These tasty snacks are whole kosher dill pickles that are covered with cream cheese and wrapped with thin slices of deli beef.

- Prepare stockpot/canner and jars as directed in step-by-step instructions
- Tie pickling spices in a square of cheesecloth, creating a spice bag.
- Combine vinegar, water, sugar, pickling salt and spice bag in a medium stainless steel saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar and salt. Reduce heat and boil gently for 15 minutes, until spices have infused the liquid.
- Place 1 bay leaf, 1 garlic clove, 1/2 tsp mustard seeds and 1 head of dill into each jar. Pack cucumber slices into hot jars, leaving 1/2 inch headspace. Add rounded 1/8 tsp Pickle Crisp® Granulates. Ladle hot pickling liquid into jars, leaving 1/2 inch headspace. Remove air bubbles; re-measure headspace. If needed, add more cucumbers to meet recommended headspace. Wipe rim; center lid on jar. Screw band until fingertip-tight.
- Process filled jars in boiling water for 15 minutes. Remove stockpot lid. Wait 5 minutes, then remove jars, cool and store.

I decided to try this recipe on my card club, and it was a big success. They loved it. This ham pickle roll up recipe can be swapped around and changed in so many different ways and always turns out as an awesome appetizer or great-looking centerpiece over a hand of cards.

These are easy to make and taste like the brined Deli pickles on the East Coast. I can't believe how many gallons of these I made last summer! If you like pickles you will love these.

Steps:
- Layer the cucumbers and dill heads with garlic.
- Pour the remaining ingredients over all and cover with cold, fresh water, filtered if you can.
- Cover with cheesecloth.
- Weigh down the pickles with a plate and jar of water. Cover with a clean tea towel.
- Check after 72 hours, remove any scum that may have formed and wash cheesecloth, plate and jar of water and replace them.
- Check after another 72 hours and see if they are done enough for you. If so, pack into sterile jars and cover with the brine.
- Store in the refrigerator to slow the fermentation process.
- I make these in a big dough bucket and pack into gallon jars and some plastic containers to give as gifts.

My mom got a recipe for these from one of her friends and we've tweaked it a little. I brought a tray of them to my in-laws for a get together once and now I'm asked to make them ALL THE TIME! This is one of my most requested recipes.

- Spread cream cheese on room temperature tortillas.
- Spread 1/2 c chopped pickles on top of cream cheese on each tortilla.
- Lay out slices of ham over pickles.
- *If using turkey too lay out your slice over the ham.
- Roll tortillas tightly and place toothpicks ever 1 1/2 inches or so. (Do NOT.
- use colored toothpicks as the color will bleed into your wraps!).
- Slice between toothpicks.
- Serve cold.
