Steps:
- Prepare corn muffin mix as directed on box.
- Spread batter into lightly greased 12 inch pizza pan.
- Bake at 400 degrees Fahrenheit for 8 to 10 minutes until slightly brown.
- In a skillet brown ground meat; drain and add seasoning.
- Put salsa then meat on baked cornbread.
- Top with cheese.
- Put back into oven until topping is bubbly and cheese is melted.
- Top with sour cream if you please.
MEXICAN CORNBREAD PIZZA
The combination of the sweet cornbread and spicy taco seasoning make this taste too good for words. It's healthy (using reduced fat ingredients and ground turkey) and easy to make.

- In a small bowl, combine the corn bread mix, milk and egg. Stir in corn just until blended. Spread evenly into a 8X8 or 9X9 pan. Bake at 400°F for 14-18 minutes or until a toothpick inserted near the center comes out clean.
- Meanwhile, in a large skillet, cook the turkey, onion, red pepper over medium heat until meat is no longer pink. Drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
- Spoon turkey mixture over corn bread; sprinkle with cheese. Bake for 5-10 minutes or until the cheese is melted. Sprinkle with tomato, olives and green onions. Cut into six wedges; top each with sour cream.

- Preheat to 425 degrees.
- Partially mash 3/4 cup beans in small bowl. Add salsa & mix well.
- Spread mixture evenly over pizza crust. Top with cheese, remaining beans, peppers and onions.
- Place on baking sheet & bake for 12 minutes or until cheese is melted and crust is golden brown.
- Top with cilantro & slice into 12 pieces.
MEXICAN TACO PIZZA (VEGETARIAN)
This can be vegetarian or you can add the ground beef crumbles to the refried beans.

- 1. Bake pre-made pizza crusts in oven for 10 minutes. (I have recently found a thin whole wheat crust that I like---it does not have to be prebaked.)
- 2. Meanwhile, in a large saucepan, mix your refried beans with taco seasoning and water and simmer til water is evaporated. If you want to get more veggies in, brown up some diced onions and peppers before adding the beans. I also like to stir in some chopped mild chilies.
- 3. Remove crusts from oven and spread bean mixture on top of the two crusts. Top with mozzarella cheese.
- 4. Return to oven and bake til sizzling.
- 5. Top with diced tomatoes, shredded lettuce, black olives, green onions and a sprinkling of cheddar or jack cheese. Dress with sour cream, ranch dressing or salsa.
TACO PIZZA WITH CORNBREAD CRUST
My son and I started to "mess around" in the kitchen and we came up with this. (No more Taco Bell). Cook time includes browning of ground beef.

- Mix corn muffin mix as directed on package.
- Spread batter into a sprayed 12-inch pizza pan.
- Bake at 400°F for 8 to 10 minutes or until lightly browned.
- Brown meat and drain.
- Add seasoning package, water, and chilies.
- Simmer until water is absorbed.
- Sprinkle one cup of cheese over crust.
- Top with meat mixture.
- Sprinkle with crushed red peppers and oregano.
- Top with remaining cheese.
- Bake until cheese is melted.
- If desired you can also serve with lettuce, sour cream, and diced tomatoes.
