BEEF AND VEGETABLE STEW
This variation of beef stew is hearty, easy to make and low in fat. You can substitute venison for the beef. If you want to stretch out the recipe, try serving over cooked noodles.

Steps:
- Remove any bits of fat from the meat. Heat the oil in a large pot over medium high heat. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
- Add the onion and tomato paste to the pot and saute over medium heat for 5 minutes, or until onion is tender, stirring often. Return the meat to the skillet along with the beef broth, combining with the onion and tomato paste mixture. Reduce heat to low, cover and simmer for 1 to 1 1/2 hours, or until meat is tender.
- Add the carrots, potatoes, rosemary, thyme, bay leaf and crushed red pepper flakes and simmer, covered, for another 45 minutes. (Note: It may be necessary to add some water if the stew seems too thick.)
- Finally, add the mushrooms and the peas and allow stew to heat through, about another 10 to 15 minutes. Remove bay leaf and rosemary sprig before serving.

VEGAN BEEFLESS STEW
This yummy beefless, beef-style stew is totally vegan and made with veggies, herbs, and seitan. Serve with biscuits on the side.

Steps:
- Mix water and "beef" soup flavoring in a large pot over high heat. Add carrots, celery, potatoes, onion, peas, and corn. Add summer savory, parsley, and black pepper and mix together well. Taste and adjust seasonings as needed.
- Mix cornstarch and water together in a small bowl. Add to the pot and mix to combine. Bring to a boil, about 5 minutes. Reduce to a simmer and cook, covered, at least 1 hour.
- Meanwhile, heat olive oil in a skillet over medium-high heat. Add seitan pieces and cook until browned, 4 to 5 minutes per side.
- Pour stew into bowls and add a few pieces of seitan to each.

- Heat a large skillet or Dutch oven over medium heat; cook and stir beef stew meat and Italian dressing until meat is evenly browned, about 5 minutes. Add 2 cups water, beef bouillon, diced tomatoes, beef broth, tomato sauce, garlic, bay leaf, salt, oregano, and pepper to skillet; bring to a boil. Reduce heat to medium-low, cover, and simmer until meat is tender, about 1 1/2 hours.
- Place potatoes, carrots, bell pepper, and onion in stew; cover and simmer over medium-low heat until vegetables are tender, about 45 minutes.
- Combine flour and cold water in a small bowl; mix until smooth. Stir flour mixture into stew, bring to a boil; cook and stir until stew is thickened, about 2 minutes. Discard bay leaf before serving.

- Either soak shiitakes overnight or boil until soft, add a little red wine for flavour if desired.
- Reserve soaking liquid but cut shiitakes up into manageable pieces and return to liquid in large pot, add water to equal 6 cups liquid and bring to a boil.
- Crumble in stock cubes and add spices.
- Add all veggies and simmer until everything is soft.
- Add veggie "beef" strips, cut into smaller pieces if desired, cook for another 5-10 min to let flavours blend.
- Serve with fresh bread, red wine, and a simple salad.

- Heat the oil in a large casserole dish or very large oven-proof saucepan, and add the onion and beef-style pieces. Cook for a few minutes over a medium heat, until the onion has softened slightly. Then add all of the remaining stew ingredients (not the dumpling ingredients), and mix well. The liquid should reach to about the same level as the vegetables - add an extra dash of water if needed.
- Cover the pan, and place in the oven. Cook for around an hour, stirring once halfway, until the vegetables are all cooked.
- To make the dumplings, combine the vegetable suet and self-raising flour in a bowl, along with the dried oregano and plenty of salt and pepper.. Add enough water to bring the mixture together into a wet dough - about 150ml is probably about right, but you might need a little more or a little less. The mixture should be fairly wet and sticky.
