VERY BERRY VIRGIN MOJITO
Cold, refreshing, and packed with fresh berries and mint, this Very Berry Virgin Mojito is sure to keep you hydrated and cool all summer long!

Steps:
- Begin by placing the mint leaves and quartered lime wedges into a tall pitcher.
- Using the handle of a wooden spoon, crush the mint leaves and lime wedges together. Essentially, you're bruising the leaves to extract the minty flavour.
- Add the fruit to the pitcher and about a cup of ice.
- Pour in the Sprite gently stir to combine.
- Pour into glasses. Garnish each glass with mint leaves, more fruit, and add more ice if desired.

VIRGIN BERRY MOJITO!
The mojito is a cooling effervescent coctail inspired by Havanas's blithe lifestyle in the 1920's. While Hemingway's Cuba is long gone, it's spirit lives on in the sparkling blend of sugar, mint and lime. Adapted from the Seattle Post Intelligencer. Caribbean, Mexican, Southern, and Western.

Steps:
- In a 8-12 oz. glass, with the back of a spoon, mash the berries, lime wedges, mint and sugar until well blended. You can remove the mint, or alternatively, blend the berries, lime juice(from wedges), mint and sugar in a blender.
- Add crushed ice, a splash of lime juice and club soda to fill the glass.
- Shake. Garnish with a lime wedge. Serve and enjoy!

BERRY MOJITO
Steps:
- In a pint or large glass, combine the raspberries, blackberries, lime wedges, mint leaves, strawberries and sugar and muddle with a muddler or wooden spoon. Add the rum and mix with a spoon. Fill the glass with ice, top off with the seltzer and stir. Garnish with the mint sprigs and serve with a straw.
WILD BERRY MOJITO -
Tips: To muddle the mint against the bottom of the glass, use just enough pressure with your muddler to release the oils from the mint without tearing it. The back surface of a wooden spoon will serve as a muddler stand-in if needed. Use a lime squeezer to fully extract the lime's juice. To make simple syrup, dissolve an equal amount of granulated sugar in boiling water and then allow syrup to cool. Store in a clean bottle in a cool place. Recipe of Tony Abou-Ganim

- In a 12-oz. highball glass, muddle mint, simple syrup, wild berries and lime juice.
- Fill glass with crushed ice - it is very important to use crushed ice, not cubed - then add rum.
- Stir well until the ice is reduced by 1/3, then top with more crushed ice, stirring until the glass begins to frost on the outside.
- Spritz with soda water and stir one last time to incorporate.
- Garnish with a sprig of fresh mint that has been dusted with powdered sugar and two long straws to avoid tickling your nose with the garnish.

SUMMER BERRY MOJITO
A wonderful cocktail that screams summer!! Fresh berries and mint! Does it get any better than that? Enjoy! If you don't keep simple syrup on hand just use a 2 tsp. of sugar to muddle with your mint.If you don't have access to fresh berries, frozen will work as well.
