumpy is fine.
  • Your oil should be hot now, so it's time to learn how to deep fry tofu. Take your first tofu strip and give it a good coating of tempura batter. Place it straight into the hot oil and let it cook for 2 minutes. Remove the tempura tofu when it's crispy and place it on paper towels or a drying rack to remove excess oil.
  • Repeat the process, frying tofu in small batches to give them enough space to cook without touching.
  • Serve your tempura tofu with dipping sauces or as part of a larger Japanese-inspired dinner!

1 cup water, COLD (its very important that it's cold!)
1 cup flour
2 teaspoons salt
1/3 cup oil (1/2 may be needed)
1 medium eggplant, peeled and sliced in disks (about 8 pieces)
1 zucchini, peeled and sliced in disks (about 8 pieces)
1 onion, sliced in disks (about 4)
1 sweet potato, peeled and sliced into disks (about 8)

Steps:

  • Mix the salt, flour, and water together until smooth and no lumps. (Use cold because it helps the batter/veggies absorb less oil).
  • Place in freezer.
  • Prepare vegetables by peeling and slicing.
  • Pour the oil into a pan and heat over medium heat.
  • When oil is hot, dip veggies in batter then oil.
  • Fry until lightly browned.
  • Do small amounts at a time. It will be less messy and much easier to manage.

2 eggs
2 tablespoons water
1 cup panko bread crumbs
2 teaspoons vegetable oil
½ cup whole green beans
½ cup whole asparagus spears
½ cup red onion rings
½ cup sweet pepper rings
½ cup avocado wedges
½ cup zucchini slices

Steps:

  • Mix together flour, 1/4 teaspoon salt, and pepper in a shallow dish. Whisk together eggs and water in another shallow dish. Stir together panko and oil in a third shallow dish. Add desired seasoning to either panko and/or flour mixture.
  • Sprinkle vegetables with remaining 1/4 teaspoon salt. Dip in flour mixture, then in egg mixture, and finally in panko mixture to coat.
  • Preheat the air fryer to 400 degrees F (200 degrees C) and the oven to 200 degrees F (95 degrees C).
  • Arrange half of the vegetables in a single layer in the air fryer basket. Cook until golden brown, about 10 minutes. Sprinkle with additional salt, if desired. Transfer vegetables to oven to keep warm. Repeat with remaining vegetables.
