This recipe also works well with beef, but venison is far tastier and better for you, since it is very low in fat. If you want to make this recipe even lower fat you can leave out the stage with the butter and flour, put it all in one pot without frying the veg (although you will still need to seal the meat) and thicken the whole thing at the end of cooking by adding a couple of spoonfuls of gravy granules. Serve it with mashed potato.

500 g venison
2 large carrots
1 onion
2 celery ribs
150 g mushrooms
1 (400 g) can borlotti beans
2 tablespoons flour
25 g butter
1 tablespoon red currant jelly
1 beef stock cube
350 ml red wine
1 sprig fresh thyme
1 sprig fresh rosemary
1 bay leaf
salt and pepper

Steps:

  • Turn on the oven to 170c.
  • Melt half the butter in a large lidded casserole.
  • Fry the finely diced onion, celery and garlic until softened.
  • Add the mushrooms (halved or quartered), borlotti beans and carrots and fry for a further two minutes.
  • Add the flour and stir until the butter is absorbed by the flour and the contents of the pan are coated, cook for another two minutes.
  • Add the red wine, chopped herbs, bay leaf, redcurrant jelly and crumble in the stock cube, add salt and pepper to taste, stir well leave to simmer.
  • Melt the remaining butter in a small frying pan and brown the cubed venison, this should be done as briefly as possible so that the meat does not lose it's tenderness.
  • Add the meat to the casserole, put the lid on and place in the middle of the oven.
  • After half an hour turn the oven down to 130c and leave to cook for 2-3 hours, check periodically and add more water if needed.

2 cups buttery mashed potatoes
1 pound lean ground venison (or other big game)
1 tablespoon canola oil
1 red onion, chopped
2 cloves garlic, minced
2 stalks celery, diced
½ cup diced red bell pepper
1 tablespoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon pepper
2 eggs, beaten
1 cup cottage cheese
2 tomatoes, sliced
1 cup shredded Colby Jack or Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread mashed potatoes evenly in a 2-quart casserole dish; set aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, set aside.
  • Heat the canola oil in the skillet, then stir in the red onion, garlic, celery, and red bell pepper. Cook until the onion has softened, about 3 minutes. Stir in cooked venison, and season with Worcestershire, salt, and pepper. Spoon mixture onto potatoes in the casserole dish.
  • Stir together eggs and cottage cheese in a small bowl; spread evenly over meat mixture. Top with tomato slices, and sprinkle with cheese.
  • Bake, uncovered, in preheated oven until set, about 20 minutes.

1 pound onions, thickly sliced
2 pounds carrots, cut into 1/2-inch dice
2 bay leaves
3/4 cup white wine vinegar
1 (5-pound) cross-cut saddle venison, cut into 2-inch cubes
3 tablespoons flour
Salt
Pepper
Clarified butter
1/2 cup tomato puree
3/4 cup red wine
2 tablespoons plus 2 teaspoons red currant jelly
1 teaspoon arrowroot
1/2 lemon, juiced
1 lemon, thinly sliced
1/2 cup whipped cream
Parsley, finely chopped

Steps:

  • Combine onions, carrots, bay leaves and vinegar in saucepan. Boil and pour over meat. Let marinate overnight. Drain and dry meat and vegetables.
  • Mix meat and vegetables with flour and season with salt and pepper. Heat some clarified butter in large saucepan. When hot, add venison and brown, then add onions and carrots and brown. Add bay leaves.
  • Heat tomato puree in separate small saucepan until brown. Add puree to meat and vegetables. To this, add most of the red wine and 2 tablespoons red currant jelly. Reduce heat, cover and simmer 1 hour.
  • Transfer meat and vegetables to heated serving dish. Mix arrowroot with remaining red wine and add to boiling gravy to thicken. Add lemon juice. Nap meat and vegetables with gravy, garnish with lemon slices, cream and remaining jelly. Dust with parsley.

TATER TOT VENISON CASSEROLE

I always end up with so much venison each year. This is a weekly dish at our house during Hunting season. Kids love it and so do we. I use 1 1/2 or 2 pounds of venison. Just varies depending on what I have on hand. Doesn't really matter. Turns out great either way. You can also use ground beef if you do not have venison on hand.

2 lbs ground venison
2 (10 1/2 ounce) cans cream of chicken soup
2 (14 1/2 ounce) cans French style green beans
1 medium onion
1 (32 ounce) bag frozen tater tots (I use extra crunchy)
2 cups shredded monterey jack cheese
salt
pepper
minced garlic

Steps:

  • Preheat oven to 350°F.
  • Dice onion and brown venison with the onion, salt to taste, pepper to taste and garlic to taste.
  • Put cooked venison in casserole dish. Drain green beans and layer on top.
  • Layer the 2 cans of soup on top of that.
  • Sprinkle cheese on next layer.
  • Top with frozen tater tots ( I usually let mine set out while I am preparing the venison so they are not so frozen). I usually don't use the whole bag. Just enough to cover the top with one full layer.
  • Cover with aluminum foil and cook 350°F for an hour.
  • Uncover and cook an additional 15 minutes or until tots are browned and crispy.
  • I then salt, pepper the top, but that is up to your taste.

1 (16 ounce) package mostaccioli or medium tube pasta
1 tablespoon olive oil
1 yellow onion, chopped
1 pound ground venison
1 (15 ounce) can tomato sauce
¼ teaspoon dried basil
⅛ teaspoon garlic powder
salt and pepper to taste
¼ cup grated Parmesan cheese
3 cups grated Mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, about 8 to 10 minutes. Drain and reserve pasta.
  • Meanwhile, place the olive oil into a skillet set over medium-high heat. Stir in the onion, and cook until soft and translucent, about 5 minutes. Add the venison and cook until crumbled and no longer pink, about 10 minutes. Drain, if necessary. Stir in the tomato sauce, basil, and garlic powder. Season to taste with salt and pepper, and turn off the heat.
  • Assemble the casserole by spooning a layer of the venison sauce over the bottom of the prepared baking dish. Sprinkle the sauce with Parmesan cheese, and layer with cooked pasta. Top with the sauce, layer with pasta, and half of the Mozzarella. Repeat the layers to use the remaining ingredients, ending with a layer of Mozzarella cheese. Cover the dish with aluminum foil.
  • Bake in preheated oven for 20 minutes. Remove the foil cover and bake until the cheese topping is light gold, about 10 minutes more.

2 carrots, roughly chopped
140g turnip or swede, roughly chopped
2 onions, roughly chopped
3 celery sticks, roughly chopped
olive oil and butter, for frying
1 garlic clove, crushed
1kg boned leg or shoulder of venison, cut into large chunks (or buy ready-cubed venison for stewing)
5 tbsp plain flour, seasoned with salt and pepper
2 tbsp redcurrant jelly (or rowan or hawthorn jelly)
450ml dry red wine (Rioja is good)
450ml beef stock
2 thyme sprigs
1 bay leaf

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Fry the vegetables in a little oil and butter in a heavy-based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further min, then set aside.
  • Put the venison into a plastic bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then, until well browned. Don't crowd the pan - cook in batches if necessary. Set aside with the vegetables.
  • Add the redcurrant jelly and wine to the pan, and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock, then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 1½ hrs or until tender. Remove from the oven and check the seasoning.

2 tablespoons canola oil
2 pounds venison stew meat
3 large onions, coarsely chopped
2 garlic cloves, crushed
1 tablespoon Worcestershire sauce
1 bay leaf
1 teaspoon dried oregano
1 tablespoon salt
1 teaspoon pepper
3 cups water
7 potatoes, peeled and quartered
1 pound carrots, cut into 1-inch pieces
1/4 cup all-purpose flour
1/4 cup cold water
Browning sauce, optional

Steps:

  • In a Dutch oven, heat oil over medium heat. Brown meat on all sides. Remove from pan. Add onions to the same pan; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook and stir 1 minute longer. Add water, stirring to loosen browned bits from pan. Stir in Worcestershire sauce, bay leaf, oregano, salt, pepper. Return meat to pan; bring to a boil. Reduce heat; cover and simmer until meat is tender, 1-1/2 to 2 hours., Add potatoes and carrots. Continue to cook until vegetables are tender, 30-45 minutes. Remove and discard bay leaf. In a small bowl, mix flour and cold water until smooth; stir into Dutch oven. Bring to a boil; cook and stir until thickened, 1-2 minutes. If desired, stir in browning sauce.
