2 tablespoons lemon juice, from 1 large lemon
1 tablespoon capers, drained and chopped
1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Kosher salt
One 15-ounce can cannellini beans, drained and rinsed
One 6.35-ounce jar olive oil-packed tuna, drained
2 cups baby arugula
2 small treviso, cut into 2-inch pieces
1 Belgian endive, cut into 2-inch pieces
1 small bulb fennel, shaved on a mandoline or sliced thinly with a knife
1/2 cup fresh Italian parsley leaves

Steps:

  • Whisk together the lemon juice, capers and Dijon mustard in a large bowl. While continuing to whisk, drizzle in the olive oil in a steady stream. Whisk in 1/4 teaspoon salt. Add the beans to the dressing and mash gently with a spoon. Add the tuna, flaking it with a fork into bite-size pieces. Toss lightly to coat. Top the tuna mixture with the arugula, treviso, endive, shaved fennel, parsley leaves and 1/2 teaspoon salt. Using your hands, toss the salad together, bringing the dressing up from the bottom of the bowl until everything is coated evenly.

Though an American cook (or even a French one) usually adds mayonnaise to the bowl when dressing canned tuna for a sandwich, Italian cooks invariably anoint theirs with olive oil instead. Capers, olives and anchovy often join the festivities; here they are combined with garlic and parsley to make a zesty salsa verde. Choose the best quality Italian or Spanish canned tuna-the extra cost is well worth it. The other essential ingredient is freshly baked bread, like a good crisp baguette or crusty ciabatta roll.

1 cup Italian parsley leaves, washed and dried
1/2 cup extra-virgin olive oil, plus more as needed
2 garlic cloves, minced
1/4 cup roughly chopped green olives, such as Castelvetrano
3 or 4 anchovy fillets, chopped
1 tablespoon chopped capers
Zest of 1 lemon
Pinch of crushed red pepper
Salt and pepper
1 baguette or 4 ciabatta rolls
Handful of lettuce leaves, arugula or watercress
8 ounces best quality oil packed tuna, drained, in large chunks
4 hard-boiled eggs
Salt and pepper
1 serrano chile, thinly sliced, optional

Steps:

  • Make the salsa verde: Whiz parsley leaves and 1/2 cup oil in a food processor or blender to a pesto-like consistency, then transfer to a small bowl. (Alternatively, chop parsley by hand and combine with oil.) Add garlic, chopped olives, anchovies, capers, lemon zest and red pepper to parsley mixture and stir well. Season with salt if necessary and freshly ground black pepper to taste. Thin with more oil as desired.
  • Cut baguette crosswise into 4 equal pieces, then split each lengthwise with a serrated knife. (If using rolls, split each lengthwise.) For each sandwich, lay bread flat, crust side down. Spread cut sides with 2 tablespoons salsa verde. Put a few lettuce leaves on 1 piece of bread and arrange 2 ounces of tuna over lettuce. Top tuna with 1 egg, quartered. Season egg lightly with salt and pepper. Add sliced serrano chile, if using. Drizzle with a little more salsa verde, then press sandwich closed.

3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

1 clove garlic, sliced
1 white onion, diced
1 cup water
2 (5 ounce) cans tuna in olive oil
1 (6 ounce) can pitted black olives, drained and chopped
1 (15 ounce) can garbanzo beans, drained and rinsed
½ teaspoon garlic salt
½ teaspoon ground black pepper
1 pound penne pasta
¼ cup grated Romano cheese

Steps:

  • In a large saucepan, heat olive oil over medium heat. Saute garlic in oil until golden. Stir in onion and water and cook until onion is soft. Stir in the tuna with its oil, olives, beans, garlic salt and pepper. Cover, reduce heat to medium-low, and simmer while pasta is cooking.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss pasta with tuna mixture, top with Romano and serve.

This sauce isn't a real thick sauce so if you want thick, you might not want to add any water to the recipe. It's packed with flavor and feeds a ton! Even tastes better the next day and the day after that...

3 (29 ounce) cans tomato puree
8 cups water (may vary depending upon thickness of Puree)
3 tablespoons ground fennel
3 tablespoons basil
3 tablespoons oregano
3 tablespoons pepper
1 tablespoon salt
4 -6 fresh basil leaves (if you have it)
3 bay leaves
1 tablespoon crushed red pepper flakes (use less if you don't want it hot or more if you like a hot sauce)
1 lb ground chicken or 1 lb turkey
2 large eggs
2 cloves diced garlic
2 cups parmesan cheese (may need to add more if meat is real WET)
1/3 cup breadcrumbs (may need to add more if meat is real WET)
1 teaspoon salt
2 teaspoons black pepper
2 teaspoons oregano
2 teaspoons basil
2 teaspoons parsley
1 lb mild med or hot Italian sausage
1 lb country-style boneless pork ribs

Steps:

  • *IFYOU CANNOT FIND TOMATO PUREE, YOU CAN SUBSTITUTE IT WITH 2 CANS TOMATO SAUCE AND 1 CAN TOMATO PASTE**IF YOU SUBSTITUE THE PUREE FOR THE SAUCE AND PASTE, YOU WILL ONLY NEED TO ADD HALF THE WATER LISTED ABOVE~*~*~STEP ONE: Sauce~*~*~.
  • In a large cooking pot (8 or 10 quart pot) combine the tomato puree, water and spices and cook over low heat until you are done with Step Two.
  • ~*~*~STEPTWO: Meatballs, Sausage and Pork~*~*~.
  • Place the ground turkey or chicken in a large mixing bowl.
  • Add the two eggs, spices, cheese and bread crumbs.
  • Mix together very well and form into meatballs.
  • In a large nonstick skillet, heat up a small amount of cooking oil (I use about a tablespoon of olive oil) over med heat.
  • Fry the meatballs, sausage links and pork ribs together just until they are brown all over (you won't be able to fit all the meat in the skillet so you'll have to fry them up in batches but make sure each batch contains a little of each meat so that the flavors are mixed together).
  • Add the semi-cooked meat and juices to the sauce, increase heat to medium and bring to a boil.
  • Reduce heat to med-low, cover and simmer for 4 hours.
  • Stir every 10 to 15 minutes to avoid burning the bottom of the sauce.

2 160g cans of tuna in sunflower or olive oil, drained (reserve a little oil)
small handful of pine nuts
freshly grated zest 1 lemon
small handful parsley leaves, roughly chopped
50g fresh breadcrumb
1 egg , beaten
400g spaghetti
500g jar pasta sauce

Steps:

  • Flake the tuna into a bowl, then tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg. Season and mix together with your hands until completely combined. Roll the mix into 12 walnut-size balls. Put a large pan of salted water on to boil, then cook the spaghetti according to pack instructions.
  • Heat a little of the tuna oil in a large non-stick frying pan, then fry the tuna balls for 5 mins, turning every minute or so until completely golden. Drain on kitchen paper. Heat the tomato sauce, then toss together with the pasta and tuna balls.

Easy tuna cake to make for my 3 yr old that she really enjoys and I do as well. Suggest only using the good chunk tuna as the flavor is not so fishy and the texture is more firm. She prefers extra cheese so amounts obviously can vary Olive oil can be subbed for egg but using mayo gives it an off taste. Hope you find it enjoyable as well.

1 medium egg
1/3 cup plain breadcrumbs
1/3 cup good shaved parmesan cheese
1/2 garlic clove, minced
1 tablespoon olive oil (may need more for sauteeing)
1/2 teaspoon dried basil
1/8 teaspoon fine sea salt

Steps:

  • Sauté minced garlic in olive oil till slightly browned; not burned.
  • In mixing bowl, mix tuna, egg, cheese, breadcrumbs, basil and sea salt.
  • Meanwhile, remove garlic from pan and add to tuna mixture; mixing everything well but trying to leave some chunks of tuna in tact.
  • Form into patties of desired size.
  • Sauté in pan of olive oil that garlic was sautéed in (may have to add more oil) until cakes are nicely browned on outside and crispy.
