This easy Vegetarian Burritos Recipe combines beans, quinoa, veggies and of course cheese for a healthy lunch on the go or weeknight dinner. Add meat or easily make it vegan to customize to your family's personal tastes. Enjoy with salsa, sour cream, or guacamole for some extra yumminess!

8 Burrito Size Flour Tortillas
2 Tsp Olive Oil
1 1/2 Tbsp Easy Homemade Taco Seasoning (or Store Bought Packet )
1/2 Small White Onion
1 Small Red Bell Pepper
1 Small Orange Bell Pepper
1 Cup Corn (Frozen or Canned)
2 Cups Brown Rice and/or Quinoa (Cooked)
2 Cans Black Beans (Rinsed and Strained)
2-3 Cups Shredded Mexican Cheese
8 Tbsp Taco Sauce
Salsa
Sour Cream (or Plain Greek Yogurt)
Guacamole
Cilantro
Lime Juice

Steps:

  • Cook your quinoa/brown rice according to package instructions either on the stove top or in the microwave. I like just using microwavable packages to save time but you can do either. While to rice is cooking slice onion, peppers (removing ribs and seeds) into strips or a large dice.
  • Add sliced onion, peppers, olive oil and taco seasoning to a small skillet and saute on medium heat for 5 minutes or until veggies are soft. Add corn to skillet and cook another 1-2 minutes. Remove from heat and set aside.
  • Wrap tortillas in several damp paper towels and microwave for 30 seconds until warm. While the tortillas are warming open and rinse canned black beans.
  • Once all your fillings are prepped it is time to fill the burritos. In the upper-center of a warm tortilla add 1/4 cup each of rice/quinoa, black beans, veggies, and cheese. Then a tbsp of taco sauce. You can add more cheese if you wish, and if you are substituting meat you will not need as much of the other ingredients.
  • Once filled, fold sides of tortilla over on top of filling and roll the the tortilla away from you folding over on itself. Use your fingers to keep the sides secure and the filling in. Repeat filling and rolling until all tortillas are filled.
  • Warm a skillet or grill pan on the stove top on medium heat and spray with cooking spray. Add burritos seam side down and cook 5 minutes until warm through then flip and repeat. Enjoy warm with optional extras, enjoy! See Recipe Notes for freezer storage options, and alternate cooking methods.

Easy Freezer Vegetarian Black Bean Burritos image

A great and super-easy recipe for take-along lunches to work, school, etc. Instead of store-bought salsa, an excellent ingredient is recipe 276150. You can embellish them a million ways. This is one of my favorite OAMC recipes because making 12 burritos literally takes less than 10 minutes and makes 12 really yummy lunches.

15 ounces black beans
16 ounces salsa (or recipe 276150)
12 flour tortillas (any size you like)
8 ounces shredded colby-monterey jack cheese or 8 ounces cheddar cheese
2 cups frozen vegetables, leftovers are great too, such as spinach, broccoli, green beans, cauliflower, shredded carrots, what

Steps:

  • Set out a 9x11 baking pan to place folded burritos in.
  • Whirl Black Beans (drained slightly) in a food processor for 3-5 seconds to make a thick paste.
  • Warm up tortillas in the microwave. Place all 12 on a plate on high for about 45-60 seconds.
  • Spread bean paste on tortilla. Layer on veggies, salsa, and cheese, (leftover chicken, shredded would also be good).
  • Roll up, folding in ends.
  • Place seam-side down into baking pan.
  • Repeat process for all 12.
  • Place baking pan in freezer until burritos are frozen solid.
  • Wrap individually in foil/freezer paper and place in a large Ziploc bag for easy grab-and-go lunch.
  • To reheat: cover with paper towel and microwave for 30-60 seconds, depending on microwave. Top with extra salsa, sour cream or plain yogurt with cumin.

Make-it-don't-buy-it Frozen Vegetarian Burritos image

If you're in a rush, wrap your frozen burrito in parchment paper and microwave on high 4 to 5 minutes.

1 cup brown rice
1 tablespoon olive oil
1 small onion, chopped
1 tablespoon tomato paste
2 teaspoons chile powder
1 teaspoon ground cumin
One 15-ounce can black beans, drained and rinsed
10 ounces frozen butternut squash chunks (not thawed)
Kosher salt
5 ounces baby spinach (about 8 loose cups)
Six 10-inch whole wheat flour tortillas or wraps
1 cup reduced-fat shredded Cheddar
Hot sauce
Nonstick cooking spray, for spraying burritos (if reheating in the oven)
Serving suggestions: reduced-fat sour cream, salsa, guacamole, optional

Steps:

  • Cook the brown rice according to the package directions. Transfer to a large bowl and cool completely.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring frequently, until soft and lightly browned, about 4 minutes. Add the tomato paste, chile powder and cumin and cook, stirring, until fragrant, about 1 minute. Add the black beans, squash, 1 cup water and 1/2 teaspoon salt. Bring to a simmer and cook until the beans are soft and most of the liquid has reduced but the mixture is still slightly saucy, 8 to 10 minutes. Add the spinach, in batches if needed, and fold in until wilted. Allow to cool completely.
  • Lay the tortillas out on a clean work surface. Put 1/2 cup of the rice in the center of each tortilla, about 1 inch from the edges, and top with about 1/2 cup of the bean filling. Sprinkle each with 2 heaping tablespoons Cheddar, and add a few dashes of hot sauce. Fold the edge nearest to you over the filling, fold in the sides and finish rolling up. Wrap tightly first in plastic wrap and then in foil, and freeze for up to 2 weeks.
  • To reheat in a microwave: Wrap the frozen burrito in parchment paper and microwave on high until hot in the center, 4 to 5 minutes.
  • For the crunchy oven method: Preheat the oven to 425 degrees F. Spray each side of the burrito generously with cooking spray and place seam-side down on a baking sheet. Cook until golden and crispy on the outside and hot inside, turning about halfway through, 25 to 30 minutes.
  • Serve with reduced-fat sour cream, salsa and guacamole if desired.

  • Bring your tortillas to room temperature, or warm them slightly for even better pliability. One by one, lay down a tortilla, then spread about 1/4 cup of rice and 1/4 cup of beans on one side. If using, add a little bit of vegan queso and/or salsa.
  • Fold the tortilla over the filling, then press it down on the other side and push the filling back a little bit. (See photos in the blog post for a visual aid). Fold in the sides, and then, holding in the sides, gently roll up the burrito. Proceed to fill and roll the rest of the vegan burritos.
  • Eat warm, or freeze for up to a month to eat later. To freeze your vegan burritos, lay them out on a baking sheet lined with parchment paper, and stick it in the freezer. Once the burritos have frozen, you can transfer them to a bag or airtight container of your choosing.

  • Prepare Zesty Avocado Cream Sauce: To a food processor, add avocado, cilantro, sour cream (or Greek yogurt), jalapeño, garlic, lime juice, and salt. Blend mixture, stopping to scrap down the sides as needed, until mostly smooth. Set aside.
  • Prepare Cilantro-Lime Rice: In a small saucepan, combine dry rice with 2 cups of water and 1/2 tsp. salt. Bring mixture to a boil, reduce heat to medium-low, cover, and gently simmer for 15 to 18 minutes, or until the liquid is absorbed and rice is tender.Remove from heat and stir in 2 tsp of the olive oil, chopped fresh cilantro, lime zest, and lime juice.   • Prepare Chipotle Black Beans: Drain and lightly rinse black beans. Shake off excess water and transfer to a bowl. Stir in adobo sauce, ground cumin, and remaining 1/4 tsp. salt. Cover with a damp paper towel and microwave for 2 minutes, stopping at 1 minute to stir through, until warm.
