EASY CHEESEBURGER CASSEROLE



Easy Cheeseburger Casserole image

This recipe makes up to 3 casseroles. Serve one and freeze the other two as freezer meals for later use.

cooking spray
5 cups self-rising flour
¾ cup sour cream
1 egg, beaten
1 cup water, or as needed
2 pounds ground beef
1 onion, finely chopped
6 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 3 round baking dishes with cooking spray.
  • Mix flour, sour cream, and egg together with just enough water to bring the mixture together into a thick spreadable consistency.
  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until beef is completely browned, 5 to 7 minutes; drain and discard grease. Set beef mixture aside to cool.
  • Divide the dough mixture into thirds. Stretch each portion to cover the bottom of a prepared baking dish. Spread about one-third of the ground beef mixture over each pastry dough. Top each with about 2 cups shredded Cheddar cheese. Cover each with aluminum foil.
  • Bake in preheated oven until cheese is lightly browned and bubbling, 25 to 30 minutes.

No canned soup in this one, though you could use a can of mushroom soup and a can of celery soup in place of the powdered milk mixture. I cobbled together a few different recipes and made some change of my own to create this. It's like a much tastier, much healthier hamburger helper.

1 morningstar farms veggie crumbles
1 1/2 teaspoons kosher salt
1 1/2 teaspoons pepper
8 ounces whole wheat egg noodles (cooked)
1 cup shredded cheddar cheese
1/2 cup onion (chopped)
1 1/2 cups mushrooms (coarsely chopped)
1 cup powdered milk
2 tablespoons vegetable bouillon (I like Better than Bouillon)
1 teaspoon onion powder
1 1/2 teaspoons dried thyme
2 stalks celery (finely minced)
1/2 cup skim milk

Steps:

  • 1. "Brown" the veggie crumbles and onions in a skillet.
  • 2. Mix together second group of ingredients.
  • 3. Combine crumbles, soup mixture, and egg noodles in a medium casserole dish.
  • 4. Bake in oven at 350 degrees for 30 minutes, stirring a couple times during the baking process to keep the top noodles from getting crunchy.
  • **You can add more milk to the soup mixture if you like it wetter, but it should be pretty close to a condensed soup consistency.

13 ounces low-fat cream of mushroom soup (one can)
1 cup low-fat cheddar cheese, shredded
2 cups tater tots
5 kraft 2% american cheese singles
1 cup mushroom, chopped
1/2 white onion, chopped
2 tablespoons light mayonnaise
2 tablespoons hamburger relish
1/2 teaspoon garlic powder
1 teaspoon onion salt
1 teaspoon dill
1/4 teaspoon powdered chipotle pepper

Steps:

  • mix all but kraft singles and tater tots in a casserole dish, top with cheese slices and tater tots.
  • bake at 375 for 30 min, then turn heat up to 425 for 10 min.
  • let cool 10 min before serving with salad.
